Gaeng Jao Dtao

A sour curry of local fresh water catfish known as Keli , finger roots and lemon basil.

By the way, a catfish contains a typically ranges between 180 to 200 bones. This includes the vertebrae, ribs, and various smaller bones in their fins and other structures. However, exact numbers can vary depending on the specific species and individual differences.

Long story short, catfish comes with bones.

Khai Khem Phlaa

A local citruses (home grown Kaffir lime, local lemon and lime) infused Pantai Remis salted egg relish. Served with fresh local ulam-ulaman, whatever the fresh market offers every morning.

Khanom mo geng tua
A Song Khun version of classic Portuguese influenced Thai dessert. Shallot oil baked mung bean custard, served with warm smoked coconut mousse and top with crunchy fried shallot.

Saa pak gad noi - Young choy sum salad

Pak Gad (Choy sum) is widely farmed in the northern part of Thailand. Sometimes when the pak gad is over sprouting and farmers do not want it to be wasted, there where this dish derived!

Thanks to for sharing this amazing recipe by Lady Thanpuying Mahidhorn we are pleased to be able to share this recipe for the upcoming Christmas!

G*i Nueng - Roasted whole boneless stuffed chicken.
Stuffing :Lotus seeds , shiitake mushroom , minced pork , fxking time. Served with Duck fat kulim cauliflower steaks and lychee salad.

This recipe was originally Ped Nueng known as Steamed duck with minced pork stuffing by . And the most challenging part for this recipe is debone process for the whole chicken without breaking the skin and flesh. Yes it is very labor intensive thus very limited portions are available!

Nuea Aroy / Tasty Beef

Inspired by Princess Khruamatwimon Thongtaem

Slow braised beef in thick coconut milk served with several different kind of herbs such mint , basil and grachai (Fingerroot 3rd photo)

As the clay color of the curry and herbs it represents the landscape of a forest through the eyes of the princess . And of course this is not the only version of the dishes as we speak as many generations of passing down the recipe .
