Blackened Salmon Tacos with Corn Salsaš
Such an easy recipe and SO delicious!!
Ingredients:
Salmon, skin removed
Shredded cabbage
Avocado
Corn
Black beans
Cilantro
Lime
Corn tortillas
Olive oil
Seasoning for salmon:
Paprika
Chili powder
Garlic powder
Salt/pepper
Remove skin from salmon and cut into bite sized pieces. Drizzle with olive oil and season generously with all listed above. Heat up a few tbsps of olive oil on medium-high heat and cook salmon for about 3-5 minutes per side. When itās finished it will be slightly crispy on the outside!
For the corn salsa:
Simply mix about 1 can of corn, 1 can of black beans, 1-2 diced avocados, chopped cilantro, salt and the juice of one lime!
Heat up your corn tortillas and add the cabbage, blackened salmon and corn salsa and enjoy!!! š®

This salad couldnāt be any easier to make and makes a great side dish!!āļø The key is to buy the marinated mozzarella!
Ingredients:
ā¢Sliced mini cucumbers (about 6)
ā¢Grape tomatoes
ā¢Marinated mozzarella (the whole package including the oil)
ā¢1 can chickpeas (drained & rinsed)
ā¢Diced avocado
ā¢Splash of balsamic vinegar

Your new favorite summer salad/dip!!!š„š„
Ingredients:
1 can of corn (drained)
1 can garbanzo beans (drained and rinsed)
1 cucumber (peeled and diced)
1-2 jalapeƱos (diced)
1 whole avocado (diced)
About 1/3 cup finely chopped cilantro
Juice of 1 lime
Salt (be generous)
*you could also add onion*
Iāve been eating this as a salad for lunch and have also served it with tortilla chips as an app! SOOOO GOOD it also can be prepped for the week, just leave out the avocado until you serve itš

QUINOA STUFFED PEPPERSš¶
Do yourself a favor and SAVE this recipeš¤¤
Ingredients:
Cooked quinoa
Black beans
Whole Bell pepper
Diced onion
Spinach
Cilantro
Cheese (I used cheddar)
Salsa or enchilada sauce
Salt
Avocado
How to:
-Slice your bell pep in half and place it on a greased pan or parchment paper. Spray both sides with oil and sprinkle with salt. Bake at 380 for just about 10 minutes or until it softens a bit
-Heat up a tbsp or so olive oil in a pan and add your diced onion. Let that sautƩ for a few minutes then add in spinach and black beans. Add in your salsa and cooked quinoa and mix through
-Takeout your bell peppers and fill with your quinoa mix and top with cheese
-Place back in the oven for just a few minutes until cheese melts
-Top with more salsa and cilantro and ENJOOOYYYYš¤©

Soup Seasonāļø
A little spin on chicken noodle soup since my mom is a vegetarian.. CHICKPEA NOODLE SOUPš¤©
The best thing about this recipe is that itās super hard to mess up! Really just add all ingredients to your liking.
Ingredients:
ā¢broth of your choice
ā¢celery
ā¢carrots
ā¢garbanzo beans (I also used white kidney beans)
ā¢spinach
ā¢can of whole or diced tomatoes
ā¢garlic
ā¢onion
ā¢salt & pepper
ā¢olive oil
ā¢parmesan cheese (optional but adds lots of flavor)
ā¢egg noodles
What to dooooo:
1. Dice up the carrots, celery, onion, and tomatoes if they are whole
2. Heat up a few tbsp olive oil in the pot and add in the onion, minced garlic, celery, and carrots and sautƩ in a bit of salt and pepper until fragrant
3. Add in the broth, beans, tomatoes, and some more salt and pepper and bring to a boil
4. Reduce heat to a simmer and let cook for about 30 minutes until everything softens
5. Add in the spinach and some Parmesan cheese and let it cook for a few more minutes
6. Serve with egg noodles and enjoyš
Blender Pancakesš„
Recipe:
1 banana
1 cup oats
1 egg
1 tsp baking powder
Dash of cinnamon
1 tsp vanilla extract
1 tbsp maple syrup
1/3-2/3 cup milk (for thinning)
Blend all ingredients in a blender and cook on a greased pan and ENJOY! These are the perfect texture and make the best rainy day breakfastš

BLENDER BANANA MUFFINSš
Ingredients:
ā¢2 cups oats
ā¢2 tsps baking powder
ā¢about 6 super ripe bananas
ā¢cinnamon (to your liking)
ā¢1 tsp vanilla extract
ā¢chocolate chips, walnuts, or whatever ingredients you want to add
Add oats, bananas, baking powder, cinnamon, and vanilla extract to blender and blend until smooth. Add to cupcake liners and top with whatever ingredients you please. Bake at 355 for about 10-15 minutes or so. You will know they are ready when they turn slightly golden.
This made about 8 muffins for me!
Top with peanut butter or some honey and enjoyš

Roasted Veggie Pastaš
Ingredients:
ā¢Pasta of choice (I used chickpea pasta)
ā¢Chicken sausage
ā¢Veggies of choice (I used bell pep, zucchini, and mushrooms)
ā¢Cherry tomatoes
ā¢Salt and pep
ā¢Olive oil
ā¢Chopped basil (for added flavor)
ā¢Pesto (I used Trader Joeās vegan pesto but I do have a recipe on my page for one)
ā¢Garlic powder
Chop your veggies and lay them on a sheet pan. Spray with oil and season with salt and pep. Bake at 350 for about 15-20 minutes or until they soften a bit. Once these are finished, at them to a pan with a tbsp or so of olive oil and the sliced chicken sausage. Add in some cherry tomatoes and season with salt, pep, and garlic powder. Once everything begins to cook through add in cooked pasta and a bit more olive oil. Stir and add in some chopped basil as well as the pesto. Cook until heated through and enjoyš
I needed to use up veggie kabobs that I had in the fridge so thatās what I used for this dish. Iāve been super busy this week so I prepped this pasta to eat after work when I donāt feel like cooking!

The perfect summer saladš
Chicken and Avocado Capreseš

Ingredients:
ā¢Arugula
ā¢Fresh mozzarella
ā¢Tomatoes (I used cherry)
ā¢Diced avocado
ā¢Chicken tenders (or breast)
ā¢Olive oil
ā¢Balsamic glaze
ā¢Salt
ā¢Pepper
ā¢Lemon (for the chicken)
ā¢Garlic powder (for the chicken)
Grilled chicken:
I prefer using chicken tenders because I think they are easier to prep but you could also use chicken breast! Marinate the chicken in olive oil, salt, pepper, garlic powder, and fresh squeezed lemon. Adding citrus to your marinade makes it so much tastier! You will want the grill super hot so that you get the grill marks on the chicken. Once the grill is ready, cook the chicken tenders for a few minutes each side.
To assemble:
Slice the mozzarella and tomatoes and then layer them on top of the bed of arugula. Top with diced avocado and grilled chicken. Season with salt and pepper and then drizzle the olive oil and balsamic glaze.

This is my absolute favorite salmon bowl thatās SO easy to make!
For the salmon:
ā¢Preheat oven to 425
ā¢Rinse and Pat dry then lay on either parchment paper or a greased pan
ā¢Season with salt, pepper, garlic powder, paprika, & a dash of chili powder. I also sprinkled some adobo seasoning on top
ā¢Drizzle olive oil and rub the seasonings around
ā¢Bake for about 15-20 minutes. You can check to see if it is ready by flaking it with a fork
To assemble:
I make my bowl with brown rice medley (from Trader Joeās), mixed greens, avocado, cilantro, and TJās spicy peanut vinaigrette. I also squeeze some lime on top for extra flavor.

TJās Fish Tacosš®
Everything I used today to make these is from Trader Joeās but you can get it all anywhereš
Ingredients:
Cod filet
Black beans
Shredded cabbage & carrots
Cilantro
Lime
Salt
Garlic powder
TJās chili lime seasoning
Olive oil
Tzatziki sauce
1. Drizzle olive oil on filet and season with salt, garlic powder, & TJās chili lime seasoning (generous amount)
2. Bake at 350 for about 14-17 minutes (or until flaky)
3. Heat up tortillas and top with cooked fish, black beans, cabbage, cilantro, tzatziki, & a squeeze of lime

Apple Pie Mug Cakeš„§
SautƩed apples:
Dice up an apple and sautƩ it in a little bit of coconut oil, cinnamon, and maple syrup. Cook until soft and golden.
For the cake:
ā¢1 1/2 tbsps coconut flour
ā¢1/2 tsp cinnamon
ā¢1 tbsp coconut sugar
ā¢1/2 tsp baking powder
ā¢1/2 tsp vanilla extract
ā¢1 tbsp dairy-free milk
ā¢1 egg
ā¢1 tbsp melted coconut oil
Mix all these ingredients together and place the sautƩed apples on top. Pop in the microwave for about 2 minutes! Top with some vanilla ice cream and almond butter and ENJOY!
Now GO make yourself a mug cake!!! You deserve itā¤ļø
Tortilla-Crusted Chicken Fingersš
Ingredients:
ā¢1/2 bag fuego tortilla chips & 1/2 bag salted tortilla chips
ā¢1 lb chicken tenderloins
ā¢3 eggs
ā¢1 cup oat flour
ā¢paprika
ā¢garlic powder
ā¢onion powder
ā¢salt
1. Preheat oven to 370.
2. Set up 3 bowls. In the first bowl place 1 cup oat flour, 2 tsps paprika, 2 tsps garlic powder, 2 tsps onion powder, and a generous amount of salt. In the second bowl, whisk together 3 eggs. In the third bowl, mix the crushed tortilla chips with 1/4 tsp paprika, 1/4 tsp onion powder, and 1/4 tsp garlic powder.
3. Take a chicken strip and coat in the flour mixture, then egg, then the tortilla mixture. Place the coated strip on a lightly greased pan. Repeat with all the chicken strips.
4. Bake for 25-30 minutes.
These were SO delicious Iām obsessed!!! Definitely try them outā¤ļø xx
Oatmeal chocolate chip cookiesšŖ
Ingredients:
ā¢1 egg
ā¢1/2 cup coconut sugar
ā¢1/4 cup melted coconut oil
ā¢2/3 cup oat flour
ā¢1 tsp vanilla extract
ā¢1/2 cup fine coconut shreds (make sure they are small)
ā¢1/2 cup rolled oats
ā¢1/2 tsp baking soda
ā¢about 1/2 cup choc chips (I used dark choc chips)
ā¢1/4 tsp salt
ā¢1 tbsp non-dairy milk
1. Preheat oven to 350 and line a baking sheet with parchment paper.
2. In a bowl mix together the egg, coconut oil, coconut sugar, and vanilla.
3. Add the rest of the ingredients and mix until combined.
4. Using a cookie scoop or your hands, place dough on parchment paper. You do not need to flatten the dough out. This made about 10 cookies for me.
5. Bake for about 10-12 minutes or until golden. Take cookies out of oven and let sit for about 10 minutes before eating. ENJOY!!!!!

Pumpkin Ice Creamšš¦
Ingredients:
ā¢1 can coconut milk
ā¢1/2 tsp vanilla
ā¢1/3 cup honey
ā¢2 tbsps cashew butter
ā¢1 tsp pumpkin pie spice
ā¢1/2 cup pumpkin purĆ©e
Blend everything together in a processor and then pour the mix into ice cube trays. Pop the trays into the freezer and let freeze. Once itās ready, put it back into a processor and blend until smooth. You may need to add a tiny bit of liquid (I added a little coconut milk). Top with some coconut whip and more pumpkin pie spiceš

White chicken chili with salsa verdeš¤©
Ingredients:
ā¢avocado oil
ā¢2 pounds skinless, boneless chicken thighs (cut into smaller pieces)
ā¢2 jalapeƱos, seeds removed, diced
ā¢1 small white onion, diced
ā¢just about 2 tsps minced garlic
ā¢2 tsps cumin
ā¢1 tsp smoked paprika
ā¢1/4 tsp garlic powder
ā¢1/4 tsp black pepper
ā¢1/4 tsp onion powder
ā¢salt for taste
ā¢2 4-ounce cans of chopped green chiles
ā¢1 cup of jarred salsa verde
ā¢2 cans of white beans
ā¢1/2 can garbanzo beans (optional)
ā¢4-5 cups chicken broth
ā¢juice of 1 lime
1. Heat up avocado oil in pot on medium to high heat and cook the chicken pieces until browned (about 10-15 minutes). Then add in the JalapeƱos and chopped onion and cook until the onion softens.
2. Add in the minced garlic and all the seasonings and stir until fragrant (about 8 minutes). Reduce the heat and add in the salsa verde, beans, and green chiles. Stir for about 10 minutes.
3. Turn the heat back up and add in the chicken broth and the lime juice. I also add a little water (about 1 cup) to thin it out. Cook for about 1 hour or so, until the chili thickens. Stirring occasionally.
4. We topped ours with avocado, cilantro, and a little sour cream.

I got Invisalign this past week and my teeth have been killing me so all Iāve really been eating is soup! This recipe was a HUGE hit, definitely try it outā¤ļø
Cozy vegetable soupš„š„£
Ingredients:
ā¢carrots (I used about 6)
ā¢about 1 stalk of celery
ā¢about 2 small zucchini
ā¢can of garbanzo beans, red kidney beans, and cannellini beans
ā¢about 1 small white onion
ā¢a couple handfuls of kale
ā¢a couple handfuls of spinach
ā¢1 can diced tomatoes
ā¢broth of choice
ā¢olive oil
ā¢salt and pep
ā¢about 3 cloves minced garlic
ā¢grated Parmesan
1. Heat up olive oil in the pot and add in the chopped carrots, celery, onion, and garlic. Season with salt and pepper and sautƩ for about 15 minutes on medium heat.
2. Add in the broth, beans, can of diced tomatoes, and water. I do equal parts water and broth because I prefer the taste. Add in some more salt and pepper and let cook for about 45 minutes. Add salt and pep as needed.
3. Add in some Parmesan (2 tbsps or so) and your greens and let cook for about 10 minutes. Adding Parmesan is optional but I think it brings so much more flavor to the soup.
4. Enjoy with your fav dipping bread or noodlesš
