Smoky Tacos! ๐ฅ๐จ๐ฎ๐คค
Started out by seasoning this roast the night before, I finally got to use some of Hurtado Barbecue all purpose rub! ๐ gave this a heavy coat and threw in the fridge. The next morning I let it come to room temp before giving another light sprinkle then I got my Weber Kettle fired up using the snake method with B&B Charcoal ! I set this one up for a higher temp cook. Smoked around 300ยฐ for 3 hours with post oak wood chunks. Once it had nice bark I transfered it to my preheated crockpot and finished off on low for 3 hours. Shredded and built some tacos! ๐ฅ
These were delicious, tender and packed full of flavor! The Hurtados rub is really good, you can put that sh** on everything! Had some cold Millers to wash them down! ๐

Had us a cajun Sunday! Gator legs and boudin! ๐ฅ
My aunt and uncle picked these up from their favorite boudin store in Louisiana The Best Stop I've never had authentic Louisiana boudin, this was a game changer! FULL of love! The Gator legs were phenomenal! Cooked to perfection, had a nice crunchy outside and tender and juicy inside! ๐ฅ
I made a spicy cajun brine and let the Gator soak all night, patted them dry the next morning and seasoned them with a homemade cajun rub! Grilled directly over a hot bed of coals for about 15 minutes. Threw on the boudin directly over the coals for a few minutes on each side then moved to a cast iron pan to finish cooking with shrooms, onion, garlic and butter! ๐ฅ๐ฅ๐ฅ๐

GRILLED RIBS ๐ฅถ๐ฅ๐ซ ๐คฏ๐๐ฅ
Never thought I'd have ribs on at 375 degrees but these turned so freaking delicious! Started out with a rack of baby backs, sliced in between the bones for individual ribs. Coated heavily with 2 Gringos Ribnoxious and let sit while I fired up the grill! I used B&B competition logs and post oak wood chunks. Place the ribs on the grill indirectly for about 45 minutes! Once it has a nice bark all the way around place them directly over the coals for about a minute on each side for a nice crunch! Placed in a foil pan with butter and bbq sauce then I put them back on the grill indirectly for 1 hour! Total cook time was 2 hours and they were almost perfect! Nice crunchy bark on the outside and nice and tender on inside! ๐ฅ Thanks for watching and following along!

Poor Man Burnt Ends ๐ฅ
Start out by cutting up a chuck roast in cubes and marinating overnight, I used a mix of wash your sister sauce, soy sauce, red pepper flakes and seasonings. Set up your grill for a indirect cook while the meat comes to room temp. Pat the meat dry and coat in a sweet BBQ rub, I used 2 Gringos Chupacabra Ribnoxious. Place your seasoned meat cubes on the "cool side" of the grill. Put your lid on with the vents above the meat so the smoke rolls over the meat and out the vent, I used post oak wood chunks! Smoke around 275-300 degrees for 2 hours then move the meat to a pan with some secret sauce, I used about half a bottle of BBQ sauce, 1 cup of brown sugar, 1 stick of butter, few tablespoons of honey and soy sauce, bring to a boil and let cool. Pour sauce in the pan with meat and toss to cover all the pieces. Cover in foil and smoke for about 2 more hours or until probe tender (203 degrees internal) I placed them back on the grill for about 15 minutes then let rest for 15 minutes! ๐ฅ๐ฅ๐ฅ

Smoke a whole chicken, shred the meat and mix with diced celery, onion, green apple and Serranos or jalapeรฑos. In a separate bowl combine mayo, Dijon mustard, chopped dill, lemon juice, S&P. Pour the sauce in the chicken mixture and toss. This chicken salad can last in your fridge for up to 5 days! Top round steaks smoked at 275- 300 degrees using the snake method using B&B Charcoal and mesquite wood chunks! After 2 hours move to a pan with veggies and broth. Continue to smoke for another 2-3 hours or until probe tender! ๐ฅ

Man Meal Prep! Smoked chicken salad sandwiches! ๐ช
Spatchcock chicken, smoke at 300-325 degrees for 3-3.5 hours or until internal temp of 160-165. Cube up and mix with a stalk of diced celery, 1 red onion, 1 green apple and 2 jalapeรฑos. Make a sauce with mayo, Dijon mustard, red wine vinegar, chopped dill, S&P, hot sauce, cayenne and lemon juice! Mix all the ingredients together! Keep refrigerated up to 5 days! Make a fresh sandwich before work and these will leave you wanting more! ๐ฅ

Here's a slice of heaven to brighten up your Monday! Trisket Tacos! ๐ฎ๐ฅ
Smoked a Tri Tip brisket style (Trisket) over the weekend on my Weber Grills Kettle Grill! Used only the best B&B Charcoal and apple wood chips for a indirect cook! Seasoned the Tri Tip with Fire & Smoke Society Steak King and threw it on the grill at 300 degrees! Smoked for 3 hours then I wrapped it up in paper with a foil bottom and smoked for another 4 hours until it was probe tender and internal temp of 203. Let it rest for atleast a hour then slice against the grain! Made for some killer tacos with HEB fresh tortillas and fresh onion, cilantro and limes! Cold Miller Lite during the whole process!
