~Grits- I like to add a chicken bouillon cube which give lots of flavor instead of salt. Also added creamy melt sharp cheddar cheese with cream cheese, butter and heavy cream.
~Scrambled eggs with cooked with fresh spinach.
~Topped with crumbled applewood bacon and chopped tomatoes.
~ Key Lime Cake in a Jar w/Cream Cheese Frosting and Key Lime Curd
I love this unique cake idea. This baking project is ideal to make as gifts for Easter. The key lime cake recipe is moist, delicious, and very simple. The key lime curd is a little time consuming but definitely worth the effort. The cream cheese frosting is absolutely delicious. Layer in mason jars. Enjoy!

~ Low Carb Shrimp-Bacon-Spinach Breakfast Casserole(well, it started out that way)😂😂
The recipe started out low carb but then changed, with a little help(😂😂), into a carb rich breakfast quiche. I added a pie crust and heavy cream transforming it into a quiche. It’s filled with shallots, onions, mushrooms, spinach, jumbo shrimp, bacon, and cheddar cheese. I had to make the 2 ingredient whipping cream biscuits just because it’s Sunday. Delicious!!!

I love the pourable praline frosting. Work quickly because the frosting will harden. The brown sugar pound cake is rich, moist and delicious without the frosting. Back to the praline frosting filled with candied pecans, brown sugar, confectioners sugar, butter and vanilla. ~ The Ultimate Crab & Shrimp Dip
Let’s kick off the Iron Bowl with a hot seafood dip baked with four cheeses(I added pepper jack cheese), jumbo lump crab meat, chopped shrimp, and bacon(I added bacon). Add garlic buttered toasted baguettes. WAR EAGLE 🦅

~ White Chicken Chili
This recipe is one my favorite wintertime comfort foods. It’s a great alternative to traditional chili. The creamy texture is a combination of puréed cannellini (white kidney beans) and cream cheese. The recipe uses low-sodium chicken broth, corn, whole white kidney beans, cumin, coriander, paprika and oregano. Add in the green chilies for a little kick. A great time-saving and flavor-filled tip is to use a rotisserie chicken. The fresh lime juice and cilantro gives a light refreshing taste. Topped with sliced avocados and Monterey Jack cheese. Don’t forget the tortilla chips. Enjoy!

~ Blackened Shrimp Omelette topped with Cajun Cream Sauce
Make breakfast a treat on a Saturday morning. Marinate shrimp in blackening seasoning for 30 minutes before cooking. Store bought blackening seasoning works well. Use a basic cream sauce - butter, heavy cream, garlic, Cajun seasoning, and Parmesan cheese. I didn’t use a recipe. Ohh so good!
~ Red Velvet Cheesecake Cake
When a red velvet cake and a cheese cake have an entanglement, this cake is the result! 😂 The combination of a moist red velvet cake and a smooth creamy cheesecake is absolutely delightful. The two layers of red velvet cake and one cheesecake totally encased with a rich cream cheese frosting. Plan ahead because the cheesecake needs to be frozen for several hours or overnight. This decadent dessert would be the perfect addition on the table for Christmas dinner. Enjoy!

Breakfast....Ditch the grits for homemade buttermilk biscuits with a creamy Cajun shrimp, bacon and cheese sauce. Split the biscuit in half. Add the ohh so good Cajun sauce. Remember to add the top of the biscuit. Sop the biscuit making sure you get a little bit of everything. Now that’s good eating on a Saturday morning.

Happy New Year’s Eve! Let’s celebrate! Kabobs are fun and fast to prepare. The homemade jerk seasoning is full of flavor with a kick, prepare yourself. Since this cake is Victor and my mother’s favorite, it motivates me to make it extra special for Christmas. Let’s add a little cheer to the holidays! These moist lemon cupcakes are infused with a generous amount of vodka, a cap and a half to each cupcake after baking. Feel free to use your favorite lemon cake and cream cheese frosting recipe. The creamy yellow cream cheese frosting compliments the cupcakes then topped with sugar sprinkles just like the rim of the martini glasses. Cheers!

~ Mardi Gras King Cake
I had fun making this Mardi Gras King Cake using a checkerboard cake pan to create the design. The gel instead of liquid food coloring is best used to maintain the consistency of the vanilla cake batter. I had to make it official with a baby on top of the lucky slice.

~ Shrimp Quesadillas
Cajun seasoned and sautéed shrimp mixed with mozzarella and cheddar cheese folded in flour shells then browned in melted butter just until slightly crunchy made absolutely delicious shrimp quesadillas. Added yellow rice, freshly made salsa, and sour cream to complete the meal. Enjoy!
~ Jambalaya
A quick and easy convenience food can get great reviews by adding a few steps. Use a box of your favorite jambalaya add browned Conecuh sausage, sautéed shrimp and veggies before cooking the rice mixture. Substitute a low-sodium broth instead of water for more flavor.
~ Brown Sugar Glazed Salmon
Pan-seared salmon with a brown sugar glaze is perfect for a weekday dinner. If you don’t want to make the glaze, the salmon can be purchased with the brown sugar added. The yellow rice is cooked separately then sautéed with mushrooms and added to the salmon. Dinner is ready in less than 30 min.

~ Tip - Plan ahead to marinate salmon. Add Salmon seasoning to the glaze. Pan sear with equal amounts of butter and extra virgin olive oil about 2 to 3 tablespoons of both.
