Well friends, there may have been a mix up last night on the difference between jicama fries and yuca fries....

Made a quick dinner of a "pizza" and an Italian sausage link (had a side salad later on for some veggies!).

Heated a sundried tomato keto tortilla in my cast iron pan with a little oil. Flipped after started to brown a bit, then topped with sun dried tomato pesto, a slice of thin provolone and a slice of garlic cheese. Covered and turned heat off and let the cheese melt and the tortilla get crispy.
For the Italian sausage, I just simmered it in a little water until it was thawed and mostly cooked, then drained the water and sliced the sausage. I finished it by sautéing until done.

Made scrumptious pancakes this morning!!

Orange pancakes
2 large eggs room temperature
1 teaspoon oil of choice (if using coconut, make sure it's melted)
1/4 cup milk of choice (I used unsweetened almond and coconut blend milk this morning)
1 cup almond flour
1/2 teaspoon baking powder
1/2 teaspoon orange liquid stevia
Orange zest

Mix ingredients throughly and add additional milk if needed - it will be a thick batter, but you do want to be able to spread it on griddle (I used the back of my spatula a bit to help it along). Cook on medium heat on a greased griddle, flip and allow other side to cook. Enjoy!

Back up lunch options! I usually bring small portions of dinner leftovers for lunch, but sometimes there isn't much to choose. These are two of my go to backups when I didn't know what to pack - both easy options to keep in my desk with a bowl.
Today I'm going with the bone broth as I'm not feeling very hungry and I may have gone a touch overboard with the cheating while watching my Eagles win the NFC championship! This bone broth helps me get back on track while satisfying my taste buds!

New product testing!!

Tried 2 new products today - best commercially made keto bread that I've tried (not appropriate for those using keto for inflammation as it does contain wheat) and a seasoning mix for portobello mushroom burgers (AMAZING!!)

Urban Accents Harissa Mix
6 Tbsp olive oil
4 Portobello caps
1 red pepper cut in large flats (next time I would slice after grilling slightly, then cook until soft)
1 sliced avocado
Several slices of cabbage
1 small fresh mozzarella ball, sliced (2 servings)
4 keto sandwich thins (could replace with choice of keto bread, keto wrap or even quick steamed cabbage - just adjust macros accordingly)

Mix olive oil with seasoning mix.Clean mushroom caps and brush both sides of red pepper and caps with sauce. Grill (I used a grill cast iron pan on medium heat on the burner) caps and pepper slices for 5 minutes per side until soft. Pile choice of bread or wrap with cheese, mushroom caps, pepper slices, avocado and cabbage. Enjoy!!

Alternatives: In addition to using lettuce wraps to cut carbs, I intend on trying this in the future as a cabbage roll. I also could see dicing and stir frying cabbage and then mixing in the rest of the rest of the ingredients diced as a topping.

I've got a keeper for you!!

Friday night was often pizza night in this house and my little still occasionally asks for it which, for me, usually means the frustration of the sticky fat head dough. So this week I decided to try a chicken crust and it was AWESOME!! The crunchy crust is the closest to a crunchy pizza I've gotten so far - next time I'll experiment with finishing in the airfryer and report back.

CHICKEN CRUST PIZZA
1 10 oz can of chicken
1/2 c parmesan cheese (save the fresh grated for the toppings, use the Kraft kind here)
1 egg
Seasonings of choice

Preheat oven to 350°. Drain chicken, eliminating as much liquid as possible. Line a pan with silicone mat (or parchment) and spread out chicken- cook for 8 -10 minute to eliminate most of the moisture (I turned mine about halfway and cooked until it appeared roasted). While that's cooking, beat egg and add cheese in a mixing bowl. Mix in seasonings - I added Crazy Jane's Chunky Garlic and Italian Street Fair. When chicken is done, add to mixture and stir. Turn up oven to 500°, spread mixture thin on pan.
TIP: I put a little parchment paper on top and pressed down with a spatula.
Cook for about 10 minutes. Then turn over and add desired toppings. Cook 5-10 minutes longer, depending on your topping choice and volume. Enjoy!

15g fat

I went to a potluck style Christmas party (apps and desserts) last night and someone had signed up for my typical Buffalo dip before I got to the list. As I looked over the list I realized I should really bring a sweet but I might as well make it keto and gluten free to help keep me on track! Played with the recipe last week and this gem was discovered! Enjoy!

Easy Chocolate Peppermint Cake (I did mini cupcakes)

Mix a box of Swerve Vanilla Cake Mix (might be even better with chocolate, but this is what I had) with required ingredients on box (oil, eggs, water). Add drops of peppermint extract to taste, I added about a tsp. Add 1/4 c of keto chocolate syrup and 1/2 c of keto chocolate chips (my preferred brands posted below). Bake according to package directions and the size that you make.

One word of caution: if making cupcakes, these rose more than I expected. I made 24 mini cupcakes, but it would have made 36 much prettier ones rather than exploding over the top! 🤣

Is anyone interested in a Pre New Year's Resolution? The average American puts on 6 pounds over the holidays! I often try to make it my goal to lose 5 pounds during the month of December - that way if I don't succeed, at least I have a chance at beating the extra 6 pounds! If I have interest, I'll post at least 5 healthy recipes each week and we can make each other our accountability partners and share our little successes to keep on track. Happy Thanksgiving!!
I don't know who needs to hear this, but as this is a holiday centered around food, abundance and indulgence, give yourself grace. If you stick with your personal food goals, great! If not, enjoy it! As we are making homemade ravioli for our dinner, I'm giving myself grace and making a concerted effort to make at least one healthy choice today.
Some suggestions:
Smaller portions, share a dessert, fill a larger portion of your plate with vegetables, skip the seconds, or even just get outside for a walk with a friend or family member after cleanup is through.

Salmon sushi in a bowl!
Smoked salmon, cream cheese, a couple of drops of liquid aminos, toasted sesame seeds and topped with a drizzle of Sriracha (would also be good with Sriracha mayo to tame heat). Next time I would add chopped cucumber (I was out) and possibly miracle rice and avocado. Great quick lunch and scratch that sushi craving!

David made the BEST keto chicken strips tonight!
He basically followed this recipe, but mixed the pre-made Nashville Hot seasoning in with the pork rinds and the Buttery Steakhouse seasoning in with the almond flour which helped speed up the prep. I chopped mine up over a bed of romaine lettuce, added chopped broccoli, cauliflower, red pepper, tomato, mushroom and a little red onion - finished with a drizzle of ranch and blue cheese crumbles. It was better than any restaurant salad!

OK, alcohol definitely falls under dirty keto, but to be honest, I'm a teacher. I'm not saying my students drive me to drink, but they definitely aren't helping the matter....

These new holiday Trulys certainly aren't helping either. They are beyond yummy!

Recipe for the night!
This is a favorite of mine and took me a bit to pull the trigger and try it keto. I made my own bread crumbs using keto bread heels, replaced my pasta with shirataki noodles and used it as a side with a air fryer cooked chicken thighs!

Tried a new recipe tonight and it was delicious!
Honey garlic pork chops with garlic butter green beans.

Adjustments: I used the honey alternative listed below - 4 net carbs for one Tbsp so I used less than the 1/4 cup listed. I doubled the butter and water and simmered it a little longer until thickened (this helped burn off some more of the carbs in the honey and lessened the sweetness due to the stevia). David said it was sweet, but didn't notice the stevia flavor which is a plus!

Morning veggie hash! Addie had no idea they weren't potatoes!

I prepped my jicama ahead of the trip - I diced and softened it before we left and stored in the fridge (I boiled mine in the pressure cooker - I have found that each jicama takes a different amount of time depending on how fresh). At the camp site I threw it in my cast iron with butter and oil on medium low heat and just kept stirring to soften a little more (mine was still a little crunchy). Then I added a little onion, a diced pablano and a a couple of sausage links. I continued to cook and turned on medium high the last few minutes to brown a bit and seasoned to taste (I used some seasoned salt, pepper and paprika and then topped my serving with a little cayenne as I like heat). Then I topped each serving with an over easy egg. Yummy!!!!
