Ingredients:
- 1 Egg
- 1Tbs Honey (we used a little bit more)
- 1Tbs Creamy Yogurt
(Again we had more probably put like 2Tbs)
-top with Blueberries
Mix all ingredients together
Put it in the oven at about 180°C for about 20mins.
Wait. ...
Now eat!!

We have been MIA on Instagram this week because we’ve had a very sick boy.
For those that didn’t know - Mateo was admitted to hospital during our holiday in Gold Coast. He woke up on Tuesday with a fever, yellow skin and eyes (jaundice), extremely lethargic and refused to eat.
We were immediately admitted to emergency and after multiple blood tests and ultra sounds, Mateo is diagnosed with G6PD Deficiency. G6PD is a critical enzyme for the proper function of red blood cells. When people with this deficiency come in contact with certain food, medicine and chemicals their red blood cells begin to break down prematurely and develop anaemia.
In Mateo’s case, he ate a packed of roasted fava beans. Due to the reaction, he had extremely low red blood cell count which was dangerous as his body was not able to get enough oxygen so he required immediate blood transfusions.
This is all new to us and still learning about this but fortunate to say Mateo is recovering very well and we are now making our way back to Melbourne.
We are forever grateful for the team at Gold Coast University Hospital especially the doctors and nurses that took care of us at ER and Children's Ward. Thank you for going above and beyond to keep him comfortable and entertained during his stay.
To those who donate blood, you guys are the real MVP! I have never donated blood before but I will start now, it’s my way to give back and hope to save someone’s life.
