I was working hard today on my next course, Get Stuff Done!, and almost forgot to post our menu for the week.
We're on spring break this week, so that gives me time to work on something besides helping with Algebra and Zoology :-D

Happy rainy Saturday! What are you up to on this first day of spring break? Do you think it's still going to snow like crazy on us or did it wimp out?
I'm working on my next class offering, Get Stuff Done! My goal is to have it done by Wednesday!

I'm sorry I've been MIA for awhile!! I'm still here :-)
December 1st I found out that Premier Designs/DVTD is closing their doors on December 31st, so I've been focusing on that all month. Come the new year, watch out!! I have big plans for new online courses AND some value add for my current ones.

In the meantime, remember that Meal Planning 101 is available for just $20 over at Teachable

I'm in Nashville at the Business Boutique conference and being refreshed in all things business! My favorite scripture that has been shared so far is Romans 15:13.
Christy Wright shared that in the Bible, God never says "Please be more practical and more reasonable." No! He says trust, hope, and have faith!
So as we TRUST God, remember to get your HOPES up!!

Meal Planning 101 14/09/2020

Hey hey! It's definitely time for a menu plan! August kinda kicked my butt...with home school starting and finishing all our summer activities, I'm not really sure what we ate :-D Feels good to be back in the routine of things though, so here's what we're having for dinner this week:
Make Ahead Monday - Kahlen makes this very strange, and delicious, combination when she goes camping with her Girl Scout troop. It involves black beans, chickpeas, scrambled eggs, peas, and corn. I might be missing something. She'll be making that tomorrow while I work on ripping out the carpet in our basement.

Taco Tuesday - Taco Dump Soup

Asian Wednesday - Sweet & Sour Meatballs

Thrifty Thursday - Hashbrown Casserole

Friday - You're on your own

Special Saturday - Cheesy Hamburger Soup

Saucy Sunday - Instant Pot Chicken Parmigiana

As I mentioned, I got to spend a week with my middle kiddo at Boy Scout camp in Wyoming last week. There were some hard things (um, moming 14 boys that aren't yours for a week is not for the faint of heart), but overall we had a blast!

I just made this for dinner last week, and I got a "pretty good" or "this is great" from every single person in my house!

Mashed Potato Pie

3 lbs red or gold potatoes
6 tbsp butter
3/4 cup milk
1 lb ground meat (I use turkey but anything will work)
1 onion, diced
1 tsp season salt
1 1/2 cups frozen peas
1 1/2 cup frozen corn (canned works for either veggie too)
1 cup shredded cheese, any flavor

Cut potatoes into bite size pieces and place in pot of water. Bring to a boil and cook until tender. Add butter and milk and mash. Add salt, pepper, garlic, or any other spices you enjoy.
Meanwhile, brown onion and ground meat until fully cooked. Add season salt and stir well.
Preheat oven to 300 degrees.
In a 9x13 pan, spread half of the mashed potatoes in an even layer. Next, spread ground meat mix, then veggies. Top with the remaining mashed potatoes. Sprinkle cheese over all.
Bake for 20 minutes or until hot and melted.
If you're my husband, add copious amounts of Sriracha :-D

I know, I know....it's Tuesday. Being gone for a week has really thrown my rhythm for a loop! Trying to get back into my usual patterns has been so rough, I've definitely lost track of what day it is a few times :-D
ANYway, for this Menu Plan Monday, I wanted to share my theme days that I'm currently using. This is one super helpful trick that I teach in my Meal Planning 101 class, it makes coming up with meals for the week so much easier!

I wanted to share this simple and delicious recipe that we've been making for years!

PARMESAN RANCH CHICKEN

3/4 c. crushed tortilla chips
(I found these are the best "crumb" but you could also use ritz crackers, corn flakes, breadcrumbs...)
3/4 c. grated Parmesan cheese
1 1oz. package ranch dressing mix (dry)
4-6 boneless, skinless chicken breasts
1/2 c. melted butter

Cut chicken into strips. Melt half the stick of butter in a 9 x 13 pan in the oven. Place chicken in a single layer in the pan. Mix crushed tortilla chips, Parmesan cheese, and ranch dressing mix. Sprinkle over chicken, then drizzle remaining butter over the chicken. Bake, uncovered, @ 375 for 40 minutes.

Serve over brown or white rice with steamed veggies.

Happy Sunday! I'm getting ready to leave for a week at Boy Scout camp with my middle child, what are you doing on this beautiful day?

I was working through my bible study this week, and it was talking about how important it is to be in connection with others, which is so appropriate for our current season. Jennie Allen said "God purposefully places us in community so they can help us in the battle for our thought lives. When our minds are chaotic, our thoughts are spiraling, and our emotions are running the show, so often our escape plan involves simply reaching out, just whispering that little word, "help."

So who can you reach out to today? Maybe you aren't the one who needs help today, but maybe you know a friend who could just use a listening ear.
..and if you need a listening ear, but don't feel like you have anyone else to reach out to, give me a call, ok?

It's Independence Day!!! What are you doing to celebrate? Post a picture below! I went for a 4ish mile hike with my hubby this morning, now we're getting ready to start up the barbecue and have a feast before we head out to try and catch the fireworks.
