Vital Root 😋
What a delicious experience! The restaurant itself was so beautiful and the food is nothing I’ve had before!
Vital Root is 100% gluten free! I got their banh mi tacos with yuca fries! We also got their hummus & fried artichoke which was TO DIE FOR😍
I will definitely be back!!
Rocky Mountains, Chautauqua, Eldorado, and my favorite… Smash burger to end it all 😋
ELT on quinoa 😋
On my road trip to Denver, we stopped in Omaha, NE at this delicious farm-to-table restaurant!
They make everything fresh, and while they don’t have gluten free bread they do give you the option to turn any sandwich into a salad or quinoa bowl!
I got the ELT aka eggplant, tomato, and lettuce bowl with a side of popcorn

Now that the fridge is cleaned out, and my car is packed… the next month I’m eager to share all my good gluten-free eats in Denver, CO 😋😋
Chicken burrito bowl 😋
The most tedious thing about bowls is chopping it all up, but it’s the most filling so can’t complain too much! (Especially when you prep it all)
What’s in my bowl?
- chicken (cumin, cayenne, chili, garlic)
- cilantro lime rice
- black beans
- red onion
- cherry tomatoes
- corn (Trader Joe’s elote seasoning)
- avocado
- chimichurri sauce

- Basmati rice with olive oil & parsley

One of my favorite refreshing & filling dishes! If you can find BPFree pita, GET IT and bake them in the oven with some olive oil, garlic salt & parsley - it makes the perfect side to the bowl 😋
5-minute Ramen 😋
One of my favorite (and easiest) lunches are a ramen bowl! I get my gluten free ramen noodles from lotus foods. Thankfully, you can find those noodles ANYWHERE! Costco, Meijer, Sprouts, and even off 😋
What’s in my bowl?
- lotus foods red miso noodles
- chicken broth
- garlic and chili peppers
- Sesame oil
- Onions
- Edamame
- Egg
- Sprouts
While the noodles boil, I heat up the sesame oil & add in my garlic, chili peppers and onions. Once the noodles are down I combine it all with the chicken broth, edamame, egg and sprouts!
Topped with some furikake & lunch is served 🍜
Gluten-free goat cheese & mushroom pizza 😋
Gluten free pizza crust usually has a similar resemblance to cardboard but New Holland Brewing company changed that for me 😍
They have some of the best gluten free pizza hands down! The crust is so fluffy & crispy and they never miss with their toppings!
If you are ever in Holland or Grand Rapids, this is a must stop!
& they do have vegan options!

Lobster mushroom hash 😋
Took a stroll through the farmers market and came across a mushroom booth that had lobster mushrooms - so of course my curiosity got the best of me and I had to try!
Lobster mushrooms is a type of fungi that grows on certain species of mushrooms so they cannot be farmed, only foraged! Most of the flavor is right on the outside of this mushroom so it’s best to be cooked into your food like pasta sauces, soups, and eggs!
And yes that flavor is very similar to a lobster! 🦞
I made our hash with white sweet potatoes, onions, shallots, eggs and topped with some homegrown sprouts & avocado 😋
So happy to switch up my breakfast with some delicious mushrooms 🍄
Bison Burgers 😋
My first time trying a bison burger and WOW!!

- trader joe’s gf hamburger buns
- ground bison meat
- pepperjack cheese
- egg
- micro greens
- tomato
- red onion
- Dijon mustard
For my sides I made fries and Brussels sprouts!
