I have mentioned a zillion times earlier about my love for prawns🦐🥰 As much as I love our classic, old-school prawn recipes, I'm always up for creating new fun recipes with them as well.
I always have a batch of green chutney ready-to-go in my fridge, so made a good use of them in this GREEN PRAWN CURRY, which turned out to be extraordinary and packed with flavours 💚

The week between and is the least productive for us usually. We stay in our PJs the whole day, watch tons of movies and series, munch on snacks, and mostly survive on takeaways or online orders 😅
But today suddenly I realised we have these batang lying in the freezer, so decided to make my favourite FISH KALIYA with them which we enjoyed with hot rice. 🤩

The love of many, the perfrect winter companion, the gorgeous & supremely delicious (+1000 more adjectives) CHICKEN MOMO w/ my SPICY RED & GREEN CHUTNEY (dip) and bowl of warm BROTH ❤️😋

It was raining yesterday, so thought this would be the perfect dinner in the chilly night! 🌧
While I had pre-made wraps (homemade) in my freezer, both the dips ready, making the filing, folding and steaming them was a matter of 30mins! Also the broth was made with stock cubes (store bought) and a little portion of veggies, easy-peasy yet tasteful.
FACTS: 🔸You surely can make the wraps ahead of time & freeze them upto 30days, it makes the process so much quicker. Just sprinkle some extra flour so that they don't stick to another, pop them into ziplock bags before freezing. 🔸Pre-made dips are also great, you'll save a good amount of time and they can be used in other things (chaat, dahi vada, sandwich)

Here is the fifth and second last post of the series! 😌
So for ashtami there was no second thoughts for the menu than . I grew up eating particularly this set menu on this day, so as my husband. So continuing the tradition I cooked the following👇🏻
✤ LUCHI : This needs no further introduction, I guess. Its the basic Indian deep fried flatbread (not puris), popular among Bengali culture, made out of AP flour.
✤ CHANA MASALA : A spicy chickpea curry with onion-ginger-garlic-tomato.
✤ KOSHA ALOO'r DUM : This spicy potato curry is another emotion of Bengali's. It has both veg. & non-veg. version. I cooked it in similar way like meat curry (kosha mangsho), using pre-boiled baby potatoes.
✤ MOTICHUR LADDOO : Store bought from Haldiram's Nagpur

|| Durga Pujo Bhuri-bhoj 2021 : Saptami / সপ্তমী ||
Here is the fourth post of the series! 😌
On Saptami, we were at our closest friends-cum-family's place. We had dedicated the day to the old-school, classic bengali dishes. You can say, the actual pujo feasting started from this day. While I made the fish fry & mutton, Moumita di prepared the pulao and (Gitasree Basu) jethima cooked the chutney. Also dada prepared the salad and my husband Sushovan only contributed by eating😏.
Let's get into the details about what we cooked👇🏻
✤ BENGALI FISH FRY : Marinated Seabass/Bhetki fillets dipped in egg wash and coated with breadcrumbs, the deep fried till golden crispy. This one is most favourite snack item of Bengal.
✤ BASANTI PULAO : Yellow coloured rice, with loads of ghee and dry fruits. This looks simple but has its own tricks.
✤ KOSHA MANGSHO (MUTTON) : Generally, people from back in '80s or earlier, meant mutton as mangsho, and murgi as chicken, hence the name.
Okay, just remember there is no special recipe/ingredients for it, but patience 😇
✤ AAM'er CHUTNEY : Lastly, jethima made the chutney to complete the spread. It was out of the world!!

Here is the third post of the series! 😌
For Sasthi, I decided to cook something quick but special. So, thought of making SORSHEY ILISH/সর্ষে ইলিশ . This is one classic dish that uses a mustard paste & yogurt based gravy, tastes pungent 🤤
I got this gorgeous queen from the local wet market earlier, which had eggs and weighted around 2kgs. Not to mention, it had a buttery texture and full of flavour, despite of having eggs (which is considered to detoriate the fish's taste).

|| Durga Pujo Bhuri-bhoj 2021 : Panchami / পঞ্চমী ||
Here is the second snap of the series! 😌
Panchami was on Sunday, so wanted to go out for dinner but lastly, stayed in our PJs and ordered a grand feast. Let's get into the details about what we ordered from AWADH 👇🏻
✤ BHATTI KA MURG (S$24) : This is basically tandoori chicken, but....comes with a creamy, cheese sauce, that is the game changer. I never had it like this before, but wow! It was just mind-blowing 🤤
✤ NAWABI GHOST BIRYANI (S$27.90) : The biryani was also amazingly tasteful, melt in mouth mutton pieces, packed with flavour. One thing was that it was a bit over cooked, hence it was breaking off. Otherwise really good 👍🏻
✤ AWADH CHICKEN NIHARI (S$16.10) : Coming to last dish, which was not up to mark. It was lacking in salt, also really bland in taste overall. Chicken was juicy & soft though. 👎🏻

So, finally I'm posting the first snap of the series! 😌
On chaturthi, which was Saturday and start of the festive week, we decided to order some treat for us. The freak that we both are, couldn't think of anything else. Anywho, let's get into the details about what we ordered from PastaMania (Singapore)👇🏻
✤ MEAT LOVERS’ PIZZA (S$15.80) : It has beef bolognese, beef pepperoni, chicken sausage, turkey bacon on a hand tossed thin crust. Tasted just awesome, couldn't ask for more. 🤤
✤ PEPPERONI PIZZA (S$15.80) : It's the classic Italian beef pepperoni pizza, which is another best taste-wise. Although, I think, the spread could've been more nicely done! ☺️
✤ CHEDDAR STICKS (S$6.50) : I had so much high expectation from this and it fulfilled to some extent, if not fully! No cheese pull video, sorry. 😮‍💨

Sunday Special 🥰
CHELOW KABAB is almost everyone's favourite, which is the national dish of Iran. People who are from Kolkata or who have been to Kolkata, know the best place for this dish, is Peter cat.
However, this dish is usually served with steamed rice, butter cubes, egg (sunny side up), chicken kabab, mutton seekh kababs and salad, also a grill tomato. The kababs are soft, succulent and loaded with flavours! Doogh (a yogurt based drink) is a typical beverage option that goes with this dish. Altogether they make the perfect, lip smacking meal to have ❤️

Happy Sunday everyone!!
Keeping sunday dinner easy yet extremely delish with SPAGHETTI NOODLES w/ VEGGIES & EGG, which is my favourite 😋
This spicy & saucy noodles are the saviour when craving for something good but don't wanna put in lots of efforts. It hardly takes 30mins (or so) to whip up this colourful plate of happiness ❤️...I love to add eggs as my protein. Though you can also add shrimps 🍤 or chicken 🍗. Recently I've discovered crispy bacon 🥓 is also make a great addition, try that!

What about some good old kababs for the weekend? 😋
Melt in mouth, SMOKED MUTTON SEEKH KABABS grilled and slathered with butter, wrapped into baby naan with some green yogurt chutney & crunchy salad. Sounds like weekend to me 😍
✍🏻 Sharing the easy process here.
1) Take about 500-600 gms of minced mutton, squeeze between your palms to get rid of any excess water.
2) Now take a big mixing bowl, add in the meat, 1 tbsp gram flour, ⅛ cup finely chopped onion, 2 tsp ginger-garlic paste, ½ tsp each of chilli chopped/pwdr, turmeric, cumin, coriander pwdr, 1½-2 tsp seekh kabab masala OR 1 tsp garam masala, ¼ tsp black pepper pwdr, salt to taste, 1 tbsp lime juice. Drizzle some oil and combine well.
3) Now put a charcoal piece on direct flame (on gas), once it becomes ashy, put that into the meat in a steel/foil bowl, drizzle little ghee and immediately cover it. Let it be for 5mins then discard it.
4) Now oil your hands and shape the meat like seekh kababs on a skewer. Grill them nicely on hot pan with oil/butter. Serve hot with naan & salad on side.

The chaat series continues with another lip smacking dish PAV BHAJI, which we all love, specially Mumbaikars.
Initially I always hesitated to make it at home, despite of watching endless amount YT videos, reading blogs. But once I perfected it by a few trials, there is no looking back! Its so easy to make and so delish 😋😋
✍🏻 Sharing my super easy PAV BHAJI recipe for you guys to try.
✯ In a pressure cooker, add diced potato & carrot 1 cup each, cauliflower florets 1 cup, green peas ½ cup, corn ½ cup, beetroot (for color) ¾ cup. Fill it with water so that the veggies can sub-merge in it. Now steam it for about 3-4 whistle in low flame. Once done and the pressure is released, mash the veggies with a masher.
✯ Next heat a pan on medium flame, add oil and butter in 1:1 or fully butter/oil, ¼ tsp cumin seeds. Now add in 1 med.-large onion finely chopped. Fry for couple of mins till lightly brown, then add in 2 tbsp ginger garlic paste, 2 tsp red chilli paste/pwdr. Fry till the raw smell is gone, next add ¼ tsp turmeric pwdr, 1 tsp cumin and coriander pwdr each, 2 tsp kashmiri chilli pwdr, ½ tsp garam masala pwdr. Fry for 2mins, after that add 1tsp pav bhaji masala (I use Everest brand). Braise the spices on for few mins before adding 1 big tomato roughly chopped. Sprinkle some salt and continue frying until the tomatoes are soft and mushy. Lightly mash it with spatula/masher.
✯ Next add in the boiled & mashed veggies. Add water to adjust the consistency (¼ cup), 2 tsp pav bhaji masala, salt to taste, combine everything well. Now cover and cook it for another few mins. Once it is thickened, mash it one last time. Sprinkle chopped coriander, cubes of butter to finish it off.
✯ Serve with butter toasted dinner rolls, chopped onion and lime on side.
