Summer Time dishes!

Flank steak with a garlic aioli:

Start with the marinating the steak and leave it over night.
Marinade ingredients:
Minced shallots (1/2) or garlic
White wine
Dion mustard
Vinegar
Salt and fresh ground pepper
Lemon juice
Soyaki *secret ingredient shhhh*

Garlic Aioli ingredients (super easy)
3/4 cup of mayo
Minced garlic 3 cloves
Lemon juice 2 1/2 tbl spoons
Salt and fresh ground pepper
Mix and refrigerate

Preheat oven to 400 degrees
Get a heavy skillet and sear the marinated steak on both sides for 2 minutes to form a nice crust then pop in the oven for an additional 6 minutes.

Key! Let it rest for 5 minutes before cutting at angle.
Top with your aioli and serve.
Typically, flank steak is a tougher meat but like this, comes out like butter!

Quarantined with Joy Cardova Kile BBQ Turkey Stuffed Peppers:

This was a lot of fun to make and certainly a bit out of the box but absolutely DELISH! Especially with Tuffy Stone 's Cool Smoke BBQ Rub and Sauce.

Ingredients:
1 1/2lb ground turkey
6 bell peppers
1 can Rotel
1 can Tomato sauce
2 cups of rice
Bag of shredded cheese
Cool Smoke BBQ Rub
Cool Smoke BBQ Red Sauce

Precook simple minute rice (2 cups) and have ready to stuff.
Precook ground turkey and season with Cool Smoke BBQ Rub during cooking. Drain excess fat.
Mix in large mixing bowl along with rice and 1/2 can of Rotel and half can of tomato sauce.
This part is all up to you but what we did was add in about 1 tbl spoon of more BBQ Rub and 3 tbl spoons of BBQ Red Sauce (Time for a taste test).
Now time to stuff those peppers and top with more BBQ sauce.
Pour the rest of Rotel and Tomato sauce in the bottom of pan (this keeps it from drying out and adds even more flavor to the peppers) and cover with tinfoil.
Place in the oven at 350 degrees for 45 minutes.
Remove tinfoil and add shredded cheese to top of each pepper and cook for another 15 minutes.
(I added a slice of jalapeno but that's up to you if you want that extra kick).

The Peppers came out AMAZING! You can taste the BBQ, the bit of spiciness, just absolutely Delicious!

Looking forward to our next time outside this week where we'll be making even more BBQ with Tuffy Stone 's Cool Smoke BBQ Sauces.

Go-Go Balls... Healthy nut & oat snack

Sometimes you need to be a bit healthy. Having the morning coffee and PopTart or bowl of Frosted Flakes isn't exactly going to do it and I know many of you, myself included, just don't even bother with breakfast at all. Here's a healthy alternative that you can make yourself in a variety of ways.

All you need ingredients:

Whole grain flax seed meal
Can of old fashioned oats
Vanilla
Honey
Chocolate chips (pick your poison)
Peanut butter

Steps:

Ok this one is super tough!

Mix in a bowl using your hands until its nice and sticky
Put the bowl in the fridge for about 30 minutes
Roll into little balls
Enjoy!

Just made yourself granola power shots that can be eaten for breakfast or just a snack throughout the day.

10 Vegetarian Sheet Pan Dinners to Add to Your Meal Plan It's one of the easiest ways I know to get a veggie-packed dinner on the table.

Wild Card game... Chicken 'Sheet' Sausage

Very easy to make, very healthy, extremely tasty!

Ingredients:

1 package of chicken sausage from Trader Joe's- Nashville,TN
1 onion
1 zucchini
1 package of broccoli
3 red potatoes

Steps:
Dice potatoes first and cut smaller (takes longer to cook if they are too big) and toss in olive oil, salt and pepper, and Italian seasoning.
Bake the potatoes on a sheet pan in the oven at 400 degrees for 5 minutes. Do this while dicing up other veggies and toss in the same mix of olive oil, salt & pepper, and Italian seasoning.

Take out potatoes and mix other veggies on sheet pan together in a single layer.

Add the sliced sausage (precooked sausage) to the mix and bake for 15 minutes.
Take out, stir, and sprinkle with parmesan cheese, back in the oven for another 5 minutes.

All done.

Christmas Dinner with the Kiles
Cedar Plank Salmon

Ingredients:
Salmon filet
Salt / Pepper / Honey / Olive oil (we also added chili powder)

When cooking salmon on a cedar plank be sure to soak your plank in water for an hour prior to prep.

Coat the spot on the plank with olive oil then place the filet over top.

Coat top of filet with olive oil, salt, light pepper, light chili powder, and drizzle honey over top.

When it comes to cooking on the grill I recommend piling up your coals and lighting until the coals are gray/white and no longer on fire then push the coals to one side of the grill.
Place the plank with the salmon on the other side of the grill and cover.
Let cook for between 20-25 minutes or until salmon is flaky or internal temp is at 145 degrees.

Serve and enjoy!

Christmas Dinner with the Kiles
Baked Zucchini

Ingredients:
Sliced zucchini (recommend 1/4 inch thick)
Ranch
Parmesan cheese

Pretty easy actually, just slice, coat, drizzle, and baked at 350 degrees for 12 minutes.
We used the rack and baking sheet set from our friends at Kitchenatics​... and it cleaned up super easy too!

Take a look at this nice little piece just received from Kitchenatics, the Jelly-Roll Baking Pan & Rack Set.

So much can be made on these without even realizing it, no grease, no fuss, easy to clean and ready to bake.

I'm already looking forward to some bacon and potato wedges, we are even going to be doing a homemade nacho dish that we'll bake on this beauty.

Joy's Cheesecake Recipe.... For those who know, know...

Ever wanted to make a cheesecake for the office or a neighbor or not sure how to bake anything and end up getting a package of the Publix cookies to bring with you?

We have the easiest way to make a delicious cheesecake (cupcake size).

Ingredients:
This recipe is for 24 cheesecake (cupcake sizes)... Great for parties or the office.

3 bars of Philadelphia cream cheese
3 eggs
Splash of vanilla
3/4 cup Sugar
mini chocolate chips
Pillsbury sugar cookie squares (1 pack of 24 break and bake used for the base).

Open the Philadelphia cream cheese and put it into a large bowl and let soften (at least 30 minutes depending on room temp).

Preheat your oven to 350 degrees

Place the Pillsbury sugar cookie squares in center of cupcake liner and let bake for 8-10 minutes (until dough is round but not quite cooked (this is base of cheesecake dessert).

While cookies are baking, use hand mixer on low to mix cream cheese and sugar first until well blended.

Add each egg one at a time and blend.

Dash / splash of vanilla and blend.

Add ins can be blended in here!

Take cookies out of oven and let cool for a couple minutes and lightly tap down cookies to make a slight well and fill cup with cream cheese mix.

Bake for 15-20 minutes until batter starts to puff and lightly crack.

Let cool on counter and then refrigerate at least 4 hours. All done.

Chocolate chips or any other mix-in can be added to the batter. (We've made lemon, pina colada, salted caramel, etc.) Ask for details!

The Stuffing... (A must)
Ingredients:
Package of Pepperridge Farm Stuffing
Celery
Onions
Chicken stock

Cook a half stick of butter in a pan and add the chopped celery and onions and cook until all the butter is melted.

Add chicken stock and stir until it boils

Add the Pepper Ridge Farm Stuffing mix and stir.

Put mix in a casserole dish and cover. Pop in the oven at 350 degrees and let it bake for 25 minutes.

Done.

Cauliflower & Green bean casserole
Ingredients:
Package of fresh cauliflower and green bean spears.
3 cups of half & half
parmesan cheese
mustard powder
3 tbsp flour
shredded Gruyere cheese (Its the good stuff)
Panko bread crumbs

Cut off stocks of cauliflower and cut green bean spears in half.
Boil green beans in water for 4 minutes and strain but don't rinse.
Same with the cauliflower but not together.

Melt butter in a saucepan and add bread crumbs until browned. Set aside and let cool.

Another saucepan melt butter and add flour for 1-2 minutes. Add half & half and let come to a boil. Reduce to let simmer and thicken. Add quarter cup shredded parmesan cheese and mustard powder, a pinch of salt. Let thicken.

Mix the shredded Gruyere cheese with the bread crumbs.

In a casserole dish, first lay down a third of the cream sauce at the bottom of the dish. Then add the mix of green beans and cauliflower. Add the rest of cream sauce over top and coat all of it.

Sprinkle the bread crumb and Gruyere cheese over top.

Cover with tin foil and pop in the oven at 350 for 25-30 minutes.

Done.

The Turkey!... stage 1
Ingredients:
1 12 - 14lb turkey
2 oranges
1/2 red onion
fresh rosemary twigs
2 sticks of butter

Zest the orange, chopped rosemary, 1 stick butter in a bowl and mix well.

Use your hands to loosen the skin on the inside of the turkey and massage the orange butter rosemary mixture on the inside cavity, making sure to coat everything inside and out.

Stuff the inside of the turkey with the cut oranges, remaining butter, quartered red onion, and rosemary twigs.

Pop in the oven at 325 degrees and lightly cover with tin foil.

We'll be back at around 2pm (bird in the oven at 10:03am).

Be sure to baste the bird every 30 minutes or so and only take off the tin foil in the last hour to get that golden brown.

Lets see how it comes out in a few hours....

Grilled Salmon... easy peasy.

Ingredients:
2 salmon fillets. Olive oil. Salt. Pepper. Honeymustard.

Wash off the fillets and pat dry with a paper towel. Coat in olive oil, salt and pepper.

On an electric grill (At 400 degrees) lay the skin side down for 4-5 minutes until skin is crispy then carefully flip and 4-5 minutes on the other side.

Take off the grill, coat in honeymustard and let melt.

You're done!

Pre-Thanksgiving Italian stuffed peppers
(Only 6 ingredients)

1lb Ground turkey, 4 bell peppers, Jasmine rice, marinara sauce, pesto, pepper jack cheese. (Ironically, every item we used was from Trader Joe's).

We started with precooking the ground turkey, drain the oils and mix in large bowl with Jasmine rice. Add in 2 tbsp of pesto and mix.

Stuff those peppers like the bird on thanksgiving (hehe stuffing the turkey in reverse... I crack myself up).

Bake in the oven for 35 minutes at 350 degrees.
Top with the pepper jack cheese for another 5 minutes
Presto!

Delicious Panera Bread quality broccoli & cheese soup... made easy.

Ingredients:
Bag of broccoli
Shredded match stick carrots
1 onion, diced
2 cans of cream of broccoli soup
4 cups 2% milk
Shredded cheese (mix of sharp and mild)
4tbsp butter
Salt & pepper to taste

In large pot saute diced onions and carrots with the butter until softened.

Add 2 cans of cream of broccoli soup
Add milk
Add 75% of total cheese
Then wait till cheese melts (done on medium heat)

Steam broccoli in bag first, then cool and chop (cutting off stalks).

Taste and add salt and pepper to soup mixture as needed.

Add broccoli and rest of cheese.
Let simmer and thicken (15-20 minutes)

"Boom de Pollo" (aka chicken enchilada marinated in Rotel salsa)

Been so excited about this all weekend.

Ingredients:
2 chicken boneless chicken breasts
Rotel salsa
Mexican blend cheese
Roma tomato
Old El Paso tortillas
Old El Paso enchilada sauce
Sour cream
Chopped lettuce
Mexican style rice

First pound out that chicken like it owes you money, then marinate for about 6 hours in Rotel salsa.
Grill the chicken breasts and shred the meat just using two forks.

When you're ready for the enchiladas, mix the chicken again in fresh Rotel salsa and stuff the tortillas (7 tortillas).

Place in tin foil lined tray and cover with the El Paso enchilada sauce and Mexican blend cheese.
Pop in the oven at 350 degrees for 25 minutes.

Serve with Mexican style rice, chopped lettuce, sour cream, and topped with diced tomatoes.

Soooooo delicious!
