New Taco Soup 🥣😋😲❤️
Ingredients:
3 cups chicken stock or beef
1 pound ground beef I use 85%
8 ounces cream cheese softened and cut into pieces
½ cup yellow onion diced
15 ounces Rotel tomatoes original, with green chilies
2 tablespoons taco seasoning
1 tablespoon homemade ranch seasoning or 2 teaspoons store bought
1 tablespoon cilantro chopped
2 teaspoons olive oil
Optional Toppings:
diced avocado
sour cream
shredded cheddar cheese
sliced black olives
Instructions:
Add the ground beef to a dutch oven or pot and heat to medium. Brown the ground beef, then push to the side once browned.
Add in the olive oil and onion, then sauté for a few minutes, or until the onion is translucent. Pour in the taco seasoning and allow to toast for about a minute, while stirring.
Stir in the Rotel with the liquid and scrape up any brown bits on the bottom of the pan. Add in the cream cheese, ranch seasoning and chicken stock, then stir until well combined.
Allow the soup to simmer for 20 minutes or until thickened to your liking. Add in the chopped cilantro and serve with your choice of garnish over the top.

Zucchini Garlic Bites

These Zucchini Garlic Bites are a delicious and healthy snack, perfect for any occasion. Enjoy the savory blend of zucchini, cheese, and herbs in every bite!

Ingredients:
1 cup shredded zucchini
1 large egg
1/4 cup grated Parmesan cheese
1/4 cup low carb breadcrumbs home made
1 clove garlic, minced
1/4 teaspoon dried basil
1/4 teaspoon dried oregano
Salt and pepper to taste

Directions:
Prepare Zucchini:
Preheat the oven to 400°F (200°C).
Shred the zucchini and squeeze out excess moisture using a clean towel.

Mix Ingredients:
In a bowl, combine the shredded zucchini, egg, Parmesan cheese, breadcrumbs, minced garlic, basil, oregano, salt, and pepper.

Form Bites:
Shape the mixture into small balls, about the size of a tablespoon, and place them on a baking sheet lined with parchment paper.

Bake:
Bake in the preheated oven for 15-20 minutes, or until the bites are golden and firm.

The biggest struggle I see with people on their health journey is being too self critical. Instead of celebrating the small victories, they focus on the not good enough. This leads to feelings of guilt around food and self sabotage, such an unhealthy mindset! And a vicious cycle of quit and repeat! ⭕️

Focus on the small stuff. Every healthy choice you make daily. Those little decisions are what lead to 𝐁𝐈𝐆 results! 👏🏼👏🏼👏🏼

I’ve been making cheese crisps forever, but these were a game-changer! Instead of using cheddar (which tends to turn out chewy sometimes), I used thinly sliced provolone with Everything Bagel Seasoning. Bake at 350 for about 10 minutes, and voila! YUMMY!!!!
Also, I just kept them on a plate on the counter, and they stay super crispy for days!
And just a PSA, because a lot of people don’t seem to realize....use PARCHMENT PAPER, not wax paper. They are not the same😄

Ok seriously, THANK YOU to the person who posted 90 second bread. It’s so good 😩
Melt tbsp butter in small glass dish, mix in 3 tbsp of almond flour, 1/4 tsp baking powder, pinch of salt and one egg. Pop in microwave for 90 seconds, let cool, slice into two and then melt butter on a pan and fry up.

USES OF SALT IN THE KITCHEN
1. To remove the odour from your hands after cutting onions, chicken or fish, just wash your hands with salt and water, then you will have no more smell.
2. To avoid the feeling of the hotness of pepper on your hands after cutting/slicing it with your hands, rub them with salt and vegetable oil or red oil and wash them.
3. When pepper mistakenly enter your eye, put a pinch of salt in your mouth, the hotness of the pepper will disappear and you will see the magic.
4. When storing empty containers or bottle, throw in a pinch of salt to help them from getting stinky.
5. Sprinkling some salt on your fresh peppers while pounding it, helps to make it pound quickly.
6. Soaking bitter leaves in salt and hot water, helps to remove extra bitterness before cooking with it.
7. If your liquid milk always spoil before you finish it, You can add pinch of salt when you first open it, it will help the milk to stay fresh longer.
8. Salt and detergent mixture can help you to kill ants and cockroaches disturbing you in the kitchen.
9. Placing your overripe tomatoes in a cold and salty water overnight, will help to make them fresh and firm.
10. If you cut lemon and you do not want to use it finish, sprinkle salt on it, it would stay fresh for 3 days. Make sure you rinse it before using it again.
11. Salt can be used as a preservative method for preserving meat, fish or vegetables. It helps to prevent bacteria growth.
12. Grease fires or small fire can be put out with the use of salt.
13. To store your fermented locust beans (ogiri, iru or dawadawa), mix it with salt and put it in a container. Your fermented locust beans will stay fresh for years without getting spoil.
14. When boiling eggs, add a pinch of salt to keep the shells from cracking and peeling the eggs will also be easy.
15. If you don't want your spaghetti to gum together while cooking, add a drop of vegetable oil into a salty boiling water and it will come out separately.
16. Soaking your rice with hot water and salt before cooking it, will help to remove excess starch.
17. You can use salt to parboil your rice in order to remove the starch from the rice quickly.
18. Adding salt on your cocoyam when it starts boiling helps to make it soften quickly.
19. Salt is used to sanitize your kitchen sponges. It is used to kill the bacteria, germs in them. Soak the sponge in a hot salty water.
20. Salt improves the texture of the meat as it helps to break down the tough proteins, thus tenderizing the meat.
21. When chopping/cutting vegetables, sprinkle little salt onto the chopping/cutting board, it will keep the vegetables from moving or flying around while cutting/chopping.

Keto Berry Cheesecake Pie

Ingredients
Keto Pie Crust

1/2 cup of unsalted butter melted and cooled)
2 large eggs , room temperature
1/4 teaspoon sea salt
3/4 cup coconut flour
¼ teaspoon of baking powder
2 teaspoons of cold water
Keto Cheesecake Filling Ingredients

1 ½ cups of you choice of mixed berries
2 tablespoons of granulated sugar substitute
8 ounces of room temperature neufchâtel cream cheese or regular cream cheese
1/4 cup of granulated sugar substitute
1 large egg, room temperature
1 teaspoon of vanilla extract

Instructions
Crust Instructions

In a large mixing bowl combine the coconut flour, baking powder, sea salt, and set aside.
To the dry ingredients add the eggs, melted and cooled butter, and the cold water.
Mix all the ingredients together gently until dough forms.
Press the crust into a 9-inch pie pan

Pie Instructions

Preheat oven to 350-degree oven.
Combine the softened cream cheese, egg, sugar substitute, vanilla extract.
Combine the berries with 2 tablespoons of sweetener. Set aside.
Spread the cheesecake filling to the bottom of the crust.
Next, add the sweetened berries over the cheesecake layer.
Bake for 20-25 minutes or until the berries begin to melt into the cheesecake.
Chill your keto berry pie for a minimum of 1 hour for the best flavor.
Store in the refrigerator for up to 5 days. May be frozen for up to 3 weeks.

Notes
If you cannot easily source Neufchâtel cream cheese you can get a similar flavor by combing regular softened cream cheese with two tablespoons of sugar substitute.

Note that the crust does not need to be pre-baked prior to adding the filling.

Blackened Shrimp and Asparagus Skillet!🥰🔥

Ingredients

1 lb (450g) large shrimp, peeled and deveined
1 teaspoon chili powder
2 teaspoons paprika
1 teaspoon onion powder
1 teaspoon cumin
1/2 teaspoon garlic powder
1 teaspoon salt
1/4 teaspoon freshly cracked black pepper
2 tablespoons olive oil, divided
1 tablespoon olive oil or unsalted butter
1 1/2 pound (700g) asparagus (1 or 2 bunches) rinsed and trimmed
1/4 cup (60ml) vegetable stock
1 tablespoon hot sauce, optional (we used Sriracha)
1 tablespoon lemon juice
Lemon slices, red chili pepper flakes, fresh chopped parsley, for garnish

Directions

1. To make the blackened shrimp and asparagus skillet: In a large bowl, add the shrimp, chili powder, paprika, onion powder, cumin, garlic powder, salt, and pepper. Coat well and set aside.

2. In a medium-sized skillet over medium-high heat, add one tablespoon of oil and cook seasoned shrimp on each side for 2-3 minutes or until browned and cooked through. Remove to a shallow plate and set aside.

3. In the same skillet (clean up if necessary, to remove brown bits), add 1 tablespoon olive oil and 1 tablespoon butter and reduce heat to medium. Add vegetable stock, lemon juice, and sriracha, and bring to a simmer. Allow the sauce to reduce a little, then add the asparagus and cook the asparagus until crisp-tender, approx. 4-6 minutes, turning the asparagus regularly to coat into the sauce.

4. Push the asparagus on the side and add blackened shrimp to the pan. Squeeze a dash of lemon juice on the blackened shrimp and asparagus. Allow reheating for 1-2 minutes, remove grilled shrimp and asparagus from heat, garnish with parsley, lemon slices, and red crushed chili pepper if you like. Serve your blackened shrimp and asparagus immediately, enjoy! You can serve the blackened shrimp and asparagus with a side of zucchini noodles, cauliflower rice, mashed potato, or just plain regular rice.

Keto Salted Caramel Frappuccino

Ingredients
1 ½ cups crushed ice
½ cup unsweetened almond milk
¼ cup heavy whipping cream
1 teaspoon instant espresso powder
2 T powdered Swerve Sweetener
2 T Xyngular salted caramel Lean Protein
¼ teaspoon caramel extract
Lightly sweetened whipped cream for topping

Optional
sugar free caramel sauce for drizzling on top

Instructions
In a high powered blender, combine the ice, almond milk, whipping cream, coffee, sweetener, Salted Caramel Lean, and caramel extract.

Blend until smooth. You may need to stop several times and stir the ingredients with a rubber spatula in between.

Pour into a glass (or split between two glasses). Top with whipped cream and caramel sauce, if desired.
