Working on growing a gluten free starter. If you would like to make your own check out George Eats, she has a whole lot of gluten free Sourdough recipes that you can make with your starter from bread, cookies, brownies, pancakes, pizza and more. If interested I used Quinoa that I ground in a coffee grinder (Quinoa flour is kind of expensive) and brown rice flour for the starter. If you have grain grinder you could grind your flours fresh which is even more better but use what you are able. So if You would like to make your own click the link below. Going back to fermenting. Traditionally in many cultures Winter and Spring were a time when ferments were consumed more. Back in the day it was mostly a way to preserve just like canning. But there were also healthy benefits of preserving by fermenting and that was the probiotics that came from the bacteria eating on the produce. And because of this bacteria some vegetables that are harder to digest were more able to be assimilated by the body. One traditional ferment is "fermented beets" which also produces "Beet kvass" which is the liquid that the beets ferment in. Beets can be an acquired taste but they are great food for cleansing the liver. And the liquid of the beets "Beet Kvass" actually has a pleasant sweetness to it. After a few months I am posting another recipe. I am going more a different flavor now as I am eating more grains and legumes. I have updated my about page to say I am not really eating low carb anymore. Today's recipe is like a savory porridge. It is called "Kitchari". Kitchari is a meal used a lot in cleanses but is also gentle for babies as a first food (without the jalapeƱos that I have in this recipe of course though). The recipe I am posting today is good for kapha excess such as: excess mucus or feelings of sluggishness. The best time to have this would normally be in "spring" which is "kapha season" but if you have a kapha imbalance or in the kapha part of your cycle (more about that in another article) it is a great meal to just spring clean your gut. Well after about a month later I have finished my post. I do hope to at least post once a week in the new year. As long as I am disciplined I don't see it being an issue!

Hello everyone, has been a couple of months. So my health has been all over the place and haven't had the motivation to write. I have recently gone from ayurveda, aip to bulletproof and now back to Ayurveda but with more of a combination of paleo with Ayurveda. Why so much change? because none of these diets by themselves were working for me. But the ancient Ayurveda diet with some of the paleo principles is the way to go for my hashimotos in particular. I am going to write a post this week on what I am doing but for a little bit of an introduction to the diet of Ayurveda this is a post I wrote back in the summer:

Taco Tuesday has gone by but there's no reason Taco Thursday can't be a thing. Pretty much any night you feel like tacos is a good time to have tacos. What's nice is if you want to have a traditional Taco you can but you can also have a Taco bowl. This makes it more paleo or keto if you so desire. A simple breakfast that I make weekly is a breakfast casserole. It's something I can either prep the evening before and cook in the morning. Or bake the day before and just reheat throughout the week. But for an easy quick breakfast you really can't beat it. This week I made a Tex-Mex breakfast casserole with corn tortillas, ground beef, tex-mex seasoning and cream cheese with veggies. If you like Tex-Mex this is the breakfast for you. A great side dish that is quite versatile and of course gluten free is Spaghetti squash! And fingers crossed the kids will even want to ear because it's like noodles! We can always hope. Learn how easily you can just put it in the oven and add it to whatever dish you would use regular noodles in. I used it in Spaghetti Bolognese the other night it was very good and a great way to get more vegetables in your diet. For an easy breakfast why not start the night before? You can do this with my Pumpkin Spice Waffles. I am a fan of simple and easy so have started making waffles for my kids the night before and freezing them so its an easy breakfast to just pop in the toaster the next day. You of course can eat these as adults as well, it is one of the things my son will eat. You can also make these freeze in the morning. I just have so many kids nowadays that the freezer is a much more easier option for me. Anyway enjoy these Pumpkin Spice Waffles! And watch this space for more pumpkin spice recipes! Want an easy meal that kid will also enjoy? How about trying my Kielbasa and Spaghetti? Kielbasa tastes similar to hot dogs so is popular for many kids. It's also cheaper for me than buying grassfed hotdogs. The least processed ones I have found are from Trader Joes and only cost $3.99 per 14ozs. It's pretty inexpensive. I made some chicken nuggets today for lunch, I just popped them in the oven and let them bake. I didn't however buy a processed box of chicken nuggets but used my keto chicken nugget recipe. I made the chicken nuggets and froze them for a couple of hours before putting them in a bag to deep freeze them. And I found out today that they will cook up in relatively the same time as the fresh. My kids gobbled up what I did cook on Saturday, but today they were not as enthused. My daycare kids on the other hand ate every bite. If your kid loves chicken nuggets and you want them to eat less processed this is the meal for you. And if you bake a few when you make it and freeze the rest you have a few meals that you can easily pop in the oven without a seconds thought. As a parent of a toddler, I have to get a bit creative with food. One of my favorite ways is through recreating some classic favorites. The one I did today is a pudding cup. I generally consider it a dessert, but if done with the right ingredients it can be enjoyable and also good for us nutritionally. Which is why I love the addition of Avocado in these pudding cups. It's a nice healthy fat filled with lots of nutrients like B vitamins, vitamin C, vitamin E, vitamin K, Folate, Potassium, Magnesium and Carotenoids. Hello, everyone after a long hiatus I am back to writing. The business of life came in amidst some health issues but I am determined to at least post once if not a few times a week. Today's recipe is Gluten free Pumpkin Spice pancakes inspired by Trader Joe's Gluten free Pumpkin Spice box mix. If you are into Pumpkin Spice anything like myself you will just love these pancakes!
