40g Prosciutto

Method
1. Toast the slice of sourdough. Spread cranberry sauce on top.
2. Lightly toast the walnuts in a non-stick pan until golden (optional).
3. Top with prosciutto, brie, balsamic glaze, rocket and chopped walnuts.

As promised.....the recipe for the Meditteranean Salmon Tray Bake๐

Ingredients
120g Salmon - No Skin (weighed raw)
1/4 tsp Italian Mixed Herbs
1 Clove Minced Garlic
150g Potato
25g Olives
25g Feta Cheese
50g Cherry Tomato
1 Lemon Wedge
Method
1. Preheat the oven to 180ยฐC. Slice potatoes and season with salt and pepper. Transfer to a lined baking tray and bake for 20 minutes.
2. Season salmon with salt, pepper, garlic and Italian herb mix. Add salmon, olives, feta (if listed) and cherry tomatoes to the pan with the potatoes and cook for a further 12-15 minutes or until salmon is cooked to your liking.
3. Serve with a lemon wedge.

40g Pizza Sauce
50g Reduced Fat Salami
30g Burrata
15g Baby Spinach
5g Jalapenos
Method
1. Preheat the oven to 220ยฐC.
2. Top pizza with all ingredients (except honey and chilli flakes). Place on an oven-proof tray and bake for 10-12 minutes or until the cheese has melted and the base is crispy.
Melt the honey and combine with the chilli flakes. Drizzle over the cooked pizza.

120g Chicken Breast (weighed raw)
150g Sweet Potato
100g Broccoli
20g Basil Pesto
1 Lemon Wedge
Method
1. Heat the oven to 200ยบC.
2. Dice the potato and place it in a lined baking dish. Season with salt and pepper and bake in the oven for 15-20 minutes or until softened.
3. Dice the chicken and coat it in the pesto. Remove the tray from the oven and add the chicken to the tray with the chopped broccoli. Toss everything together to combine the flavours.
4. Return the tray to the oven and cook for 15-20 minutes or until the chicken and vegetables are cooked. Serve with the lemon wedge.
