Happy 1/2 birthday Kylie Skye! Growing up, half birthdays were a big deal so I’ll make sure they are for you too!☺️

It’s been so incredible watching you grow and change and learn so much over the last month! Your smile and laugh are our favorite things about you! While things are challenging and uncertain, we are soaking up every second we get with you! We love you so much sweet pea!🩷

At 6 months Kylie loves to smile, watch Gigi sing and dance (especially to TTPD), put things in her mouth, throw toys, and pull off her socks.😅

I love her giggles and blabbering, watching her explore new things, and picking out her outfits. Did I make her this onesie at 8pm last night? You betcha!🤣

I’ve given up a lot of ingredients and foods in the name of my health but one thing I just won’t give up is coffee. I’m not one to NEED the caffeine, I don’t feel like I can’t function without it, I don’t go into withdrawal. I just really love the taste, the warmth, the flavors! It’s just something I enjoy and unless I absolutely HAVE to give it up, I’m not.

I will say I have gone from 2 cups to one in the morning but now that things are heating up outside and cold brew season is officially here, I’ve been adding in this late morning frozen protein cold brew and WOW! It’s seriously so freaking good! It feels like such a treat but it’s packed with protein and skin/hair loving ingredients AND only takes seconds to make!

To make it, simply blend 8oz of cold brew, 1 scoop of protein powder + 1 scoop of collagen, and a handful of ice until smooth. Sprinkle of cacao nibs optional but recommended.😋 Swipe to see the exact ingredients I use!

Things I’ve changed/added in the last 6 months that have helped dramatically improve my quality of life and consequently, my confidence.

✔️Ditched the “there’s nothing wrong with you” doctors and started working with a functional nutritionist.
✔️Started a gut healing and hormone balancing protocol that includes natural supplements and eliminating certain foods to help the healing process along.
✔️Increased protein and fat, decreased carbs (per gut protocol).
✔️Eliminated as much added sugar/refined sugar as possible.
✔️Reduced the amount of gut disrupting additives/ingredients as possible. Not 100% because that stuff is in EVERYTHING but I’m very picky about the brands I use and working on eliminating certain ingredients completely.
✔️Started seeing a chiropractor weekly
✔️Ditched the HIIT and long cardio sessions for more strength training and increased my weights drastically. I used to chase the calorie burn, now I chase the muscle burn.😅
✔️Increased to amount of (quality) calories I eat daily and started tracking again (with a different mindset)
✔️Started telling myself, out loud, positive affirmations about my body, while looking in the mirror. Our brain believes what we tell it. Swapping the narrative can have a HUGE impact.
✔️Got SureSmile Aligners to fix my teeth because loving your smile is important… helps you do it more!😉

I plan on diving deeper into some of these in future posts in case you are struggling with weight loss, inflammation, energy, self confidence, etc. and can use some tips!

Enjoy your body now because when you hit your 40’s, it’s all downhill from there.

Puh-lease!🙄✋🏻

Sure things change when you hit 40. Seemingly overnight.😅 But that only means things need to be readjusted. Priorities change. What worked in your 20’s and 30’s likely won’t work in your 40’s. BUT that doesn’t mean we just give in and give up. It doesn’t mean it’s the end of our fitness journey. It’s just a new beginning!

What’s working?
✨Focusing on healing from the inside out. For so long I was so obsessed with the outer results, I wasn’t paying attention to the damage I was causing internally (physically and mentally).

✨Prioritizing protein. It’s currently my highest macro and it’s working for me.

✨More healthy fats. If you’re in your 40’s then you grew up in the fat free era. I’m here to tell you they were wrong.

✨Fiber, water, sleep. All crucial components to how you look and feel.

✨Ditching the HIIT and extended cardio and adding more lifting. Heavy lifting.

✨Daily outdoor walks. I don’t care if it’s cold. Wear a jacket, scarf, hat, and gloves. You won’t die. Promise.

✨Working with a functional nutrition to heal my gut (that I likely partly destroyed from several years of over dieting)

✨Seeing a chiropractor to help with healing, recovery, and mobility.

All this to say, if you’re in your 40’s or close to it and keep hearing that your metabolism is going to die and you’ll never be fit again… F**K 👏🏻 THAT 👏🏻 NOISE 👏🏻!

Listen, sustainable progress on the scale or even in the mirror is going to go a lot slower than you want it to. Instead of fixating on what you’re NOT seeing week to week, focus on what you are!

Some things to look out for that are actually HUGE steps in becoming a healthier you.

✨Increasing weights - even just for 1 rep
✨Increased endurance + stamina
✨Sleeping more soundly
✨Waking up feeling refreshed
✨More energy throughout the day
✨Making healthier food choices because you WANT to
✨Less brain fog
✨More flexibility/less aches and pains
✨More confidence
✨Stay consistent longer than you have in the past (this is a HUGE one and you should be super proud of yourself!)

Keep showing up for yourself, keep challenging yourself, keep moving forward and the changes will come. It may not be as fast as you’d like but I can promise you it will never happen if you keep quitting on yourself!

On Tuesday’s I share a nutrition tip in my free coaching group and thought I’d share yesterday’s with you!!

I love a good pb&j situation but don’t love all the sugar in jams and jellies. And I don’t use it enough to make a batch of homemade jelly.

An easy, quick, healthier option is to just mash your favorite ripe berries on some nut/seed butter toast! It’s so delicious and naturally sweet and filled with fiber, not refined or artificial sugar! Raspberries are my fave!

Here’s what’s changed ⤵️

First of all, I share this knowing that not everyone will understand or even be happy with my decisions but for the last two months, as part of my hormone/gut/overall health healing journey, I’ve brought back seafood into my diet. I know I’ve shared that I’ve gone back and forth with the idea of incorporating it in my diet on occasion but seeing the results of my bloodwork was the final push I needed to take that leap.

Last week I met with my nutritionist and based on my progress and the fact that I was still extremely bloated she decided to go ahead and change my protocol with the assumption that there’s something in my gut that needs healing (we’ll know more specifics when my GI Map results get back). So I’m currently on a low carb, high fat/protein diet. Not quite keto but certainly lower than I’m used too. This is the second time in 2 months I’ve had to make some drastic changes to my diet and while it’s frustrating and challenging, nothing is impossible. When you’re suffering, you’re willing to get uncomfortable short term to gain long term relief. And that’s my motivation every day.

Completely unrelated from my health journey, I got SureSmile aligners a couple weeks ago and that has been yet another uncomfortable adjustment. Fixing my teeth is something I’ve dreamed about for as long as I can remember so I will gladly take whatever soreness and inconvenience comes with it!

As always, I appreciate your endless support and encouragement. I have the BEST group of women that I’ve been leaning on the last 2 months and while I was nervous to share here, they’ve reminded me that authenticity always wins!

My biggest goal for 2024 is to increase mobility. I’ve been incorporating stretch workouts weekly and they are soooo humbling.🥴 But I know it’s extremely important and beneficial to my overall health.

They’re also Riley’s favorite because he’s not at risk of getting hit with a dumbbell or jumped on. He’s patiently waiting for Mama to push play. 🥹

If you’re looking for an easy, delicious, travel friendly recipe that’s also good for you this holiday season (or all year) this is it!

You can serve it as a dip alongside a sliced baguette, pretzels or tortillas or toss it with some pasta and protein like I did here. It’s so good you can legit just eat it with a fork.

𝐓𝐚𝐛𝐥𝐞 𝐏𝐞𝐩𝐩𝐞𝐫 𝐃𝐢𝐩
𝘐𝘯𝘨𝘳𝘦𝘥𝘪𝘦𝘯𝘵𝘴
•2 bell peppers, sliced into strips (I like to use 2 different colors)
•2 sweet onions, sliced into strips
•1 28oz can of crushed tomatoes with basil
•1tbsp of olive oil
•Seasonings of choice - garlic powder, oregano, Italian seasoning, salt and pepper

𝘋𝘪𝘳𝘦𝘤𝘵𝘪𝘰𝘯𝘴
~Pre-heat oven to 350°
~In a large skillet, heat oil over medium high heat. Add peppers and onions and sauté until tender.
~Add sautéed peppers and onions to a baking dish with crushed tomatoes and stir. Sprinkle with optional seasonings to taste and mix well. Bake for 30 minutes and serve!

I know it’s not quite over yet but 2023 has been such a transformative year for me. A new career path, my first surgery, and a whole lot of advocating for my health. I’ve switched nearly every single doctor plus hair dresser, groomer, and vet. I even spent some time trying out different nail salons to find the one that was the best fit for me.

I let a gyno tell me for 2 years to “wait and see” while my fibroid continued to wreak havoc on my body, causing me to feel completely trapped in my home. I let a vet tell me my dog had a terminal tumor and only weeks to live. I let a groomer injure my dogs THREE times in a row. I let a GI doctor charge me thousands of dollars just to tell me to keep doing what I’m doing. I let a hair dresser continue to destroy my hair. I let a dentist tell me I needed oral surgery for a chipped filling WITHOUT EVER LOOKING IN MY MOUTH (this was when I had it). I did all these things because I felt bad and didn’t want to offend THEM. 🫠

I can sit here and regret not having the balls to make the changes sooner but I choose to be proud that this year I took back control. After finding allll new people I’m happy to say that fibroid is gone, my dog is alive and well, I LOVE my new groomer, my new hairdresser is not only amazing at her job but one of the best people I know, I did NOT need oral surgery and for the first time ever I’m not terrified to go to the dentist. This week I also decided to finally start seeing a chiropractor!

As for the GI, I decided to switch things up and I invested in working with a functional nutritionist. I’m JUST starting my healing journey and it’s been a little overwhelming this week taking everything in but I’m so hopeful to finally get the help I’ve so desperately been seeking for 15 YEARS!

I truly feel I’m on the right path and that 2024 will bring me so much healing and I’m REALLY looking forward to it! Not only for myself but to continue to use what I learn and implement it with helping my clients!

Nothing else matters if you don’t have your health. Please take care of yourselves and fight for what you deserve!🩷

*I never shared this here yesterday so I’m a day behind. I’ll share today’s tip later this evening! Be sure to follow me on IG so you don’t miss a thing!

One of my tips I shared with my clients this morning for enjoying the holiday season without undoing all of the hard work they’ve put in over the last few months is to prioritize nutrition, specifically protein and veggies! Living off of processed foods high in sugar, sodium, and simple carbs is only going to fuel your anxiety and fatigue. I’m not saying don’t have the cookies, but what I am saying is don’t JUST have the cookies! Nutrition first, cookies second!

I’m not suggesting this to promote a diet, I’m suggesting this to help maintain your physical and mental health through one of the most challenging times of the year. I know we all like to think of this s time as jolly and full of cheer but the reality is, it brings a lot of stress. Financially, emotionally, and physically. Luckily there are things we can do to help minimize the stress and make sure we don’t carry it over into the new year. I’ll be sharing some of those tips throughout the week!

Starting with getting in a healthy, high protein breakfast. Food is your fuel. Your body can’t run on E. As least not very effectively! Getting in a minimum of 20g of protein in the morning will help keep you satiated and energized throughout your morning.

This breakfast pizza is a new favorite way to get in 30g of plant protein. It’s so simple and delicious and part of it could be prepped ahead of time, making it even easier! You can easily swap out the tofu scramble for eggs if you’re not plant based!

Ingredients (serves 1):
•1 serving of tofu scramble
•1 high protein tortilla - I use high protein tortillas with 11g of protein!
•2 tbsp of shredded cheese - I use cheddar

Optional added toppings:
•Veggies
•Caramelized onions
•Hot sauce
•Breakfast meat

Place tortilla in a hot pan until it starts to brown. Flip and repeat on other side. You want it to crisp up but not burn. Add cheese and allow to melt. If using vegan cheese, you may want to pre-melt in the microwave and spread on. Remove from heat and top with tofu scramble (or eggs) and any additional toppings. Slice with a pizza cutter and enjoy!

Looking for a healthy dish to bring to a holiday part this year? Make this!!⤵️

Listen, if someone tells you to stay away from fruit… run!!! Fruit has so many different nutritional benefits and literally is natures candy. I’m fact, the less processed sugar you eat, the sweeter the real stuff tastes! I love to choose fruits in season as they tend to taste the best and provide the exact nutrition we need at that time.

For example, citrus fruits come in season during colder months just in time to give us that boost of vitamin C for immunity! It’s so cool how nature really has provided us almost all of the medicine we need!

This fruit salad packs a punch! Combining a powerful blend of antioxidants, immune boosting vitamins, fiber and fat, it’s a delicious snack that you can feel good about! The resveratrol from the red grapes and blueberries is a powerful antioxidant and also protects against bacteria. The vitamin C from the orange is crucial for immunity. The apples provide extra vitamin C + fiber and a flavonoid called quercetin… another powerful antioxidant/anti-inflammatory that not only helps strengthen the immune but is also know to help fight allergies! And of course healthy fats, protein and fiber from the pecans!

On top of it being incredibly beneficial for your health, this fruit salad is freaking delicious! The flavors SCREAM fall and it’s the perfect addition to all of your holiday tables! You’re going to want to save this one!

Fruit Dressing
•1 large orange
•2 tbsp of maple syrup
•3/4 tsp of cinnamon

Fruit Salad
•1lb of red grapes
•12oz of blackberries or blueberries
•2 large apples, diced
•1/2c of chopped pecans

~In a large bowl add juices and zest of the orange, maple syrup, and cinnamon. Whisk until combined.

~Add in fruit and toss until well coated. Store in airtight container in the fridge.

This dip is perfect for your weekly meal prep or if you’re looking to bring a healthy treat to your holiday parties! Serve with apples, pretzels, graham crackers, or whatever you like!

𝐏𝐫𝐨𝐭𝐞𝐢𝐧 𝐏𝐮𝐦𝐩𝐤𝐢𝐧 𝐃𝐢𝐩

𝙄𝙣𝙜𝙧𝙚𝙙𝙞𝙚𝙣𝙩𝙨
•1C of plain Greek yogurt (I use Kitehill)
•1/4 of almond butter
•1/4c of protein powder (I used a snickerdoodle flavored protein but vanilla works too)
•3 tbsp pumpkin purée
•2 tbsp of cream cheese (I use Tofutti)
•1 tbsp of maple syrup
•1 tsp of vanilla
•1/2 tsp of pumpkin spice
•1/4 tsp of cinnamon

𝙊𝙥𝙩𝙞𝙤𝙣𝙖𝙡 𝙏𝙤𝙥𝙥𝙞𝙣𝙜𝙨
•Pepitas
•Pomegranate arils
•Chopped nuts
•Chocolate chips
•Dried cranberries

𝘿𝙞𝙧𝙚𝙘𝙩𝙞𝙤𝙣𝙨
~Mix all ingredients in a bowl until thoroughly combined. Cover and store in the fridge. Garnish with toppings before serving.

The body you hate right now is someone else’s goal body. It’s all about perspective. I know it can be difficult but if you find yourself hating on your body right now and/or speaking to it in a way, you would NEVER speak about someone else’s body, I challenge you to see yourself as others may.

Instead of words like lazy, fat, worthless, weak, no self-control, allow your brain to offer words like dedicated, healthy, worthy, strong, committed and see how that feels. The words that we continuously tell ourselves, are the words we believe. And what we believe we become.

So the next time you catch yourself, spewing lies about yourself, be sure to flip them. Even if you don’t quite believe them yet, you will. Promise!

Which one are you?!?

When it comes to Butternut Squash, are Team Sweet or Team Savory?

Fall (weather) has officially arrived and it’s got me craving all the warm, cozy, seasonal comfort foods. I’m a big fan of all the squashes, but I think butternut is my fave.

It’s so versatile, you can make it sweet or savory and in so many forms. I’ve stuffed it, spiraled it (they definitely make heartier veggie noodles than zucchini), and cubed it.

One of my go to ways to enjoy it to cube it and season it as I would sweet potatoes. Then air fry until soft on the inside and slightly crispy on the outside. Think roasted potatoes but with butternut squash! It’s so good and great way to get in some plant diversity if you typically stick to potatoes!

In the pic… I cubed up some butternut, sprayed with avocado oil, and sprinkled on some TJ’s Chili Lime Seasoning. Then air fried at 370° for 15 minutes, shaking halfway through. I served them up next my gf/avocado omelette toast. Such a great way to get in some veg with breakfast!

It’s almost Halloween!!! Thought I’d share a healthier, homemade version of the infamous coconut bars. These hit the spot without the sugar overload. Listen, I’m not the health coach that’s going to tell you to completely eliminate sugar (unless specific dietary issues). But I will tell you it wreaks havoc on your body and eating it in excess could cause you to have unwanted side effects ranging from gut issues to poor sleep to more cravings to acne.

Cut it completely? That’s up to you. But definitely be aware of how you feel when you consume it and be intentional about eating it. I love a sweet treat but I’m not a fan of the way it makes me feel or the breakouts I get from it. Which is why I like to make homemade treats like these!

𝐇𝐨𝐦𝐞𝐦𝐚𝐝𝐞 𝐂𝐨𝐜𝐨𝐧𝐮𝐭 𝐁𝐚𝐫𝐬 (𝐰/ 𝐨𝐫 𝐰/𝐨 𝐧𝐮𝐭𝐬)

𝙄𝙣𝙜𝙧𝙚𝙙𝙞𝙚𝙣𝙩𝙨
𝙵𝚘𝚛 𝚝𝚑𝚎 𝙱𝚊𝚛𝚜
•1c of shredded unsweetened coconut
•1c of coconut cream (the thick stuff, not the liquid)
•1/2c of vanilla protein powder
•1tbsp of maple syrup
•splash of vanilla extract
•Whole almonds, optional

𝙵𝚘𝚛 𝚝𝚑𝚎 𝙲𝚑𝚘𝚌𝚘𝚕𝚊𝚝𝚎 𝙲𝚘𝚊𝚝𝚒𝚗𝚐
•1c of your favorite chocolate chips, I use dark, dairy free
•1tsp of coconut oil

𝘿𝙞𝙧𝙚𝙘𝙩𝙞𝙤𝙣𝙨
~Add all of the Bar ingredients into a bowl and mix until thoroughly combined.

~Using a tbsp or cookie scoop, scoop out dough and roll into balls. Place on a cookie sheet lined with parchment or wax paper. Using your fingers, mold each ball into a bar shape. You could also just leave them as balls!

~If you like nuts😜, gently press one almond into each bar. I chose to do half with, half without. Place bars in freezer for at least 10 minutes to firm up.

~Melt chocolate and coconut oil in the microwave in 30s intervals, stirring each time, until melted.

~Remove bars from freezer and coat in chocolate. I find using a fork is helpful so the excess chocolate drips down. Place coated bars back on cookie sheet and back in the freezer to set.

~Store in freezer and let thaw a few minutes before diving in. Or stir in the fridge if you think they won’t last long!🤤

It’s almost that time of year again!

8th Annual Planks & Thanks! Can you believe it?! 8 years ago I started this fun little tradition of increasing our core strength daily and sharing what we’re thankful for.

It’s such a great way to kick off the holiday season and take a moment to pause and remember the true reason for the season before all the hustle, bustle, and stress starts.

It’s for all levels, even if you’ve never planked before (I’ll share beginner level options). I’ll also be sharing healthy holiday recipes, DIY holiday decor, fun fall activities for the kids, and ways to help you beat the emotional toll that the holidays can sometimes take on us.

How are you filling your cup today?!

We’re often reminded that we should treat our bodies with respect and care with movement and nourishment but what about our MINDS?! Are you showing your brain the same love and respect?

A good place to start is by writing out some daily affirmations. You can write out a new list daily or keep the same ones until you feel you need to add or switch some out. Either way, make sure you are saying them out loud every day! It truly is so powerful! What we say, our mind believes.

This is a great activity to start with the kids now! Let’s end that generational trauma of negative self-talk.

Here are some examples to get you started.

• I can do hard things
• I am loved
• I am smart/creative/fun/kind
• I am proud of the life I’ve created

1. The real me. I know things get a little murky on SM and sometimes it’s hard to w**d out what’s real and what’s not. With professional photoshop apps and now AI images popping up, I just want to promise you that I will always be authentic. Even if that means it’s not always as aesthetically pleasing as some other pages. I don’t know how to be anyone else but me, so that’s who you’ll always get!

2. I absolutely love being a health coach and sharing my passion for living a balanced, healthy lifestyle. You’ll find fitness inspiration, health tips, and recipes. I’m vegan & gluten free so that’s what I share but you’re welcome to swap out ingredients for non-vegan options!

3. I love to write so sometimes you’ll see me sharing my thoughts about things I feel strongly about in the form of longer posts. I hope you take the time to read through and always take what serves you and leave the rest.

4. Things that make me happy. At the top of that list are my 2 Bichons, Lucky and Riley. They bring me so much joy and love I could cry just thinking about them.🥹 Family, friends, clothes, and home decor also make me happy so make sure you’re checking out my stories for all my adventures and must haves!

5. Connecting with you! After all these years, I still believe that the opportunity to connect with people all over the world at any given second is so freaking cool. •1/2 cup of unsweetened almond milk
•1 1/4 cups brown sugar, lightly packed
•1 3/4 cups gluten free 1:1 AP flour
•1 tablespoon baking powder
•1/2 teaspoon salt
•2 teaspoons ground cinnamon
•1/2 teaspoon ground nutmeg
•1/2 teaspoon ground ginger
•1/4 teaspoon ground cloves
•1c dairy free or dark chocolate chips

Directions:
~Preheat the oven to 375 degrees F and lightly grease a muffin pan. If you use paper liners, also make sure to spray the cups lightly with oil so the muffins don’t get stuck to the paper.
~In a large mixing bowl, add the pumpkin, melted vegan butter, non-dairy milk and brown sugar. Whisk until well combined and smooth.
~Sift the flour, baking powder, salt and spices over the wet mixture.
~Mix the dry ingredients into the wet gently, until just combined, being careful not to over mix.
~Fold in chocolate chips and fill the muffin cups full. Bake for 22-25 minutes, until a toothpick inserted in the middle comes out clean. Enjoy!

I couldn’t do a PUMPKIN WEEK without including a Smoothie Bowl! They’re my healthy addiction and this pumpkin pie bow did not disappoint! Let me know if you need a coupon code off my favorite plant based protein!

Pumpkin Pie Smoothie Bowl
1c of almond milk
1 serving of vanilla superfood protein
1 serving of collagen (I use a vegan one) *optional
1 frozen banana
1/4c of pumpkin purée
1/2-1tsp of pumpkin pie spice
1c of ice
Splash of vanilla extract

Blend all ingredients in a blender until smooth. Top with your faves! The pumpkin granola goes perfect with this!

This was a happy surprise!!

I had no idea it would be a cookie dough consistency when I mixed it all together but wow, it was so good! Can’t wait to make it again!

With 34g of protein and 9g of fiber, it’s not only healthy and delicious, but it will keep you satisfied and satiated all morning!

𝙋𝙪𝙢𝙥𝙠𝙞𝙣 𝙋𝙧𝙤𝙩𝙚𝙞𝙣 𝘾𝙤𝙤𝙠𝙞𝙚 𝘿𝙤𝙪𝙜𝙝
•2/3c of plain Greek yogurt, I use
•1 serving of vanilla superfood protein
•2 tbsp of pumpkin purée, or to taste
•1 tsp of pumpkin spice, or to taste

Mix all ingredients together until a wet cookie like dough forms. Top with your faves! I used the pumpkin granola from Monday and raspberries!

I’ve been making these for a few years and have never shared the recipe. Why?! Because it’s very long and looks like it’s complicated. But I PROMISE, despite the lengthy ingredients/instructions, they’re actually fairly easy and quick to make!

Welcome to PUMPKIN WEEK! Each day this week I will be sharing a new pumpkin recipe so be sure to check back every day so you don’t miss one. Make sure to hit the little flag in the bottom right corner so you can save the recipes. Let me know what you think when you make them!

𝐏𝐮𝐦𝐩𝐤𝐢𝐧 𝐒𝐩𝐢𝐜𝐞 𝐀𝐥𝐦𝐨𝐧𝐝 𝐆𝐫𝐚𝐧𝐨𝐥𝐚

𝘋𝘳𝘺 𝘐𝘯𝘨𝘳𝘦𝘥𝘪𝘦𝘯𝘵𝘴:
•2.5 C of gluten free rolled oats
•1 C of Rice Krispy cereal
•1.5 C of raw mixed nuts/seeds (I used pumpkin seeds, almonds, and walnuts but wish it had pecans)
•2 tsp of pumpkin spice
•1 tsp of cinnamon

𝘞𝘦𝘵 𝘐𝘯𝘨𝘳𝘦𝘥𝘪𝘦𝘯𝘵𝘴:
•1/2 C of almond butter
•1/3 C of coconut oil
•1/3 C of maple syrup or honey (honey makes better clusters)
•2 tbsp of pumpkin purée

~Preheat oven to 325°

~Add all of the dry ingredients into a loafer bowl and store to combine.

~I’m a small saucepan, add coconut oil, almond butter and honey/maple syrup and melt over medium heat, stirring frequently. Stir in pumpkin purée to combine.

~Pour liquid mixture over oat mixture and mix until thoroughly combined.

~Spread on a cookie sheet lined with parchment paper and press down. Do not spread too thin. You want to bake it in a sold sheet with no gaps. Thus ensures crunchy clusters.

~Bake at 325° for 20-30 minutes. The edges will be browned. Allow to cool completely before breaking up. Store in an airtight container and enjoy!

I know the weather hasn’t been great here but it looks like we’ll get some beautiful Fall weather next week!

Fall also brings some of my favorite foods and flavors! Pumpkin Spice anyone?!!

~~I love to use spaghetti squash as a pasta alternative with “meat” sauce or even just with some vegan butter and everything seasoning.😋

~~Butternut is one of my favorites (if you can find the tiny honey nut variety, you’re in for a real treat!). I like to dice them up, air fry and serve as an alternative to roasted potatoes. Not there’s anything wrong with potatoes! It’s just always good to get in a variety of plants for nutritional reasons and for diversity in your gut. I also love to slice them in half longways, roast them and stuff them. Butternut squash is so good savory or sweet too! If you’ve never drizzled one with maple syrup and cinnamon, give it a try!

~~Acorn squash is delicious too! Roast and stuff or slice and air fry!

Season your squashes with some sage for a true fall vibe! Or try some of the spices listed below as they are all warming spices and perfect as we move into colder weather!
