Chocolate cake ( eggless)

Ingredients:-

1cup sugar
1/2 cup water (luke warm)
1/2 cup milk (luke warm)
2 tbsp vinegar
1/ 2 cup vegetable oil
1tsp vanilla extract
1 and 1/4cup all purpose flour (maida)
1/2 cup cocoa powder
1tsp baking powder
1/2 tsp baking soda
1 pinch salt

Instructions :-
Pre heat oven at 350'f
-Mix water ,milk and vinegar and set a side
- in a separate bowl mix baking power.. baking soda and maida ,salt and cocoa powder.
- mix oil and sugar together really well
-add vanilla extract
-now add milk mixture to sugar and oil mix and mix it really well
-slowely add maida mix and preapare a smooth batter
-If batter is not smooth add 1 or 2 tbsp of warm water to get smooth consistency.
-grease a baking pan with lil oil and dust with some flour to preven sticking the cake in baking pan
- now pour the batter in baking pan.
- now bake 25-30 mins.

WHITE SAUCE PASTA
Ingredients
200 gm pasta
2 tbsp butter
2 tsp minced garlic
2 tbsp flour (maida) (whole wheat flour can be used )
1½ cup milk
2 tsp dried parsley
1/2 cup heavy cream
1/2 mozzarella cheese(for extra cheesy)( cream cheese cam also be used for more creamy texture)
salt and pepper to taste
Red chili flakes (optional)
Instructions

Boil pasta.

Melt butter in a medium sauce pan, add garlic.Cook for 1 minute over medium heat.
Add flour and cook for an additional minute, stirring constantly.
Add milk, stirring constantly. Cook until sauce boils and thickens. Add cream and boil for 1 min.
Add parsley.
Add desired salt and pepper.
Add cheese Continue stirring until cheese has melted.
Add sauce to Pasta and serve hot.
Sauted Vegetables of your choice can be added.

Carrot Orange whole wheat cup cakes..

1 cup fresh orange juice
½ cup oil
1 cup grated carrots
1 and ¼ cup whole wheat flour
½cup all purpose flour
½ tspn baking soda.
½ tspn baking powder
½ cup sugar
Some orange zest

Mix all the wet ingredients really well and than add all dry ingredients slowly and mix to get the smooth batter. Pour batter into cupcakes mold.
Bake at 350'f for 18-20 mins.

DAL PARATHA with yogurt.

My lil one is refusing to eat dal from last 1 or 2 weeks. So how to make kids eat dal ? Dal is a very important part of our meal as we are vegetarian and we don't eat egg too. So this is the trick to make kids eat dal. And this is the way my mom used to trick me too because as a kid i never wanted to eat dal.

Here is the simple recipe for this yummy paratha.. - Boiled green moong and chana dal 1 cup. - Whole wheat flour 1and½ cup. - All masala ( garam masala.. turmeric powder.. chili powder.. amchur powder.. coriander powder.. salt.. ) some chopped green chili and coriander leaves - Prepare soft dough - Make parathas.
This can be prepared with any leftover dal. Just prepare dough with leftover dal and make parathas..

Saturday night = pizza night

Pizza dough

Ingredients

1 and1/3 cups warm water (between 100-110°F,

2 and 1/4 tsp yeast

1 Tbsp (15g) sygar

2 Tbsp (30ml) olive oil

1 tsp salt

1 cup all purpose flour and 2 and 1/2 cups whole wheat flour (spoon & leveled),(only whole wheat flour can be used. I have added all purpose flour for gluten)

Instructions

1. Put warm water into a large mixing bowl.

2. Add sugar and yeast, stir to combine.

3. Let mixture sit for 5-10 minutes, until it becomes frothy and bubbles form. (Cover the bowl properly to maintain warm of water)

4. Add olive oil and gently stir to combine.

5. Add 3 cups of flour and salt and make dough. Add more flour as needed to form a dough ball.

6. Transfer to a floured surface and knead into a smooth dough, adding up to ½ cup extra flour if needed.

7. Keep dough in a deep large greased bowl,cover it and set a side for half hr to 1 hr untill it doubles.

8. Once the dough has doubled take the dough and knead it to take out all the bubbles and devide the dough into 3 parts. ( it will make 3 medium sized pizza)

9. Preheat oven on 400'f.

10. Roll dough into your desired shape and gently transfer to your baking pan.

To ensure the dough doesn't form air pockets, use a fork to prick to the dough all around (gently so you do not poke holes all the way through the crust).

Add pizza sauce and toppings of choice!

Bake on the lower rack of your oven for around 15-20 minutes until the crust looks crispy and lightly browned.

Let cool, cut and serve.

Suji Handvo..

Ingredients

2 cup semolina

1cup curd/Butter milk

1 cup luke warm Water

salt to taste

1/2 tsp Cumim seeds

1/2 cup french beans finely chopped
1/2 cup bell pepper/capsicum finely chopped
1/2 onion finely chopped
1-2 chopped green chilli
1/ 2 carrot grated
2 tbsp chopped coriander

1 tsp mustard seed
1tsp white sesame seed
2-4 tbsp Oil

1/4 tsp bakig soda or eno

Method:

In a bowl mix sooji curd mix well add water salt, cumim seeds and make lump free batter,keep
aside for 15min.

- add all chopped veggies.
- add eno or soda whatever is available

In a pan add 1½ tsp oil once oil is medium hot add lil mustard seeds and lil sesame seeds pour half batter and cover with lid and let it cook on slow to med heat after sometime flip it over and brush oil on other side and let it cook. Cook untill golden brown from both side.

Handvo is ready serve it with any dip you like.

Taste best with mint chutney or coriander chutney.

Nankhatai...

Ingredients

3/4 cup of Besan
1/4 cup of maida / whole wheat flour
2 tbsp suji
1/3 cup soft butter
1/2 cup powdered sugar
1 pinch salt
1/4 tsp baking soda
1/4 tsp cardamom powder

Process of making
Preheat oven at 350'f.
1.sieve besan , maida, salt and soda together.
2. Mix butter and sugar really well
3. Add flour mix to butter and make a stiff dough.
4. Make small balls.
5. Put them in baking tray in parchment paper. Press gently and cook for 12-15 mins.
Lrt it get cool completely to become crispy.

Pizza.. from scratch
Home made pizza dough
Home made marinara sauce

Here is the recipe for marinara sauce

MARINARA SAUCE

INGREDIENTS

2 tbsp extra-virgin olive oil

1/2 medium onion, minced

4-6 cloves garlic, sliced

2 med tomatos , chopped

1 cup tomato puree

1/2 tsp dried oregano

1/4 tsp red chili flakes ( optional)

Salt to taste

Freshly ground black pepper as per taste

1tsp pesto sauce (optional, I added to enhance the taste)

1tsp dried basil or 2-4 fresh basil leaves chopped

A large pan keep on medium heat add oil. Add onion and cook until soft.
Add garlic and cook another 1 minute.

Add chopped tomatoes and stir. Add Seasoning -oregano, red chili flakes, salt, and pepper and add basil. Now add tomatp puree.

Reduce heat to low and simmer until mixture has reduced slightly, about 5 minutes to get the desired consistency.
Sauce is ready. Let it cool before applying on pizza base.

KHASTA KACHORI
Kachori. A famous street food from north India. Here is my khasta kachori 3 ways.. this recipe is inherited from my grandma.
dry kachori some enjoy this with green chutney or some with raw onions or some likes to eat just like that.
2nd is kachori chat.. loaded with so many ingredients.
And 3rd one is dahi kachori.. which is my favorite.

Ingredients:-

-add cocoa powder in 1 part and give a good mix. If batter is not smooth add 1 or 2 tbsp of warm water to get smooth consistency.
-grease a baking pan with lil oil and dust with some flour to preven sticking the cake in baking pan
- now pour the both batter kn layer 1 by 1 adding 1 -1 spoon at a time
- now bake 25-30 mins.

Ingredients

For Mix Veg Balls: Mix vegetables (1/2 cup each of Cauliflower, Carrot, Cabbage and French Beans) finely chopped with chopper or grated.

Onions - ½ Cup finely chopped
Garlic - 1 Tsp grated
Green Chili - 1 Tsp finely chopped
Salt - To Taste
Pepper - To Taste
Corn Flour - 2 -3tbsp
Plain Flour/Maida - 2-3tbsp
Oil - To Fry

For Completing manchurian: Veggie Balls
Onion - ¼ Cup (Sliced)
Capsicum 1/2 Cup (sliced)
Spring Onion Greens - ½ Cup
Vinegar - ½ Tsp [Optional]
Salt - To Taste
Pepper - To Taste
Garlic - 1 tbsp
Green Chili - 1 Tsp
Corn starch - 1/2 tbsp
Soy Sauce- 1 tbsp
Red Chili Sauce - 1tbsp
Green Chili Sauce - 1/2tbsp
Schezwan Sauce - 1½ tbsp
Ketchup - 1½ tsp
Oil - 2 Tbsp

Instructions

Mix Veg Balls
Heat the oil for frying the veggie balls.

In a bowl, mix all the rest ingredients very well and quickly make the balls out of it. Now fry them at med flame until half done/crust forms.
Now increase heat the oil to high. Now and fry till brown. Transfer to a tissue paper.

manchurian:
Heat a pan with 2 tbsp oil in high flame. Add garlic and chili. Saute for a 1/2 min.

Add in the onions, capsicum Stir well and cook for a few secs.. Add salt and pepper to taste, soy sauce, chili sauce, red chili sauce, schezwan sauce, ketchup, vinegar and about 2 cup of water. Once the water is boiling.
(In a small bowl mix corn starch with some water)
Add corn starch mixture to boiling water slowly. First mix half and look the consistency. Add more as per desired consistency. Boil until gravy looks shiny.
Now put in the veggie balls and stir well. And let it cook for another 2-3 mins in low flame.
Garnish with spring onion greens and enjoy!

Chhena poda.. A famous dessert from Orissa.. if u r from orissa or u have ever visited orissa than you surely know this.. this is my favorite dessert from orissa from childhood... as mu roots belongs to orissa.

Here is the recipe for homemade chhena poda..

3 cups fresh chhena/ ricotta cheese
2 cup sugar
3-4 tbsp semolina/ suji
1tsp cardamom powder/ilachi powder

Mix everything together well.
Grease a baking pan with ghee. Pour chhena mix in baking pan.
Preheat oven at 200'C or 400'f and bake for 50-60 mins until golden brown.
