I love coffee. Many people don’t know this, but Knox County Brewing Co. was supposed to be a coffee roasting company. I like beer. I love coffee. My coffee story travels through all three waves, and lands us with our own little third wave coffee company, Ordinary Coffee Co.

As mentioned in a previous post, first wave coffee reminds me of my grandfather. Really my early childhood. My grandfather, Aunt Joy, and mom were all fans of first wave coffee, but they didn’t consume it for the burst of energy, rather, they enjoyed it much like second and third wave coffee connoisseurs enjoy their coffee.

For them, at least in my memory, coffee was always connected with beautiful moments of silence or deep conversations within family and community. This was my introduction into coffee. Waking up early, stumbling out of my bed, down the hall, and into my living room in small-town Oklahoma to see my grandfather, aunt, and mom gathered around our dinning room table either reading or deep in conversation with hot cups of coffee in front of them. It seemed to me a necessary element for good conversation and deep thought. I wanted to like it. I wanted to love it.

So, one summer, I was probably fifteen or sixteen, my cousin Melissa and I, who spent many summer nights watching rented movies, on VHS of course, until sunrise, decided that coffee would be the perfect aid to assist us in late night conversations and movie watching. We didn’t know how to drink it, or I didn’t. At this point, I didn’t really enjoy the flavor of coffee, I enjoyed all that it entailed. At a young age, coffee already held a mythical spot in my imagination. Our method was to make it very dark, and drown it in sugary Irish cream creamer. This was my gateway, and had this horrible tasting coffee not been coupled with the wonderful and meaningful time with my cousin, I’m not sure I would have made it to the second wave.

Fast forward four or five years - yep, I had been living on first wave-style coffee (60% dark Folgers 40% creamer) that whole time - and someone walked me into a coffee shop in down town Dallas called Cafe Brazil (Deep Ellum). Ironically, the same cousin who was part of my first wave introduction, has Cafe Brazil as part of her second wave coffee experience. I have to be honest, I remember liking the coffee at Cafe Brazil better than first wave, but what stands out to me most was the community and friends and late night homework that took place here. The first time I remember loving a coffee drink was…wait for it…as if it weren’t cliche enough… Starbucks. I was hooked. I went two ways - I was a sucker for their Caramel Macchiato and their Yukon coffee blend (ratio - 90-95% coffee + 10-5% cream). Then when Sarah and I started dating and got married, we added an iced raspberry coffee breve to our end of date routine - talk about drinking a whole day of calories in a single serving. We love it, and we loved it together. I still remember one of our early marriage conversation that swirled around our monthly coffee budget, if memory serves me correctly, we could have taken on a nice new car payment for that amount. Things needed to change. That said, except for the occasional breve, my life was pretty much defined by whatever the dark roast was (always anticipating the Starbucks Christmas blend) with a splash of cream or the Caramel Macchiato. Then about three to five years into this second wave season of my life, a friend and I were introduced to the Americano. The americano allowed me to taste the actual coffee, drop the calories added by creamer, and cut out coffee budget by 50-75%. The americano hooked me, and this pretty much defined my coffee life for the following ten years, till, well, I started having anxiety issues, and my doctor advised me to get off of any sort of stimulant and depressant. I went off alcohol and coffee cold turkey for three months. The doctor wanted my body to self regulate. The result was fantastic.

Three months had past and we had moved to downtown Austin. All of my meetings, were being held at local coffee shops. Third wave coffee shops. But I wasn’t drinking coffee. I reasoned with myself, I won’t add cream for calorie purposes, and I would order a single cup of third wave coffee, black. My assumption was, I wouldn’t like it that much. I was wrong. Really, really wrong. I still remember it. It was Cenoté Coffee in East Austin, just a couple blocks from our house. Unlike my first and second wave coffee introduction, the coffee was so delicious, that I remember it, but I have no clue who that meeting was with. Sorry. I couldn’t believe this was coffee. Coffee so good, cream and sugar ruined it. It was beautiful. It wasn’t just addictive, it was contagious. But I made a rule for myself, that till this day I still keep - two cups in the morning, no more. During my first and second wave coffee days, I would drink coffee late until the afternoon, sometimes evening. I did not want to allow myself to become so dependent on this stuff that I had to give it up again. Fast forward to 2015, a small coffee shop/roaster in Austin, was one of the sponsors for our 2.5 month road trip. Y’all, there may be nothing better than waking up early on a mountain cliff that overlooks the Pacific, hand grinding your coffee after crawling out of your tent and brewing a fresh hot French press with the best coffee in the world. The sound. Smell. Flavor. It was an experience. Sarah and I have tried to recreate that (minus the mountains and ocean) every single morning since then. It’s like the first service of love one of us does for the other every morning- whoever gets up first, takes the time, to prepare everything as perfect as possible, so that the other has a beautiful cup of coffee waiting for them when they walk out of the room.

When we moved to Knox County later that same summer, we couldn’t find third wave coffee any where near us. So we decided we should try and roast it ourselves. For father’s day Sarah purchased a small home roaster that was not much more than a fancy popcorn air popper. A couple years later we upgraded to a small drum home roaster. While a little inconsistent, ii was so much better than anything we could purchase locally. Then during COVID, we thought, let’s get a micro commercial roaster and create Ordinary Coffee.
