If you’re someone like my husband who spends a ridiculous amount of time in the cereal and granola aisle, trying to find the perfect cereal / granola - then this post is for you.
I have started making a variety of granola at home, in which I control what I put in and the possibilities are endless.
I’ll be sharing various versions of granola, but here’s one for now 😊
💫2 cups whole rolled oats
💫1/2 cup chopped walnuts
💫1/2 cup almonds
💫1/2 cup dried cranberries
💫1/2 cup pistachio
💫 2 tablespoons melted coconut oil
💫 1/2 cup maple syrup or honey
Method:
✨Preheat the oven to 300°F and line a baking sheet with parchment paper.
✨In a medium bowl, combine the oats, walnuts, almonds, pistachio & dried cranberries
✨Drizzle in the coconut oil and maple syrup or honey. Stir until combined.
✨Dish out the granola onto the baking sheet. Spread it out enough that it roasts well but the ingredients are close enough to clump.
✨Bake for 15 minutes, rotate the pan halfway, and use a fork to gently break the granola apart just a bit. Bake for 15 minutes more, or until golden brown.
✨Let cool for 15 minutes before serving.
Store the granola in an airtight container at room temperature for up to a week. Enjoy it on its own as a snack, add it to a yogurt parfait, or eat it like cereal with a splash of milk!

I happened to stumble upon an article written by “Finding home in a plate of daal chawal” - that article hit home just like a plate of daal chawal hits the spot.
As Elia aptly puts it, that there is an element of nostalgia. When the familiar smells of your family’s chosen tarka (tempering) carry you back to your childhood memories.
So, Daal Chaawal (lentil & Rice) is my all time favorite meal. No matter where I go, what I eat, at the end of the week, I crave a good home made daal chawal - it’s like coming back to your roots 😊

Here’s a great tea recipe for you to try out
Ingredients:
1 orange cut into slices
5-6 Mint Leaves
2 inch piece of Ginger
1 teaspoon Honey / per cup
Half teaspoon of black Seed (Kalonji)
5-6 Green Cardamom pods
3 cups of water
Method:
Boil the water and add all the ingredients except honey and cover and cover to let all the ingredients release their aroma and flavors.
Add honey once you have poured the tea into the cups. Pouring the hot water over the honey or boiling with it deteriorates the quality and loses its essential enzymes and nutrients.

I was recently introduced to Korean Food and instantly fell in love with it.
Korean cuisine comprises of sweet and sour, salty and bitter flavors– and a burst of colors.
Here I present to you the spicy Cucumber Salad, recreating recipe.
Ingredients:
1 large cucumber cut and pat dried
2 tablespoons sugar (brown or white)
2 tablespoons sesame seeds
1.5 tablespoons white vinegar
2 tablespoons Soy Sauce
2 tablespoons Sesame seed oil
1 tablespoons Korean chili flakes - I used regular chili flakes and only 1 teaspoon.
2 large cloves of garlic finely chopped
2 inch piece of ginger finely chopped
2 stalks of green onion / spring onion
This can be served right away or for stronger flavors left to marinate over night. This salad has some very strong flavors so you will be needing mints and breath fresheners 😀
This pickled salad tastes fantastic and the marinade if eaten with sticky rice adds so much flavor.

If you love seafood but find buying seafood a daunting task than this post is for you.
So, let’s go over some tips that would help you in buying not only fresh but also the best seafood.
Firstly, always buy wild caught fish (sourced from lakes, oceans & rivers) instead of farm raised (raised in large tanks).
Types of Seafood:
🐟Fresh
🐟Frozen
🐟Live
No matter what type of seafood, there are certain aspects that you should pay attention to:
🐟Fresh Seafood:
💫When buying fresh seafood, the most important thing to keep in mind is the level of cleanliness, hygiene and odor of the store. If the store has a strong fishy smell, there is could be a possibility of rotten or spoil fish.
💫Make sure that the fresh fish / seafood is stored in a refrigerator or on a thick bed of ice
💫Fish should smell fresh – mild scent
The flesh should feel fresh to the touch and not slimy
💫If buying whole fish check the eyes, they should be bright, bulging eyes
💫Scales should be bright and vibrant
💫The best way to gauge the freshness of the fish is to check the gills. Freshly caught fish have bright red gills, that darken over time.
🐟Frozen Seafood:
💫Frozen fish should be sealed in airtight, moisture proof packaging
💫When reading the label know the difference between FAS (Frozen at Sea) & IQF (Individually quick frozen)
🐟FAS fish may be frozen whole for later thawing and reprocessing on a factory ship or at a plant ashore, or they can be landed, filleted and frozen aboard the same vessel.
🐟IQF fish fillets are all processed and frozen within hours of catch to maintain ideal freshness and the highest quality
💫If buying frozen, pick from the bottom or back of the refrigerator as it may have not been exposed to varying temperatures
💫To avoid contamination, make sure to keep it in an ice packed cooler when transporting it home

I love Buffalo chicken and try to incorporate it in as many recipes as I can. Be it sandwiches, salads, or pizza.
I made this Buffalo Chicken Pizza with Sundried Tomatoes, Red Onion, Jalepenos and Pineapple to add some sweetness and this pizza turned out amazing!!!

I decided to make my version of Appolo Air Fried Fish which turned out amazing!! Believe it or not I made this in 30 minutes while I chatted with my friend on the phone :)

Sometimes in our quest to discovery, we forget things that are a part of our identity. So, today I wanted to highlight a dish that holds its own as a dish or can be served as a condiment - Lauki Ka Raita. Lauki = Bottle Gourd and Raita = yogurt dip.
This is made with very few ingredients and adds a rustic charm to any kind of menu.
Ingredients:
1 Medium Sized Lauki
2 Cup Yogurt (medium thick consistency)
2 Cloves of Garlic - finely chopped
1 Teaspoon Red Chili Powder
Salt to Taste
For Tempering:
Half Teaspoon Cumin Seeds
2 Tablespoon Oil
4-5 Dry Red Button Chili
4-5 Curry Leaves
Method:
Boil the bottle gourd and roughly mash it. Beat the yogurt to a medium thick consistency, add finely chopped garlic, red chili powder and salt and mix well.
Heat oil, add the button red chili, cumin seeds and curry leaves and fry for about a minute and temper the raita/yogurt.
Serve with anything you like or eat on its own 💫
What is one dish that you have rediscovered?
As a continuation of my Pakistan Independence Day series, I wanted to present something that not only reflected my roots to the coastal city of Karachi but also my current home Orlando,FL. Therefore, keeping in mind the coastal connection of both homes, I decided to make Fish Biryani.
Ingredients:
💫Wild Mahi Mahi - 3lbs
💫Onions finely chopped - 1 large
💫 Ginger Garlic paste - 1 table spoon
💫yogurt half cup - beat yo medium thick consistency
💫fresh coriander - half measuring cup
💫 mint 6-8 leaves
💫Lemon juice - 1/4 cup
💫 Dill leaves 1/3 cup
💫 curry leaves - 8-10 leaves
💫 fresh finely chopped ginger about one inch
💫Green Chili - 2 medium
💫Fish Biryani spice mix
💫 Oil - half measuring cup
💫 Rice - 3 measuring cups
Method:
Cut the fish into medium sized square pieces and marinate by mixing: fish biryani spice mix (use less if you do not like spicy food), ginger garlic paste, lemon juice, fresh coriander, mint, green chili, yogurt and leave the marinated fish for 45 minutes.
Fry the finely chopped onions until translucent, then add dill leaves, fresh grated garlic and curry leaves and fry for few seconds. Now add the fish along with the marinade. Stir very gently using a rubber spatula or by shaking the cook pot gently so that the fish cooks evenly and you do not break the fish pieces as fish cooks very quickly and is very delicate.
As the fish cooks, boil the rice just the same way you’d make boiled rice. Strain out the excess starch and layer it over the fish masala and let it cook in steam for 30 minutes.
Mix the rice and the curry and to incorporate all the flavors and serve with a mint, onion and coriander raita 💫
