I can’t even…
The cup says what we feel about 2022. It was all the things—challenging, rewarding, fun, tasty… and fast!
We don’t do resolutions, we do additions. You know, adding that experience, adventure, new friendship or new habit that makes each year a little sweeter or memorable.
What’s one thing you’d like to add this year? Don’t have one? Pick!
Plan, Prep, Cook, Eat. And the most important of the 4? Planning!
When you have a plan you only shop once. (Saves money too!) You'll save the time you normally spend gazing into your fridge wondering what to make for dinner, but ahh, then there's the result. Your body will give you a silent high-five because there's nothing better than a bowl of Pasta-E-Fagioli soup on a winter night. Never had it? We challenge you!
Add some crusty bread (and a glass of red wine😉) for a great meal that might just add a bit of variety to your normal rotation.
We call them food emergencies. You know, when you're so hungry you can't stand it, and there's nothing remotely healthy in sight?
Keep a couple things on hand, like the blueberry lemon overnight oats you made last weekend, or make a 1 minute apple "cookie" out of peanut butter and apple slices. Leaving the house? Never leave without snacks, like a handful of raw almonds, or honey-roasted pecans.
Avoiding food emergencies will not only stop you from reaching for the crappy stuff, it will make those around you, still want to be around you. 🤣

Ahhh, thank you Facebook memories! What a super reminder from last Christmas, and the Jingle Jolly Holiday videos we were making in December of 2021 for the brand new ICCT community. People say a year flies...but it really doesn't when you step back to notice what filled our days.
2022 has been a year to remember! 1 course finished, 2 more in progress and our newest course, Cooking Real, the ICCT Signature Course, now available! We've created and shared over 315 recipes, made over 75 videos, and taught loads of cooking skills. We've held cooking clinics & go-live events, built a website, and a community. And then there's the cooking--whew! And through all the craziness came the joy as we watched so many people re-claim their home kitchens. It's been our joy to see the cool things you're cooking!
We are full of gratitude for all of you, and wish you much joy, a whole lot of peace, and all the love this holiday season. 🥰🙌

Tis' the season where most shopping malls smell incredible from those yummy, warm candied nuts🤤! But why spend the money on those expensive treats when you can make them right at home and save yourself from some unwanted saturated fat!?

We often talk about the Standard American Diet in the I Could Cook That community...more like the "sad" diet! From 1980 to 2020 the SAD diet has transitioned away from real food to ultra-processed convenience foods that aren't so good for us.
We love to share anything we come across that makes us think twice about what we put in our body, and have recently heard of Dr. Li, author or "Eat to Beat Disease", who reminds us of how simple foods that we have easy access to can give us our best shot at a healthy life.

Motivation Monday--time to get those greens in🌱!
We know the holidays are a hard time to prevent over-eating. We're humans too, we get it! Why not kick-start the new week with some detoxing greens to reset your metabolism!
5 EASY ways we love to get our greens in:
🌱Add to your eggs in the morning!
🌱Toss into a berry smoothie with some ice, banana, and your favorite protein powder.
🌱Move aside iceberg--top your favorite sandwich with spinach or arugula!
🌱Protein bowl: Have leftover turkey!? Top some spring mix with turkey and add some roasted vegetables. YUM!
🌱Grab some microgreens from your local market and top on literally ANYTHING.
Little changes like these make a big difference!

Sometimes we get crazy and just kick all the diet advice to the curb. We just ask ourselves one simple question:
Cleanse or clog?

Friendly reminder…it’s fall🍁🍎
Our members know we roast a lot of veggies. They just taste better this way. Cut ‘em the same size, then toss with evoo and a good sprinkle of salt and fresh cracked pepper.
Fall gives us cool options…turnips, parsnips, rutabaga, brussles and squash in addition to all the carrots, potatoes and things we usually reach for.
Our challenge to you? Go get one you’ve never tried before and give it a whirl. Variety is truly the spice of life.

Bananas, nut butters, and even ricotta (yes ricotta cheese!) can be added to pancakes to keep you full throughout the morning and stop you from reaching for a candy bar at 10am😏

Quick tip: Swap out the white wine vinegar for champagne vinegar when making bruschetta.
It's a little more subtle, has a less "acidic" taste, and really compliments the tomatoes beautifully.
Good crostini, super flavorful tomatoes, evoo, champagne vinegar, basil, S&P and a drizzle of balsamic reduction. Simple ingredients, big wow.
