A few sublime minutes of near-silent tenderness. It's like a cinematic meditation.
From the movie Big Night, with Stanley Tucci.
The telltale sign of a good night.

Imported from Gunma in Japan, A5 wagyu beef is one of the most luxurious cuts of steak in the world. Eating it isn't just tasty — it's a bucket-list experience. Cut from the 11th rib, with impeccable 'sashi' marbling that reflects the incredible care the cows receive as they're reared — the urban legend goes that they receive daily massages, and to be honest this isn't a million miles from the truth of their pampered existence drinking spring water and grazing on Japanese rice straws.
The quality of the meat speaks for itself, meaning that it's actually deceptively easy to cook. In Makes Miso Hungry's unctuous and moreish yaki udon noodle dish the A5 wagyu's deep flavour really shines through. The perfect low-key treat for a night at home.

L'Enclume's head sommelier Valentin Mouillard has name-dropped Noble Rot Magazine, The Laughing Heart and Les 110 de Taillevent London as his top three restaurant wine lists in an interview with BigHospitality. He also goes into some detail about the thinking behind the wine pairings for Simon Rogan food, which, as with everything else that team touches, is sublime. Read the article below.
Uncorked: Valentin Mouillard The head sommelier at Simon Rogan's flagship L'Enclume on being the grandson of a winemaker in Jura, Austrian natural winemaker Johannes Zillinger and why muscadet needs to be reappraised.
New to the Big Night marketplace: MANAYi, a superior-grade, organic-certified extra-virgin olive oil extracted directly from the trees in one of Cyprus' most virile olive-growing regions — StavroVouni, meaning the Holy Mountain. If our bank holiday weekend snaps aren't giving Martin Parr vibes, we haven't done it right.
Kneading as therapy: a quietly violent and socially acceptable expression of aggression. Plus, you get carbs at the end.

The discussion around the food chain and its impact on the environment is wrought with murky claims, passionate arguments and a whole host of conflicting scientific opinion. The one thing we do know for sure is that regenerative farming helps — both on the veg and the meat side of things. For , we're sharing this take from the Farm Wilder team, and taking notes on where the meat we consume is sourced from and how we decide what to eat and when. "Meat is like electricity. There’s bad meat, like electricity from a coal fired power station; this includes much of the meat available in supermarkets. What few people realise is that there’s also good meat — the equivalent of renewable electricity. Meat that can be reared without adding to climate change, meat that actually helps many of Britain’s rarest wild plants and animals to survive. In the past, it’s been hard to know which you’re buying, which is where Farm Wilder comes in." - Tim Martin, Farm Wilder

This week we've got our nose buried in , the newly-launched cookbook from our good friend Joe Woodhouse. Joe is one of those special people who has a seemingly endless number of strings to his bow: as well as being a lauded chef, who's manned the pans at the likes of Friends of Towpath Café and Quality Chop House, he's a very skilled photographer, father to a beautiful family alongside Olia Hercules, and now also a published cookbook author. Bravo, Joe. He's kindly shared the recipes for these two dishes with us — a pumpkin gnocchi and some flavoursome roasted carrots — which we'll be sharing in our newsletters soon, so be sure to sign-up to our mailing list if you haven't already. You can buy his book via the link below:

"What better way to pass an hour or two than with a little gastronomic chaos?" wrote Jay Rayner in his review of the Elite Bistros meal kit, created by chef Gary Usher as an at-home homage to his celebrated collection of bistros in the northwest of England, namely Sticky Walnut, Burnt Truffle, Hispi, Pinion , KALA Bistro and Wreckfish Bistro. Gary is known for his strong-willed, opinionated nature and extremely high standards, so we're taking his joining the Big Night market as a personal compliment — thanks Gary. The menu options are seasonal, sensational and, if Jay-Ray's account is anything to go by, a riot to recreate at home. Shop 'em now. https://bignight.market/traders/elite-bistros-at-home/f5926814-0d9d-4b65-b864-5d55cb08bd71

Mother's Menus 🍽️ with Yoko, the brains behind . Her career in food all started with her obsession with rice balls — as soon as she could speak, she began shouting for "onigiri, onigiri!", her favourite. She went from being teased at school for her 'weird' packed lunch, to convincing those same classmates that her onigiri were the hottest thing in the canteen — and she learned to make them with her mum. "I'm so lucky that my mum is the planet's best Japanese home cook. Her food is incredible and I've learnt everything from her and my obachan (grandma). I'm excited to share this all with everyone.”
Spring has sprung across Farm Wilder's Dartmoor farms..
P***y willows are one of the first signs of spring on our Dartmoor farms. They are a type of soft furry catkin rather than a flower, affectionately referred to as ‘fluffies’ in the Martin household 😊
In the March sunshine, they are buzzing with the bumblebees and hoverflies that pollinate them. The hairs keep them warm helping pollen development and warming the insects. By flowering so early and offering warmth as well as nectar and pollen, the willows get the bees all to themselves 🐝
Last chance to order your Mother's Day hampers 🎁 We have options starting from £35 by Meringue Girls, as well as our very own curated 'edible time capsule' hamper filled with goodies from the UK's best independents. Mother's Menus 🍽️ whether or not your parents were blessed with culinary prowess, the meals we ate as children at our family tables shape our relationships with food forever. 'Comfort food' is deeply subjective, and often tied to these memories... from fragrant family recipes cooked from-scratch to meals knocked together in a pinch using whatever was available and convenient, alchemy of some kind takes place in every family kitchen. In the run-up to Mother's Day (which falls on Sunday 27th March), we're sharing those memories, menus and of course our own partners' kits for creating new ones around the table this year.

Is eating meat bad for the environment? The short answer is no, provided you're conscientious about its provenance and production. Enter: Farm Wilder, new to the Big Night marketplace, Farm Wilder are an absolute authority on how to do being-a-carnivore right. A social enterprise based in Devon, their meat is produced using regenerative methods that have a positive impact on the planet. All the animals are 100% pasture fed, grazing species-rich meadows and old pastureland worked with regenerative tools like herbal leys and agroforestry. The result is healthy ecosystems both above and below soils which are rich in carbon and water.
