A fun day on the Queen! The RTO boys cleaned up! We caught a whole mess of perch and we had a blast doing it! Get outside!

The Duck confit came out awesome! Duck confit over confit potatoes and duck bacon Brussel sprouts served with a sweet chili plum sauce and topped with duck chicharrones!
Well, today something amazing happened. One the the RTO brothers was able to harvest another beautiful deer! Many great meals to honor this animal to come! Zachery Suflita got it done today! Congrats!
The late day hunt did not disappoint!
The morning was still and quiet. The rains came and the winds blew, but that wasn’t enough to keep us away. It’s views like this, of the early morning light that make us love this way of life. Walking away with a limit of geese helps as well!

Seared mallard duck breast over a sweet potato purée and haricot vert, served with a red wine and cranberry reduction!
Let’s talk turkey! It’s been said by many that the return of the wild turkey is the greatest conservation effort ever achieved. The decline of the wild turkey had a similar story to most animals in decline, over hunting and loss of habitat. In fact, the wild turkey almost didn’t make it out of the 19th century. Thankfully, due to conservation efforts and the invention of a crazy cannon that fired a net, we were able to trap and relocate the birds to areas with less birds. Thus allowing the turkeys to repopulate. There are almost seven million turkeys walking, and flying around today… yes, they can fly!
Mushroom Monday! Cantharellus cibarius, the mighty chanterelle mushroom! chanterelle, Highly prized, fragrant, edible mushroom (Cantharellus cibarius) in the order Cantharellales (phylum Basidiomycota). It is bright yellow in colour and is found growing on forest floors in summer and autumn
Wild game family dinner! Venison osso bucco ala Milanese, venison demi glace ,and a fresh herb gremolata. Saffron risotto with mallard duck broth (first duck ever harvested). Green beans courtesy of the green bean queen

I believe the camaraderie of duck hunting is the biggest draw to the activity for our team! Don’t get me wrong, It’s great being out in the woods and having experiences with the outdoors alone! However, there is something about the process of waterfowling with friends that is extremely addictive.
There is nothing like some early morning wing shooting! I got this double on Thanksgiving morning. We had been out since first light and a few groups had given our spread some decent looks and even turned around a few times to check us out. It wasn’t until around 8am that this pair gave me a decent shot right over our decoys! I’m very thankful that they did! Follow as we start documenting our journey through the outdoors.
