Shrimp 🍤 Fajitas 🤤
Super easy dinner in less than 30 minutes! What's on the menu at your house tonight? Is this something your family would enjoy? At first Izzy was saying "yuck" (phase she's in) but she finally agreed to try it and cleaned her plate 🙌 ✅

Ingredients
• 2 tablespoons fajita seasoning
• 1 pound shrimp peeled and deveined
• 2 tablespoons olive oil divided
• 1 yellow bell pepper seeds and membranes removed and thinly sliced
• 1 green bell pepper seeds and membranes removed and thinly sliced
• 1 red bell pepper seeds and membranes removed and thinly sliced
• 1 red onion thinly sliced
• 8 flour tortillas can use corn tortillas if you prefer
• 1 to 2 limes cut into wedges
For garnish
• shredded cheese
• sour cream
• guacamole
• pico de gallo
• cilantro
Instructions
• Preheat oven to 425F.
• Place sliced peppers and onions on the sheet pan. Drizzle over 1 tablespoon of olive oil and sprinkle over half of the fajita seasoning. Use tongs to toss to combine.
• Roast the peppers and onions for 10 to 12 minutes or until they start to caramelize around the edges.
• Push the vegetables to the sides of the sheet pan and add the shrimp to the middle. Drizzle on the remaining olive oil and sprinkle the remaining fajita seasoning onto the shrimp. Toss the shrimp with the olive oil and fajita seasoning and then lay them out in a single layer.
• Bake for an additional 10 minutes, or until the shrimp have fully cooked.
• Divide peppers, onions and shrimp between tortillas and squeeze 1 lime wedge over each serving. Top with garnishes of your choice.
It's been a busy day & I needed something fairly easily for dinner so biscuit & gravy it is! Daddy is on the nightshift so I put this in the insulated bowls to keep it warm until he gets up. Izzy starts back dance this afternoon too 🩰 atleast now I don't have to worry about rushing to get dinner done. 👌 I love functional kitchen items! What about you, what's your favorite?

Garlic 🧄 brown sugar chicken tenders with loaded sweet potatoes/baked potato & skillet corn is what we had tonight. I'm trying to get back in the routine of cooking dinner every night now that school is back in session.

Sis did a science experiment with Daddy and we took a nature walk in the woods behind our home. So far I am the only one sick 🙌 and hopefully it stays that way. I'm feeling good, so far I've had very mild symptoms. I'm grateful that I feel well enough to carry on & I'm so ready to be out of quarantine.
This evening we made a Chicken Zucchini Casserole (recipe below) & Double Chocolate 🍫 Peanutbutter Cake to celebrate back to school and well because Izzy wanted to blow out some candles! 😅📚🍎
How are you using up your garden veggies?
Ingredients 🧈
6 ounces boxed stuffing mix (such as Stove Top)
½ cup butter melted
4 diced zucchini (about 4-5 cups)
3 boneless, skinless chicken breasts cooked and diced
10 ½ ounces canned cream of chicken soup
½ onion diced½ cup sour cream
Instructions 👩🍳
Preheat oven to 350 degrees F.
In a large bowl, combine the stuffing mix and melted butter. Set aside 1/2 cup of the mixture for topping.
Add zucchini, cooked chicken, cream of chicken soup, onion and sour cream to the stuffing in the large bowl.
Spread zucchini mixture in an even layer in a 9 x 13 inch glass pan sprayed with nonstick cooking spray.
Sprinkle reserved stuffing mix on top and bake, uncovered, for 40-50 minutes or until cooked through and the top is golden brown.

I've been busy in the Kitchen this morning with Little Miss Priss 💁♀️🤪 We've made Zucchini bread/muffins and an easy Summer Zucchini & Squash Pasta that is delicious!!! Izzy said "MOM, this is the best pasta I've tasted!" 🤤

Ran across this the other day on SM and thought I'll give it a try. Well... it's a winner and being added to our dinner rotation. ✔ I decided to shred the Chicken to make ranch chicken tacos 🌮 😋 it would be delicious as is or you could do ranch chicken nachos!
What you need: 3-4 chicken breast, a stick of butter cut into squares and a packet of ranch dressing mix. Place butter squares on top of chicken breast then sprinkle ranch on top.Cook on low for 6 hours & enjoy! The ranch isn't overly strong either for the picky ones out there. 🙌👩🍳

How has your Memorial Day been?
My little kitchen helper assisted me in making Smoky BBQ chicken, deviled eggs, corn on the cob 🌽, mashed taters & smores dessert pizza. We didn't have any green olives so we used black olives instead because Izzy insisted the deviled eggs MUST have olives! Todders man 🤪
