Pav bhaji
Indian cuisine
All time fav of everyone.

.

3 tbsp butter
9 tomatoes (finely chopped)
3/4 cup peas / matar
1capsicum (finely chopped)
3potatoes(boiled & mashed)
2tsp salt
2 uhtsp kashmiri red chilli powder / lal mirch powder
1tsp turmeric / haldi
2 tsp pav bhaji masala
1 tsp kasuri methi / dry fenugreek leaves
2 tsp ginger garlic paste
2 onion (finely chopped)
1 lemon juice
water to adjust consistency

to toast pav:

pav / bread roll

12 tsp butter

INSTRUCTIONS

firstly, in a large kadai heat 1 tbsp butter and add vegetables. cook and mash well.

now add chilli powder, turmeric, pav bhaji masala, kasuri methi and coriander leaves.

heat a tbsp of butter and add ¼ tsp chilli powder, ½ tsp pav bhaji masala, 1 tsp kasuri methi.

also add 1 tbsp coriander leaves, 1 tsp ginger garlic paste, 1 onion and ½ lemon juice. saute well.

boil and mash for 5 minutes adjusting consistency.

finally, serve pav and bhaji as pav bhaji.

INGREDIENTS

3 tsp ghee(butter)

1 tsp cumin / jeera

1 inch cinnamon / dalchini

4 cloves

few curry leaves

1 onion, finely chopped

3 green chilli, slit

¼ tsp ginger paste

2 beetroots( boiled and sliced

½ tsp salt

1 cup cooked rice

2 tbsp coriander, finely chopped(optional)

INSTRUCTIONS

firstly, in a large kadai heat 3 tsp ghee and splutter tempering.

add cloves, cinnamon, jeera and curry leaves.

add 1 onion, 1 green chilli, ¼ tsp ginger paste and saute well.

now add beetroot

additionally ½ tsp salt.

saute and cook for a minute.

furthermore, add 1 cup cooked rice and mix gently.

cover and Cook for 2 minutes on medium flame..

finally, serve beetroot rice with raita of your choice.

Ingredients

Almonds(crushed) - 2 cup

Ghee / clarified butter - 1 cup

Jaggery - 1cup (powdered)

Procedure

Grease a small plate with ghee and keep aside.

Take a wok and put ghee and on the flame.

As ghee melts, add jaggery powder and stir till it mixes completly

Keep flame on low.

Now add crushed almonds into the above mixture.

Mix the mixture and put into the greased plate.

Wait for 15 min and badam pak is ready to eat..

Ingredients:

instant dosa batter

1 cup urad dal

1/2 cup moong dal

1/2 cup chana dal

2 green chilli

Salt to taste

¾ cup water

For mysore chutney

2 tbsp oil

2 tbsp chana dal

1 tbsp urad dal

5 garlic cloves

1 inch ginger

1 cup chopped onion

4 kashmiri dry red chilli

½ tsp turmeric powder

Salt to taste

2 tbsp tamarind paste

100 ml water to grind chutney

For instant daliya dosa

2 ladleful dosa batter

1 tbsp butter

½ tsp maysoor chutney

Instructions

Making Mysore chutney:

In a pan, add oil, chana dal, and urad dal. Sauté dal till it slightly golden brown.

Add garlic cloves, ginger, and chopped onion. Sauté till onion become translucent.

Now add dry red chili, turmeric powder, and salt. Mix well.

Switch off the gas and cool down the mixture for 5 minutes.

Add mixture into the grinding jar, add tamarind pulp, and required water.

Grind everything. Mysore chutney is ready.

Making dal dosa:
Soak all the 3 dals for about 4 hrs.

Add all dals in a mixer grinder. Don't add any water and grind it so that it becomes smooth in texture.

Add green chili, and required water. Add water as required for blending and make a smooth paste.

Heat a tawa. Pour a ladle full of batter. Spread it in a circular direction to make it to thin dosa. Spread butter and mysore chutney on dosa.

Sprinkle some onion and coriander leaves on dosa.(optional)

No need to flip over and cook. Once it's done, the dosas come out easily from the tawa .

Fold and serve crispy Instant Dal Dosa accompanied with chutney or sambar.

Ingredients

Wheat flour - 1 cup

Ghee / clarified butter - 1/2 cup

Jaggery - 3/4 cup (powdered)

Sliced almonds - 1 tbsp

Procedure

Grease a small plate with ghee and keep aside.

Take a wok and put ghee and on the flame.

As ghee melts, add wheat flour and roast till golden brown in color

Keep flame on low.

Turn off the gas as flour changes the color and add jaggery powder.

Mix the mixture and put into the greased plate.

Decorate it with almonds.

Wait for 15 min and gol papdi is ready to eat..

Cheese Corn Sandwich Dhokla - Easy to Make Farsaan Recipe

Ingredients :

2 cup suji
1 cup dahi
1 1/4 cup water
Salt to taste
1tbsp green chili paste
1 tbsp garlic ( crushed)
3 tbsp besan
1 tbsp oil
1/2 tsp fruit salt

1/4 cup onion
3 tbsp chopped coriander
1/4 cup capsicum
2 pcs green chili chopped
1/4 cup boiled corn
1 tsp chilli flakes
1/2 tsp black pepper
Salt to taste
1/2 cup grated chesse
Green chutney
Cheese slices

In a bowl add suji , dahi , water, salt, green chili paste, garlic, besan, oil, mix well. Rest the batter for 15 - 20 min.

Take batter in a bowl add 1/2 tsp fruit salt & some water mix well .

Grease the dhokla moulds with some oil, pour some batter and tap. Pour the dhokla batter and keep for steaming for 5 min.

To prepare stuffing, take Onion, coriander, capsicum, green chili, boiled corn, chili flakes, black pepper powder, salt, grated cheese

Now apply green chutney on one side of dhokla .

Now add stuffing & cheese slice on above chutney.

Pour other dhokla batter over it.

Now steam it for about 10 min more.

Sandwich dhokla is ready to serve.

Chocolate banana cake🍰

INGREDIENTS

TO BLEND:

4 banana, ripened

¾ cup sugar

FOR CAKE BATTER:

½ cup oil

1 tsp vanilla extract

1½ cup maida

½ cup cocoa powder

1 tsp baking powder

¼ tsp baking soda

¼ tsp salt

½ cup milk

3 tbsp chocolate chip(optional)

INSTRUCTIONS

firstly, in a blender take 4 banana and ¾ cup sugar.

blend to smooth puree without adding any water.

transfer the banana puree into a large bowl.

add ½ cup oil and 1 tsp vanilla extract.

whisk well until everything is well combined.

place a sieve and add 1½ cup maida, ½ cup cocoa powder, 1 tsp baking powder, ¼ tsp baking soda and ¼ tsp salt.

sieve the flour making sure there are no lumps.

mix well using cut and fold method.

further, add ½ cup milk and mix well.

mix to a thick cake batter consistency

transfer the cake batter to a cake tin. make sure to grease the mould and place a butter paper at the bottom to avoid sticking.

place the cake tray into the preheated oven. bake the cake at 180 degree celsius.

or bake till the toothpick inserted comes out clean.

further, allow the cake to cool completely and later cut into thick slices and serve.

Ingredients:

25 gms dried rose petals
50 gms almonds (crushed)
500 gms mawa
300 gms sugar
2 cups water

Procedure:

Take a pan, add sugar and water, stir well and boil till 1string consistency.

Add rose petals,almonds and mawa and stir well till solidify.

After 10 min , grease the plate and set into it..

Keep at rest for about 4 hours and cut them into pieces.

Gulab pak is ready to serve..

for eggless Honey cake:
▢¾ cup (200 grams) curd / yogurt
▢1 cup (230 grams) sugar
▢¾ cup (135 grams) oil
▢1 tsp vanilla extract
▢2 cup (330 grams) maida / plain flour
▢¼ tsp baking soda
▢1 tsp baking powder
▢½ cup (120 grams) milk, if required
for honey syrup:
▢2 tbsp sugar
▢¼ cup water
▢¼ cup honey
for jam mixture:
▢½ cup strawberry jam
▢1 tbsp honey

INSTRUCTIONS

firstly, prepare honey syrup by dissolving 2 tbsp sugar in ¼ cup water. boil the sugar syrup for 2 minutes
when the sugar syrup is warm, add ¼ cup honey and mix well.
pour the prepared honey syrup over the cake and allow to seep into the cake. keep aside.
further prepare jam mixture my taking ½ cup strawberry jam and 1 tbsp honey in a pan. mix well.
now spread a generous amount of jam mixture over cake and level out.
also sprinkle 2 tbsp of desiccated coconut over cake.
finally, cut the honey cake and serve.

Ingredients:

1/4 cup rava / semolina / suji

1 tsp salt

1 cup water

1/2 cup curd

1 tsp pepper (crushed)

1 inch ginger (chopped)

1 chilli (finely chopped)

mysore chutney

oil (for roasting)

INSTRUCTIONS.

Take 1 cup noong,add rice flour and rava.

further add salt, curd and water.

whisk and mix well making sure there are no lumps.

further add 1 tsp pepper, 1 inch ginger, 1 chilli.

mix well and rest the batter for 20 minutes making sure the rava has absorbed water.

mix well making sure the batter is dosa consistency. Spread the dosa on tava add 1tsp Mysore chutney on it or Onion.

also spread a tsp of oil uniformly. Do not flip the dosa .

lower the flame and cook until the dosa turns golden and crisp.

finally, fold the dosa and serve moong dosa immediately with tomato chutney or coconut chutney.

Ingredients:
For filling
1 cup cabbage(julienne)
1 cup capsicum (julienne)
1 cup onion(julienne)
1 tsp ginger garlic paste
1 tsp mixed herbs
1 tsp chilli flakes
1/2 tsp pepper powder
Salt to taste
2tbsp oil
Cheese

For dough:
1/2 cup wheat flour
1/2 cup all purpose flour(maida)
1tsp oil
Salt(pinch)

Method:

Knead a dough with wheat flour, maida, oil and salt. Keep it for rest.

Take a wok, add oil, onion. Saute onion till slight golden colour,then add capsicum and cabbage. Saute well.

Then add mixed herbs, chilli flakes, ginger garlic paste, salt and pepper.

Cook for about 5 min on medium flame. Dont add water.

Preparation of pockets:

Make a rotis out of dough.

Take a roti, apply tomato ketchup, put filling in the centre, grate cheese above it and fold in like pockets.

Shallow fry on both the sides.

Ready to serve.

Ingredients

¾ cup white sugar

1 cup heavy cream

2 ¼ cups milk

1/2 teaspoon vanilla extract

1 tbsp GMS powder(optional)

2 tbsp milk powder

1/2cup jamun pulp

Directions

Step 1

Stir sugar, cream, milk, milk powder and GMS powder into a saucepan over low heat until sugar has dissolved. Heat just until mix is hot and a small ring of foam appears around the edge.

Step 2

Transfer cream mixture to a container.chill mix at least 2 hours. (Overnight is best.)

Step 3

Pour cold ice cream mix into an container,add vanilla extract and jamin pulp then with the help of be**er, churn in uniform direction for, 10 to 15 minutes,then pour this mixture in air tight container keep for freezing for about 5 hours.

Ingredients:

1 c almonds
1/4 c pista(pistachio)
1 tsp Kesar
3/4 c sugar
1/4 c magaz seeds
1/4 c khuskhus(poppyseed)
10 peppercorns
2 tbsp rose petals
1 tbsp elaichi pd(cardamon)
2ybsp variyali (fennel seeds)
Grind everything along with sugar to a fine powder.
Adjust sugar as needed.
(Please grind it with sugar, else the nuts will release oil & become lumpy & also won’t grind well)

Add 1 tbsp to 1 glass of chilled milk and serve.

▢½ cup cabbage (grated)

▢¼ cup carrot (grated)

▢3 tbsp coriander (finely chopped)

▢½ tsp ginger paste

▢1 green chilli (finely chopped)

▢½ tsp sugar

▢¼ tsp kashmiri red chilli powder

▢¼ tsp turmeric / haldi

▢2 tsp oil

▢¾ tsp salt

▢1 tsp eno / fruit salt

for tempering:

▢3 tsp oil

▢¾ tsp mustard

▢½ tsp cumin / jeera

▢1 tsp sesame / til

▢few curry leaves

▢pinch hing / asafoetida

INSTRUCTIONS:

firstly, soak 1 cup rice, ½ cup chana dal, ¼ cup urad dal for 3-4 hours.

add ½ cup curd and blend to a smooth but slightly coarse paste.

Keep this for fermentation for 8 hours.

further add 1 cup grated bottle gourd, ½ cup grated cabbage, ¼ cup grated carrot and 3 tbsp coriander.

also add ½ tsp ginger paste, 1 green chilli, ½ tsp sugar, ¼ tsp chilli powder, ¼ tsp turmeric, 2 tsp oil and ¾ tsp salt.

mix well making sure the batter is slightly thick like idli batter consistency.

now add 1 tsp eno / fruit salt and mix gently.

Put in oil greased container. Add tempering above it.

bake the handvo in oven,or cook on tawa.

Ingredients:

1 litre milk

1/2 cup sugar

3- 4 almonds sliced

3 tbsp ghee

1/2 tsp lemon juice

HOW TO MAKE HALWAI STYLE MILK CAKE:

Boil milk in a large pot.

Boil till reduced to 1/3rd

Add in lemon juice little at a time.

Stir well and you will notice curdles of milk

Cook till thickens

Add little sugar at a time and keep cooking.

Cook till it thickens.

Now add ghee step by step and stir well

Spoon it into pan.

set aside to cool.

Slice and serve

cover and Cook for 20 minutes on medium flame.. When rice are partially cooked add 1 tbsp fresh cream.

FOR SAMOSA PATTI SHEETS:

▢½ cup wheat flour / atta

▢½ cup maida / plain flour / all-purpose flour

▢pinch of sugar

▢salt to taste

▢2 tbsp oil, hot

▢water, as required to knead

FOR SAMOSA STUFFING:

▢1 onion, thinly sliced

▢½ cup thin poha / thin flattened rice

▢1 tsp kashmiri chilli powder

▢¼ tsp garam masala

▢¼ tsp aamchur powder / dry mango powder

▢salt to taste

▢1 inch ginger, finely chopped

▢3 tbsp coriander leaves, finely chopped

OTHER INGREDIENTS:

▢oil for deep frying

▢2 tbsp maida / plain flour / all-purpose flour

▢4 tbsp water

INSTRUCTIONS

ONION SAMOSA STUFFING RECIPE:

firstly, in a large mixing bowl take sliced onions and poha.

also add chilli powder, garam masala, aamchur powder and salt.

then add ginger and coriander leaves.

squeeze and mix well and keep aside.

SAMOSA PATTI PASTRY SHEETS RECIPE:

firstly take maida and wheat flour.

further add pinch of sugar and salt to taste.

add 2 tbsp of hot oil over the flour.

crumble the dough.

furthermore knead to smooth dough and rest.

further, start to roll with a rolling pin as thinly as possible.

furthemore, cut the sides and get to a perfect rectangle shape.

put the sheet on hot tawa and roast for just 10 sec on both sides.

SAMOSA FOLDING RECIPE:

firstly, start folding the samosa sheet into triangle and stuff the stuffing.

seal with maida paste.

fold the sheet to form a triangle.

further, deep fry to golden brown.

INGREDIENTS

▢1 tbsp unsalted butter

▢1 tej patta / bay leaf

▢¼ onion, finely chopped

▢1 clove garlic, finely chopped

▢1 bunch palak / spinach leaves

▢¼ cup water, to blend

▢½ cup milk

▢salt to taste

▢½ tsp pepper, crushed

▢½ tsp sugar

▢1 tbsp corn flour

▢1 tsp fresh cream

INSTRUCTIONS

firstly, in a large kadai/pan, add butter and tej leaf. saute till it turns aromatic.

furthermore, add finely chopped onions and garlic. saute till they turn golden brown.

additionally, add palak leaves. make sure to cut the stem and clean before you use.

saute on medium flame for a minute till they shrink in size.

furthermore, allow to cool completely and remove bay leaf.

transfer the mixture to blender and blend to smooth puree adding water as required.

now further transfer the blended puree to the same kadai.

also add half cup of milk.

add salt and give a good mix.

furthermore, get the puree to boil.

add crushed black pepper and sugar.

also add corn flour paste and give a quick stir. to prepare corn flour paste, stir 1 tbsp of corn starch with ¼ cup water and make a paste out of it. add it to the soup accordingly. stir again and check the consistency. the more corn starch you add the more thick your soup will be.

then pour the soup in serving bowl and top with fresh cream

finally, enjoy the piping hot palak soup.

Ingredients,

marie biscuits 200 g (1 packet)

Butter 3/4 cup

Sugar 1/2 cup

Coffee powder 1 tbsp

Coco powder 2 tbsp

Directions,

1. In a bowl break mix cocoa powder, sugar and butter.

2. Take another cup and mix coffee with 2 tsp water

3. Now dip one biscuit in coffee and apply the cocoa mixture. Similarly place all biscuits one above the other and make a tower.

4. Now coat complete tower with cocoa mixture.

5. Place this in refrigerator for 2 hrs.

6. Cut in slant slices and serve.

▢1/4 cup rava / semolina / suji, fine

▢1 cup besan / gram flour

▢oil for frying

INSTRUCTIONS

firstly, in a large mixing bowl take ½ cup water, 1 tbsp oil, 1 tbsp sugar, 4 chilli and ½ tsp ginger paste.

also add ½ tsp coriander seeds, ¼ tsp ajwain, ½ tsp pepper and pinch hing.

furthermore add ¾ tsp salt and ¼ tsp baking soda.

using a whisk mix well making sure all the spices are combined well.

now add 1 cup fenugreek leaves and 3 tbsp coriander. mix well.

further, add 1/4 cup rava and 1 cup besan.

whisk and mix to form a lump free thick batter.

drop the batter into hot oil forming small balls.

INGREDIENTS

▢2 tbsp oil

▢2 clove garlic, finely chopped

▢1 inch ginger, finely chopped

▢1 chilli, finely chopped

▢2 tbsp spring onion, chopped

▢1 carrot, finely chopped

▢3 tbsp cabbage, finely chopped

▢½ capsicum, finely chopped

▢5 beans, finely chopped

▢4 cup water

▢2 tbsp soy sauce

▢2 tbsp vinegar

▢1 tsp chilli sauce

▢½ tsp pepper powder

▢½ tsp sugar

▢½ tsp salt

▢2 tbsp spring onion, chopped

FOR CORN FLOUR SLURRY:

▢2 tbsp corn flour

▢¼ cup water

INSTRUCTIONS

firstly, in a large kadai heat 2 tbsp oil and stir fry 2 clove garlic, 1 inch ginger and 1 chilli.

add 2 tbsp spring onion and stir fry until it softens.

further, add 1 carrot, 3 tbsp cabbage, ½ capsicum and 5 beans.

stir fry for 2 minutes or until the veggies are half cooked.

add 4 cup water, 2 tbsp soy sauce, 2 tbsp vinegar and 1 tsp chilli sauce.

also, add ½ tsp pepper powder, ½ tsp sugar and ½ tsp salt.

boil for 3 minutes or until flavours is absorbed well.

now prepare cornflour slurry by mixing 2 tbsp cornflour in ¼ cup water.

pour the slurry into the soup and mix well.

continue to boil for 2 more minutes or until soup thickens slightly.

finally, add 2 tbsp spring onion and enjoy hot and sour soup.

INGREDIENTS

FOR RAGDA:

1 cup white peas, dried white peas, soaked overnight

3 cup water

½ tsp turmeric powder / haldi

½ tsp kashmiri red chili powder / lal mirch powder
1/2 tsp Green chilli paste

salt to taste

FOR PATTICE / PATTIES:

▢4 medium sized potato, boiled and peeled

▢salt to taste

1/2 tsp green chilli and ginger paste.

▢¼ tsp sugar

▢½ tsp lemon juice

▢oil for roasting pattice

OTHER INGREDIENTS:

▢3 tsp green chutney

▢3 tsp tamarind chutney / imli-chutney

▢salt to taste

▢¼ onion, finely chopped

▢¼ tomato, finely chopped

▢1 cup sev, or as required

▢few coriander leaves, finely chopped

INSTRUCTIONS

firstly, pressure cook soaked white peas along with water turmeric, chili paste and salt for 4 whistles.

once the pressure releases, mash the peas. keep aside.

mash boiled potatoes.

additionally, chili and ginger paste, lemon juice, sugar and salt.

combine well and prepare pattice.

shallow fry to golden brown and crisp.

in a plate pour prepared ragada and place pattice.

further pour more ragada and top wit green chutney and tamarind chutney.

also top with onions, tomato, sev and coriander leaves.

finally, serve ragda patties hot along with cutting chai.

INGREDIENTS

▢1 cup palak leaves / spinach

▢2 tsp oil

▢1 green chili , finely chopped

▢1 capsicum, finely chopped

▢¾ cup peas, fresh

▢2 potato, boiled and grated

▢3 tbsp coriander leaves, finely chopped

▢1 tbsp gram flour

▢2 tbsp breadcrumbs

▢½ tsp kashmiri chili powder / lal mirch powder

▢½ tsp coriander powder

▢½ tsp garam masala powder

▢¼ tsp turmeric powder

▢salt to taste

▢oil for shallow frying

INSTRUCTIONS

firstly, in a large kadai heat oil and add green chili.

also add capsicum and saute till the moisture disappears.

further add peas and saute well.

transfer to the blender and allow to cool completely.

blend to coarse paste along with blanched palak.

transfer the blended paste into a large mixing bowl.

also add grated potato and coriander leaves.

further add gram flour and breadcrumbs.

add in the spices and salt.mix well.

grease hands with oil and make a small patties.

now shallow fry the prepared patties with oil.

You can even deep fry if not shallow fry them.

finally, serve hara bhara kabab with sauce and masala tea.

INGREDIENTS

FOR CAKE:

▢1 (240 gm) sugar

▢1/2 cup oil

▢3/4 cup curd

▢1 tsp vanilla extract

▢11/2 maida / plain flour

▢½ cup cocoa powder

▢1 1/2tsp baking powder

1 tsp baking soda

▢¼ tsp salt

▢1 tsp coffee powder

▢¼ cup water

FOR FROSTING:

▢1/2 cup choclate sauce

▢chocolate bar

INSTRUCTIONS

CAKE PREPARATION:

firstly, in a large bowl take 1 cup sugar, oil, curd and 1 tsp vanilla extract.

whisk and mix well until sugar melts completely.

place a sieve and add maida, cocoa powder, baking powder, baking soda, salt and coffee powder.

sieve the flour making sure there are no lumps.

now using cut and fold method, mix the batter.

add ¼ cup water or as required and prepare a smooth consistency batter.

to prepare the cake in a pressure cooker add in 2 cup of salt and close the lid of cooker without keeping the gasket and whistle. heat for 5 to 10 minutes. as a result, gives a preheat oven atmosphere.

now transfer the cake batter to a cake mould.make sure to line a butter paper at the bottom to prevent from sticking.

and also tap twice to level up uniformly and remove any air bubbles if present.

place the cake pan into preheated cooker.

cover and cook on a medium flame for 45 minutes. you can alternatively, preheat and bake at 180-degree celsius for 45 minutes.

insert a toothpick and check if the cake has baked completely.

cool the cake and then unmould the chocolate cake.

CHOCOLATE FROSTING:
Once the cake is cooled, pour chocolate sauce on it.

Garnish it with grated chocolate bar.

Chocolate cake in ready.
