Did some smoking on Sunday for Father Day and some fishing on Saturday with my Dad. Time well spent both days. Baby back ribs and chicken halves on the Pitboss. Tonya made cheesy potatoes and strawberry shortcake with homemade whipped cream. I could have made myself sick eating all that good food.
Made a triple batch of Meat Church jalapeno cheddar smoked sausages. Having the right tools for the job makes such a difference in how long things take to get done.

Well I was a little rusty and I burst a casing twice while stuffing and once linking them but honestly not bad for not having done it in awhile. Sheep casings always give me fits. The first 5 lbs of maple blueberry breakfast links are ready to go. Dry them overnight in the fridge, separate the links and freeze them for later.
Been awhile, been too busy to cook good food unfortunately. Took some time to do up a pork loin and tried a new bacon mac and cheese recipe that was killer. Made for good dinner with friends tonight. I’ll link the mac recipe in the commets.
We lost my grandmother last week. 92 years young, we knew it was coming but it’s never easy. I am happy to now have her Better Homes and Gardens cookbook to go with my own. Some of her notes I’ve found are hilarious. The cookie making section of this book is flat wore out with many changes to recipes. This doesn’t surprise me as my cousin and I both made mention of her cookie baking prowess in our eulogies. She is and will always be missed but I’m happy to have this part of her to keep with me forever.
Fox squirrel pasole for dinner this evening. Garnished with some fresh sliced jalapeños, onion and cotija cheese.
First shot at the slow cooker pasole from the cookbook. Had a bunch of fox squirrels so I subbed that for the turkey. Also be sure to read the can description before you do an online grocery order. Anybody got more ideas for a ton of canned white hominy?
Making a couple different kinds of chili for tomorrow. One for the Midwest white folk and one for the more adventurous amongst us. 😂

Leftovers for the win! Sometimes I come up with some good ideas. Cheddar bread from , leftover pomegranate jalapeno ham, recipe courtesy of , sharp cheddar cheese and some cowboy candy. Grilled it up in a cast iron pan. So good.
Foods ready! Secret to the best maple glaze for your ham? Local maple syrup, especially when your kid and her crew made it.
Turkey cleaned up, spatchcocked and in the brine for Fahrni family Christmas tomorrow. Made up some smoked turkey rub to season her up before dropping on the smoker in the morning.
Basic brine:
One gallon of distilled water
1 cup brown sugar
1 cup kosher salt
You might need two gallons to cover a turkey
Tonight I subbed half the sugar and a .5 gallon of water for .5 gallon of apple juice. See how this goes. 😂
Smoked turkey rub courtesy of HeyGrillHey:
3 tablespoons brown sugar
2 tablespoons smoked paprika
2 tablespoons kosher salt
1 tablespoon black pepper
1 tablespoon garlic powder
1 tablespoon onion powder
1 teaspoon crushed rosemary
1 teaspoon thyme
1/2 teaspoon rubbed sage
1/2 teaspoon celery salt
1/4 teaspoon cayenne pepper
I doubled the recipe because I’m going to either soften some butter and mix some rub in to spread under the skin or melt some butter to make ghee, add it to that and inject it.

New grinder is a beast! 1.5 hp #32 from MEAT! 16lbs of pork first grind in 2 minutes, second grind after mixing in our spices for breakfast sausage 5 minutes. Crazy fast!

I, for one, do not prescribe to the notion of fasting before the Thanksgiving meal. Been craving biscuits and sausage gravy. One day I’ll sit down and learn how to make homemade biscuits. 😂
Brussel sprouts, love em or hate them? This balsamic sprout recipe has converted some haters and is really liked by people who already enjoy them. Plus it’s super simple for the holiday when your oven and stove are already tied up with other things. I’ll stick the recipe in the comments. Happy Thanksgiving everyone.
Been awhile since I’ve made these “healthy” no bakes. I feel healthy is a relative term when making no bakes but these are definitely better than more traditional recipes. When you have a house full of women you have to have sweets available on a fairly regular basis. 😉 I will link the original recipe in the comments. With the holiday season coming up there’ll be lots of occasions to make better choices for your health. Maybe this will help out someone with a sweet tooth. I do often use maple syrup in this recipe instead of honey but I had a bunch of crystallized honey to dispose of. Hager Creek Sugarbush makes some great local maple syrup.
Don’t let them tell you divers are only good for sausage. Admittedly it’s not a fat mallard or woodie but it was great table fare. The ducks are getting fat.

I’ve been craving this! Sweet potato hash with chorizo and a runny egg. Rich and savory with chili powder and cumin, peppers and onions. Love this stuff.
