Lovage. Dried a bunch to have on hand. It smells absolutely amazing as it dehydrates. Next I’ll strip it off the main stem and put it into jars.

Homemade chocolates….so yummy. Not the best picture but they taste incredible. Only 3-5 ingredients and whatever flavors you want to add such as nuts, dried fruit, coconut etc…. I like to show that- Healthy food is doable for everyone. Even on our busy schedules.

I was told watercress was hard to grow here. I have not had this be the case with it. This plant is amazing, from what I understand it contains 9 essential amino’s, vitamin A, vitamin C, antioxidants, and lots of minerals. This plant got left when we went on vacation, was not watered and went to seed but is recovering just fine. Not a problem to grow as you can see. Kids even broke the planter box when they were moving it to make their bug collection😂. I’ve been eating it on salad, sandwiches, soup…..yup it’s yummy.

If this isn’t beautiful, I don’t know what is. A fresh heirloom tomato straight off th. One. Ripe to perfection, soft and juicy. Fresh spearmint to calm the tummy, and aid digestion.

I made fresh lemon basil dressing. It is fantastic. Friends, kids and family all love it. This time I added fresh lemon verbena in addition to fresh squeezed lemon juice. Yummy!
Harvesting, drying, and using fresh herbs. This is mullien, fresh lemon verbena I picked and will take the leaves off to dry along with peppermint for today.

Tried something a little new to use some zucchini. Zucchini brownies! They turned out pretty good. I put nut butter in and they did turn out chewy. More cake like, but still tasty. I made them vegan but adjusting and adding eggs is easy. Used turbinado sugar and a little real maple syrup. I will try it again without nut butter and a few things to see how they turn out too.

Wonderful time to make pesto. Everything is on for it in the garden.

Fresh basil, parsley, mint…..

Any kind you want to make.

This I used fresh raw sunflower and pumpkin seeds, lemon basil, fresh parsley, fresh garlic cloves, organic extra virgin olive oil, Himalayan salt, fresh squeezed lemon juice, and blended it. It can be raw vegan or you can add Parmesan and Romano cheese to it. ( I even added some fresh marshmallow leaves from the garden to try in it and it turned out great!)

Ate it on a fresh salad with garden tomatoes.

Salad burnet
A perennial plant that has leaves that taste like cucumbers. I’ve used the leaves in salads and the flowers as garnishes. Many traditional herbal uses also. It’s a great garden addition for fresh greens and a variety of herbal uses. (Make fresh vinegars with the flowers). This plant is getting ready to flower in the pictures.

I still have some comfrey plants, strawberry plants, chamomile, dill, cilantro, and many others. It’s so rewarding to pick what you want fresh out of your own pots, containers, and garden.

You can use the leaves And eat the strawberry.

Eat the berries and you can use the leaves of organic strawberries and strawberry plants. Strawberry leaves contain vitamin C, potassium, and calcium. Because of this they have been used to for digestion, colds and flu and for their antioxidant properties.

Today is the special Rutger tomatoe. An heirloom tomatoe with the perfect balance between acid and sugar and thin skin. Also known as the Jersey tomatoe.

Ok friends today is Dill!

Also known for and used in yummy salad dressing, sauces, flavoring and garnishes. Used with seafood and other meat dishes along with any 🥗 vegetable. It attracts butterflies in the garden. Just touching it makes your hands smell amazing. It has historically been used to help with digestion and gas. Dill contains numerous vitamins and minerals some of which are vitamins A,C,D, and the minerals Zinc, and potassium amongst others. Such a wonderful herb. You can use the fresh leaves, or seeds. Full of course is a must have for making amazing homemade pickles! It even has been studied to assist in regulating blood sugar. If you let it go to seed it will regrow wherever a seed lands.

Chamomile is a lovely herb to have around. It attracts useful insects to your garden, it makes a soft ground cover if left to spread, and is used traditionally used in teas at night for calming and aiding sleep. Others have used it to calm inflammation internally or on the skin, for gas and digestion complaints. Look up what chamomile is used for and make sure you don’t have any allergy to it and see what a wonderful addition this plant can be to your herb garden. French Toast-Vegan

1 c milk of choice (Almond, etc)
1/4 c cornstarch (Non- GMO , Organic)
1tsp fresh ground flax seed
1/2 tsp baking powder (without aluminum)
1 tsp ground cinnamon
2 tsp (maple syrup, agave or sweetener)
1 tsp vanilla

Fresh whole grain sourdough taste amazing. We use toppings on top such as fresh fruit, homemade apple, pear butter, jam, nut butter, coconut cream, and fresh chopped nuts. So Yummy!

You can add any other spices for additional seasonal or fun flavors like orange, cardamom, pumpkin spice, or make your own chocolate sauce(with raw cocao, coconut oil, and a sweetener of choice).

Yummy salad and treat ideas.

Quinoa sprouted bread: gluten free

Quinoa bread: you could dehydrate it too instead of baking. that’s what most people do for sprouted grain breads- dehydrate it in the oven or a dehydrator. You can also add other grains like teff, amaranth, buckwheat, and gluten free oats.

This one uses the oven.

Soak quinoa over night. Any color of quinoa.
Strain in the morning. It should have sprouted over night.

Add sea salt with color or Himalayan salt. Spices or flavors or seeds. Such as everything bagel mix, sesame seeds etc. blend in food processor. It will get milky white.

Place on lightly sprayed parchment paper. Add additional toppings/spices or flavors to the top and bake at 450 degrees for 15 minutes.

Turn over and take off parchment paper. Let cool.

Top with avocado, hummus, or if you eat dairy- cottage cheese, sandwich toppings lime tomato and basil with pesto! So delicious.

My kids where having a hard time eating salads so I decided to make homemade croutons so that the kids would enjoy eating salads again.

Dice/cube any bread you want into small cubes.

Either mix oil and herbs in a bowl and then pour over bread, or just drizzle oil, or butter over bread and then sprinkle seasonings on. I have done just olive oils, or a blend of butter and olive oil. Then sprinkle over it what flavors of herbs you want your croutons to taste like: Italian seasoning, garlic powder, onion powder, parsley, and if you eat dairy you could add Parmesan. Salt to taste. Layer in single layer on cookie sheet.

Bake at 355-375 degrees for 25 minutes, stir once while baking. I usually do it around 12-15 minutes.

Bake till golden brown and take out of oven and let cool.

Last nights Mother’s Forum turned out wonderful. We discussed nutrition ideas for tips and tricks to thorough the holidays and ways to stay healthy through the holidays while we are visiting relatives, friends and others we love. Sometime there is a lot of pressure when it comes to socializing around food. We discussed ways to prepare ourselves and families before we get there so that it is fun for us and we can still have nutritious meals and snacks! For cranberry sauce- if you want it chunky or smooth?

Homemade Gummies

Basic gummy recipe
3/4 c juice or tea of choice
Make a strong herbal tea with lots of flavor- I add essential oils at the end too like citrus.
Or we have made it out of wild cherry juice concentrate with elderberry syrup.

1-3 tbsp honey or maple syrup etc.
5-6Tablespoons of gelatin- can use other like agar agar, look for other recipe though.

Warm juice after adding gelatin and stir. It will be thick. Just dissolve the gelatin and then add oils.
Test one in mold- depending on how hard you like them and how much sweetener, you may want to add a scoop more of gelatin. Make sure you do it while it is warm and runny because it will harden.

Dropper into silicone molds.
Place in refrigerator till cool.
Pop out and store in cool dry place👍 so good!

Smooth Cranberry Sauce

You can make smooth cranberry sauce by simmering cranberries in 100 % juice and honey till thick and soft and blend when cooled off a little. (1 bag of cranberries, and 1/2-1c honey.) add 1-2tsp of vanilla if you like that flavor. Then chill to have it go firm.

I usually add a tad of stevia so it sweetens and I don't have to use so much honey.

Cranberry sauce:
Chunky I put cranberries, (dates- chopped if you want) apples diced small, can add oranges or orange juice concentrate for flavor and apple juice for liquid and honey. Simmer till pectin from apples go thick and everything is soft.
1 bag of cranberries, 2-3 apples, it can take a lot of honey to get it sweet, start with 1/2c-1c, 1/4 c OJ concentrate or orange juice, enough apple juice to add liquid to simmer.

It thickens when it cools.
