11/21/23 Leftover Turkey Soup Short Cut
Recipe for leftover turkey soup š¦
You need-
ā¢1-lb shredded left over turkey
ā¢1-qt good box chicken broth
ā¢1-cup water
ā¢3-celery stalks chopped
ā¢2-carrots chopped
ā¢1/2-cup onion chopped
ā¢2-garlic cloves minced
ā¢2-tsp salt
ā¢1/2-tsp black pepper
ā¢2-tbs olive oil
ā¢1/4-pound of egg noodles or a pasta
1-add the oil to a pot get it hot
2-add the onion, garlic sautƩ for 2 minutes
3-add the stock, water, carrots, celery bring to a boil on high heat then cover lower the heat to a very low simmer for 15 minutes
4-add the egg noodles or pasta, cover and when the noodles are done add the shredded Turkey stir and serve
You will think you were cooking this soup for hours itās that good.

11/21/23 BUTTERY PECAN SNOWBALL COOKIES - Desserts
Ingredients
1 cup butter softened
1/2 cup powdered sugar
1/4 teaspoon salt
1 1/2 teaspoons vanilla extract
2 1/4 cups flour
1 cup finely chopped pecans
1 cup powdered sugar for dusting
How to make Buttery Pecan Snowball Cookies
Step 1: Prepare the oven. Preheat it to 350 degrees.
Step 2: Cream the butter and powdered sugar in a stand mixer. Adjust the mixer speed to low, then add in the salt, vanilla, flour, and pecans.
Step 3: Into an inch ball, roll the batter and place the balls a few inches apart from each other on parchment-covered baking sheets. Place in the preheated oven and bake for about 11 minutes, making sure to keep an eye on the cookies to not overbake them.
Step 4: Take the cookies out of the oven when done and let them cool a little. Meanwhile, place a cup of powdered sugar in a large Ziploc bag or a wide bowl. Gently coat about 3 to 4 cookies at a time. Scoop the cookies using a fork, shaking gently to remove any excess powdered sugar. On cooling racks, transfer the cookies and let them cool completely before rolling each again in the powdered sugar.

Here we go again with every TV show, cooking show etc. showing the new way to prepare the Thanksgiving Turkey and then what to do with the leftover! Me Iām old school a simple roasted Turkey slathered in bitter seasoned with salt and pepper and in the oven till done. What to do with the left overs.....me, a repeat of what I had the day before. No CRUNCH, no added dried cranberries or cherries and some over seasoned mustard/mayo concoction a simple open face turkey sandwich with lots of gravy.

11/17/23 Thanksgiving Recipes - My Homemade Cranberry Salad
This recipe has been in my family for decades. I make it every year and it is still a hit! I taught my granddaughter how to make it last year so she can carry on the tradition.
Vickie's Cranberry Salad
The pictures are not of my actual cranberry salad. I used stock pictures because I don't have a picture of mine! Yikes! I'll have to remember to take one when I make mine this year. This salad is loved by one and all. I got it from one of my cousins in South Carolina at least fifty years ago. I have made it every year since and the family still asks for it!
List of ingredients is on the caption for the first picture because FB is so glitchy.
Preparation:
Run cranberries, sugar, and one cup orange juice through a food processor and let marinate in very large, covered bowl overnight in the refrigerator.
Next day pour the remaining cup of orange juice over cranberries, stir, and let stand a few minutes.
Boil water and dissolve the all the Jello (use Jello regular, not the unsweetened) in a separate bowl. Let cool down to a touch before pouring onto cranberry mixture.
Add the rest of ingredients to the cranberries and mix well. Stir the cooled Jello and add to cranberry mixture and mix well.
Pour into desired dish or mold and chill at least 6 hours or until firm.
Makes a lot! Small portions may be frozen. When defrosting drain any excess liquid that may form while defrosting.

Country Ham Stuffing for Turkey
Ingredients:
ā¢ one large bag of unseasoned bread cubes for stuffing (Arnold is a good brand and sold in commercial bread section at Wegmans) (I also saw some nice unseasoned bread cubes at Acme)
ā¢ one pound boneless cooked or uncooked Smithfield or other country ham cut into quarter inch dice. (I use the ham steaks from meat department or better yet from the butcher)
ā¢ one stick unsalted butter (not margarine)
ā¢ two medium onions chopped (not in food processor - need the chunky texture of chopped)
ā¢ four ribs of celery chopped (not in food processor need the chunky texture of chopped)
ā¢ half cup chicken broth or homemade stock (I use canned less sodium broth or Wegmans chicken culinary broth). You can add a little more if seems too dry
ā¢ two and a half teaspoons dried and crumbled sage (or two and a half tablespoons if using fresh minced)
ā¢ one and a half teaspoons dried thyme
ā¢ Salt (only a tiny bit because of saltiness of ham) and Pepper
Preparation:
Pre-heat oven to 325Ā°F. You can also put in oven with turkey for last one and half hours at three hundred and twenty-five degrees
In a large skillet sautƩ the ham in the butter (use all but two tablespoons) over moderately high heat, stirring occasionally, for five to ten minutes, or until it is a deep red and the edges are crisp. Transfer it with a slotted spoon to a large bowl. To the remaining fat in the skillet add the onions, celery, sage, and thyme. Cook until onions are softened and then transfer to the bowl with the ham. Add the bread cubes with salt and pepper and the chicken broth. You can add a little extra broth if it seems too dry. Toss well . Let it cool.
Stuffing may be made one day in advance and kept covered and chilled. I keep in refrigerator in a large zip lock bag or two till ready to use the next day. (To prevent bacterial growth do not stuff the turkey cavities in advance!) When ready to use let stand at room temp for thirty minutes.
For in the bird stuffing - Rinse turkey inside and out with cool water in clean sink and pat dry with paper towels. Salt and pepper lightly inside the cavity and outside the entire bird. Set in Roasting pan that has been sprayed with Pam or other nonstick spray. Loosely fill neck cavity with stuffing and fold neck skin under body and fasten with small skewer. Loosely fill body cavity with some more stuffing and tie drumsticks together with kitchen string.
Stuffing in pan - Lightly grease your baking pan with butter or Pam. Arrange stuffing in baking pan and drizzle over the uncooked stuffing some of the chicken broth. Don't let it get soggy. Dot with remaining two tablespoons of butter. Cover pan with aluminum foil. Bake in oven at three hundred twenty-five drgreesF for one hour covered with foil and thirty minutes uncovered.
Cooks Notes: NEVER stuff turkey until ready to put in oven!!!!! Can cause food poisoning!
If you are cooking without stuffing - the bird will take less time to roast
Ask me for some of my homegrown and dried sage and thyme - it is better!

NEW ENGLAND CORN PUDDING
Eight TBS flour
One tsp salt
Eight TBS sugar
Four TBS sweet, unsalted butter, melted
Three cups whole kernel corn, drained (can use canned, fresh, or one bag frozen)
Four large eggs
One qt whole milk (I use half and half)
Stir flour, salt, sugar and melted butter into corn. Beat the eggs slightly and combine with the milk. Combine the milk and corn mixtures and pour into a nine by thirteen baking dish that has been buttered or sprayed with canola oil. Bake in a four hundred fifty degrees degree oven for forty-five minutes until nicely browned. It is important to drag a long tined fork through the mixture 3three times during baking, breaking the surface as little as possible.
This is very forgivingā¦.you can adjust the temperature and cooking time if you are baking a roast or ham at the same time. You can also serve this piping hot or at room temp ā tastes just as good either way.

11/8/23 Brined Turkey - a fresh turkey is best for this recipe
Brining a turkey is easier than you think thanks to these tips from Sandy and her kitchen crew.
By following these steps, your turkey will be tender, moist, and full of flavor:
Step 1: Check that your turkey isnāt pre-salted or self-basting.
Step 2: Unwrap the turkey and remove giblets/neck.
Step 3: Place the turkey in a large pot.
Step 4: Prepare your brine solution in a separate pot. Heat 1 qt (1L) of water with 1 cup (250 mL) of kosher salt and any veggies, citrus peels, or aromatics you prefer.
Step 5: Next, add 3 qts (3L) of cold water to the brine solution and then pour over turkey.
Step 6: Brine your turkey for 12 to 24 hours in the refrigerator.
Step 7: Rinse the turkey in cool water and pat dry. For crispier skin, allow the turkey to dry in the fridge for an additional 24 hours.
Step 8: Roast the turkey but keep in mind, you will want to temp check earlier than planned because brined turkey cooks quicker.
You can also cook in a Smoker. Really delicious!

11/7/23 How about a nice Veggie Train for the Thanksgiving celebration. So simple to make. Just cut your different color bell peppers in half to make the train cars. Then just fill with veggie sticks of your favorite veggies. Use a thick dressing or cream cheese as the "glue" to hold on your cucumber circle wheels.
