Overnight Blueberries & Lemon Breakfast Oats
Was inspired to make overnight oats last night when looking up quick recipes for my niece who is starting her freshman year of college.
In a 16oz mason jar I added
* 1/2cup GF oats
* 1/2cup wild frozen blueberries
* 3/4 cup almond milk
* 1tsp vanilla extract
* 1 tsp cinnamon powder
* 2 drops lemon EO
* 1/2 scoop of protein powder
* 2 tsp chia seeds
* 1tbs of sliced almonds
Gave it a whirl and placed it in the fridge overnight. This morning I placed the overnight oats into a bowl (can also be eaten right out of the jar), topped it off with fresh blueberries and a strawberry, 1tsp almond butter, and lightly drizzled about a 1tbs of pure maple syrup for a little added sweetness.
Great source of fiber, protein, antioxidants and fuel to start your morning right.
Quick Dinner ~ đ„ I absolutely love salads especially during the summer. I love making different types of mixed green salads because itâs quick and easy to put together. Itâs also a good source of vitamin A & C among other nutrients, water and fiber. I tossed together some mixed greens with grilled chicken and added some left over rice, blueberries and edamame... topped with an aged balsamic vinegar (my favorite) and extra virgin olive oil. It was so so good! Salad was a nice balance of proteins, carbs and healthy fats ... and was rich in antioxidants and beneficial nutrients. đ
Teamwork: this morning my husband helped me make breakfast. I wanted to try out a keto & co pancake mix I bought.... Iâm not on a keto diet but wanted to try a pancake mix with less net carbs & sugar because I care for my dad who is a diabetic and like to give him fun things to eat without it affecting his glucose levels. This brand has 9g carbs verses the 33g in another GF pancake mix I have. Itâs made with coconut flour and only has 1g sugar per serving. I added a protein power to the mix, vanilla extract, cinnamon, almond milk and baked it for 20 minutes in a waffle tray. Hubby made the eggs and I had it with real maple syrup from upstate and a side of blueberries. Delish!!!

Roasted Butternut Squash stuffed with ground turkey
Took my leftovers from yesterday and had a little fun with it. I sautĂ©ed some more onions and garlic and added some kale to the last nightâs zucchini noodle mix. I cooked up some ground turkey and roasted a butternut squash and just put it all together. I experimented with half of one of the butternut squashes and very light drizzled some aged balsamic vinegar over it and it was fantastic!!!
Having fun in the kitchen takes away the pressure of feeling like itâs a job. I know that feeling and itâs not fun. When you feel something is more of a task, it robs the joy out of what can be a fun cooking experience. Get creative and start having some fun in the kitchen again. đ
Breakfast wrap with fresh greens on a chickpea wrap and Katehills non-dairy cream cheese with a side of mixed berries infused with grapefruit EO. đ
Breakfast is one of my favorite meals to eat and to make. Thereâs also nothing like having your first cup of coffee in the morning. âïž

Whatâs in your water? I absolutely love drinking water but truthfully I donât drink enough when Iâm not intentional about it. Drinking water daily is so important especially on a hot day like today and is one way to improve your health. Did you know that water helps regulate your body temperature, helps carry nutrients and oxygen to the cells, helps to manage a healthy weight and so much more. Well, itâs true!!! Enjoy your water and stay hydrated. If you have trouble drinking water, try adding some fruit to your water. I love to add lemon and ginger essential oils in addition to fruit for its cleansing and digestive benefits as well as to support a healthy metabolism. đŠ đ§
My new favorite smoothie blend. Only 190 calories per pouch. Itâs high in vitamins and minerals and a great source of antioxidants. It has 10g of fiber, which helps you feel satisfied longer and 6g of protein. Great to have as a snack or meal replacement. As a snack, just toss it in the blender and add water or your milk of preference.
