Something to know about me, I am a MORNING PERSON!
It’s not just that my body and mind aren’t their sharpest in the evening (we’re talking no big decisions or complex thinking past like 6pm 😂) but I LOVE mornings. Always have ☀️
I love coffee in the mornings, the cooler temps, the morning nature sounds, light morning breezes, the sun shining. It just truly feels like fuel when I get to sit outside in the morning sun.
I’m visiting my sister so I’m enjoying her back porch ❤️ Doesn’t make me miss my apartment balcony overlooking a parking lot where everyone can see me and my business everything I’m there.
Dinner Time!! Today I leaned ALL in to my accountability group! Since we all have digital access to our nutrition program, we can rewatch and refresh as many times as needed! This helps us because we have to let go of the power that we USED to give our food, that it was bad or good or that we had to sneak or hide it. There’s a reason this plate has a lot of veggies! There’s a reason I drank water before I ate. But this flexibility is what we all need, and there’s always a place for you!
Tonight’s dinner: Baked chicken, hearts of palm noodles (Trader Joes) with butter, and steamed veggies with seasoning from Trader Joe’s.

This ended up making 2-3 servings, so it can make a great breakfast meal prep for a few days! I substituted pure maple syrup for honey and quick oats for rolled oats because that’s all I had. This just one of the hundreds, probably even thousands, of recipes I have access to! This is a great breakfast! Next time I think I’ll add some Greek yogurt on the side!

Today was a good mental health day. The day was fine, pretty normal for a summer day, but for whatever reason, it was a good mental health day. Do you have those days? The days when you wake up a little easier, you smile a little sooner, laugh a little more, and actually cross things off your to do list?
It’s not always a good mental health day for me, and I sure try to hide it 😉 For me it’s clutter. It’s not washing dishes for a few days. Forgetting to take the trash out by literally putting it on my doorstep. Slipping into old take-out habits that leave me feeling stuffed and guilty. Canceling plans with friends because it just seems better to sit on the couch...
Today was a day when I saw the compound effect. I cheered on my accountability group, I got in my workout, I ate well, I drank my water, I checked in with my team, I cleaned, I did some adulting, I talked with friends and family, I made a gratitude list, I journaled, I meditated, and I breathed. ☀️
I talk about fitness and nutrition a lot here, but mental health is where it’s at. It’s not something I focused on until I was probably 25 years old. Now, I work at it everyday and I know tools to help myself. I know how far I’ve come and how far I still have to go. But I’m making it:) We’re making it. 💛

This month I’m focusing on a blend between and my program,
Why blend the two? Gut health:) What I love most about 2B is that I can truly sustain it for life. Adding in the intentionality of the new means I will be focusing on gut-friendly foods, eliminating some food with common sensitivities for a while to see how it affects me, and gaining all of the benefits from eating great food!
Of course I will still be living that life:)

I joked that I spent hOuRsSs on this delicious-looking meal earlier this week, but it actually was a 5 minute meal. :)
Easy meals, easy cooking, easy ingredients, that’s my thing 🤘🏽 In order to be successful, I’ve learned that I have to keep it simple. This dinner of protein and veggies was just that!
The veggies were Trader Joe’s “Ready Veggies” that steamed in the microwave for 3 minutes. I added some tamari soy sauce on top. While that cooked, I opened this Ready to Eat Hot Smoked Salmon from Trader Joe’s and warmed it in the air fryer for about 5 minutes.
I used to not be a breakfast eater, and if I did eat it, I ate something that left me hungry in an hour because it probably lacked protein and fiber-filled carbohydrates.
I’ll never regret sharing things I love with friends, family, and my IG friends!! These superfoods shakes have been a staple in my healthy journey for over 3 years. They’re not weight loss shakes and they’re not meal replacement shakes… but I add in goodies and pair with things to make it a perfect 2B Mindset breakfast!
From the shake, every single day I get to fill my body with vitamins, minerals, pre/probiotics, antioxidants, digestive enzymes, amino acids, adaptogens, phytonutrients, and best of all… SUPERFOODS!
Todays recipe: Watermelon, ice, Unsweetened almond milk, a little water, and vegan strawberry superfoods!
Sunday breakfast! What a special treat to have a breakfast like THIS with my family that’s not a weekday on-the-go breakfast!! And regular bacon is an extra special treat:)
Keeping this a great plate it breakfast with 50% fiber filled carbs (oatmeal and fruit) and 50% protein (bacon and eggs!)
Dinner and done!! Tonight’s was some thin air fried chicken and two of my favorite Trader Joe’s veggies!!!
Wow Wow Wow this meal was fast and yummy!! I bought the salmon not knowing that it was already cooked and ready to eat! So I seasoned it and heated it in the air fryer for only about 5 minutes, then shredded it onto my steamed veggies! I topped my veggies with about a tablespoon of light Italian dressing and mixed it all together! Definitely remembering this for the nights I need something quick and easy!

What are you doing to help yourself be your best self as you finish the year?
Some of the things I’m doing to keep myself in the right mindset as I finish up the year:
1. Strengthen my mind as much as I strengthen my body. Meditation and gratitude are great tools for me!
2. Movement!!
3. Sleep!! I’m a solid 7.5-8 hour gal for my best self!
4. Water water water! Aim for half your weight in oz of water per day!
5. Lean in to my wellness group! Let them encourage me and inspire me!

What’s for lunch!?
I had a fun quick weekend with my parents and got to teach them how to use their new air fryer! My dad LOVED the chicken, and we made tons of different veggies! Paired with some wild rice, we had a great lunch!
We air fried the chicken for 16 minutes on 380°, flipping halfway through.
For the veggies, we did 15 minutes at 370°! Easy and fast! (These pictures were cookies in the oven though.)
𝘼𝙧𝙚 𝙮𝙤𝙪 𝙞𝙣 𝙡𝙤𝙫𝙚 𝙬𝙞𝙩𝙝 𝙮𝙤𝙪𝙧 𝙖𝙞𝙧 𝙛𝙧𝙮𝙚𝙧, 𝙩𝙤𝙤?
This easy dinner was some steamed broccoli and carrots, some cooked ground Turkey with taco seasoning, and cooked in the air fryer for about 8 minutes to get it all crispy and yummy! I also added some cheese and some hot sauce! If I would’ve had jalapeños then I definitely would’ve added those!!
What’s your favorite thing to cook in the air fryer? I really like cooking chicken and salmon in mine!
Definitely doesn’t look as appetizing as it was, but this dinner was delicious and was a great for my friends!! I got a package of stir fry steak and some mushrooms and air fried them for about 18 minutes, shaking 3 times during cooking.
Then I sautéed some broccoli slaw with tamari soy sauce!
Done!

I found this quote today and WOW does it resonate. New habits, new life.
Old diets, hiding my overeating, being intimated to workout with others, social anxiety, work frustrations and really challenging environments, and feeling ashamed at where my physical health had gone was my survival mode for years. It affected my mental health, which affected my physical health, and the cycle continued.
Now I focus on consistency with FUN workout programs, nutrition with no restrictions and no counting calories, points, or macros, continuing to enjoy eating out and eating treats, and focusing on my mind and mental health.
I NEVER thought coaching would be part of my journey, but I’m so thankful that everyday I get to wake up, be a coach, and help others along their journey, too.

It’s okay that you ate the chocolate and the candy.
It’s okay that you had the pizza, or the tacos, or the pasta.
And if you feel guilty,
Remember that you’re in control.
Remember to think of these things as treats, not cheats!
Remember that this is one week.
Remember that you don’t have to exercise more because you ate more.
Remember that feeling guilty is your old mindset, and that you can move on.
But mostly remember that you deserve to be celebrated and appreciated this week and every week because this job is dang hard some days. ❤️
Choose Joy 💐
Today in my wellness group we are obviously talking about The Force (you know, May the 4th be with you 😉) and about how we can choose to have a growth mindset, choose joy, choose the silver lining, choose to overcome despite all of the challenges we face.
Today my Force moment was waking up, working out, getting in some journaling and meditation, and MAN do I feel better than I did yesterday and Monday when I skipped. It’s hard to not lean toward The Dark Side, but the Force is stronger with friends!!
Getting ready for Taco Tuesday?? Eating veggies-most has been a game changer for me, especially at dinner.
Tired teacher Katie wants Taco Bell. She wants to drive through anywhere so she doesn’t have to cook. She fights for energy and resetting each day.
Then I remember that my team LOVES hearing what I have for dinner, and I want to be proud of the veggies-most choices I can make. Sure, drive through and fast food happens, but I’m working on not using it as a crutch for being tired or not wanting to cook.

Quick 10 minute lunch!!
Trader Joe’s hearts of palm noodles are my all-time favorite veggie noodle!
I also microwaved some turkey meatballs (also from Trader Joe’s) and steamed some broccoli. To top it off, I added a little sautéed spinach to some marinara sauce! A perfect quick and easy lunch! Not pictured: apple on the side for a great fiber-filled carb!
Time, money, not liking veggies, kids don’t like veggies…. I hear these truths frequently when I share about 2B mindset.
Following that, I usually hear things like:
I wish I liked veggies
I’m an emotional eater
Or even
I hate counting calories.

One of my favorite things about being a coach is the accountability I get from teammates! I’m just getting to know so many amazing women in my new team and I love learning from them, especially when they’re rocking 2B Mindset day in and day out.

I know you watched them workout and sat on the sidelines. You feared the gym and were torn down every time they made comments about the beginners in the front row of spin class or how they had to slow down for the newbies at barre. It didn’t motivate you to change, it made you hide in a corner.

Remember that day you finally sent the message? You got brave, you found someone you trusted, were encouraged by, and you knew that she wouldn’t be doing this if she didn’t love it. KT, the rest is history.

I don’t have a massive before and after, and that’s because you can’t see it on the inside. Everyday I deal with mental battles that try to tell me that because I haven’t lost XYZ lbs that I can’t do this. I KNOW that’s not true, and I wouldn’t be a coach if I didn’t love it. I wouldn’t be a coach if it didn’t change my life.
The journey is up and the journey is down, but I know that without Beachbody and my accountability group, I’d be stuck in the down, trying everyday to find ways to get out, or maybe even just giving up.
Team Faithful & Fearless is small but mighty, and I want to be that person to cheer for you the way they did for me. I want to help you, to be your cheerleader, to answer your questions, and to help you along the way. Be brave with me. Be faithful & fearless in yourself ❤️
Grocery haul! This week it was They have my favorite veggies! Last week I attempted vegan-ish lunches and it made me feel really good! I got some ground turkey and chicken breasts for my dinners, but I’m going to try some bowls again this week.
You know me and my love of. So roasted some veggies, air fried some chickpeas, and tomorrow I’ll put it all together!
I also add fruit to my breakfast, lunch, and snack everyday so this week I got grapes, strawberries, bananas, and cantelope! It needs a couple more days to ripen but hopefully it’s sweet!!
Happy Easter!! So glad I got to celebrate the day with my family. I sure do love being your auntie, little one.
If you ever need to know trivia about me, this is my favorite meal. Ham, Mac and cheese, and mashed potatoes is all I need in life to be happy:) Best part is that even though it’s not the exact look of a perfect 2B Mindset lunch, it IS a 2B Mindset meal because it came without guilt. About 13.5 lbs down since I started coaching again and from when I decided to refocus on my nutrition as my # 1! 2B mindset is for me. For the flexibility, the mindset, the veggie focus, the mindset, the variety, the mindset, the hunger cues and learning what works for you…. Oh, and did I mention the mindset? My team is growing and I love teaching :) I want to share this great nutrition program with you and help you find an exercise program that we consider “extra credit!”

My first attempt at a for lunch! Lots of veggies with spinach, cabbage, carrots, broccoli, and peppers. My protein was the beans and my fiber-filled carb was roasted sweet potato. All you Buddha bowl fans, How’d I do!???
I personally am a fan of meal prepping on Sunday and eating throughout the week, because on nights like tonight, there’s NO WAY I want to get into the kitchen and cook and clean. Mostly clean ❌. So now I have this yummy meal that I can share with my accountability group, give them ideas, just like they’ll give me ideas for next week’s lunch!

The best antique is always an old friend ❤️ Got to see two of my besties this weekend at our old stomping grounds at TCU! It’s the first time all of us have been there at the same time in 10ish years! Plus now there are babies and husbands and fiancés in the mix! So thankful for this time and these laughs with them. And any day I get to be in Fort Worth is a good day!!
Sunday Breakfast today was my favorite nICE cream… aka froWHOA! This is when you make your regular superfood shake EXTRA thick! For me, I like using frozen zucchini! You can’t taste it at all and it doesn’t turn your smoothie green! Plus, extra veggies! And adding in some fiber-filled carbs of strawberries and banana (which was blended) will give me lasting energy!
