🍋🍋🍋MINI LEMON BUNDT CAKES WITH LEMON ICING RECIPE🍋🍋🍋

🔽 Ingredients

For the cake:

4 ounce unsalted butter

3/4 cup granulated sugar

Zest of 2 lemons

1 cup all-purpose flour

1/4 teaspoon kosher salt

1 teaspoon baking soda

1 large egg

1 cup sour cream

1 teaspoon lemon extract/lemon juice

🔽 For the icing:

2 tablespoon lemon juice ((about 1/2 lemon))

1 1/2 to 1 3/4 cup powder sugar

🔽 Instructions

Let all refrigerated ingredients come to room temperature, that includes butter, egg and sour cream.

Preheat oven to 350°F.

Measure out flour, salt and baking soda into a small bowl, mix well to distribute thoroughly.

Add sugar and lemon zest to the stand mixer bowl, rub together until fragrant and sugar turn a light yellow.

Add soften butter to the sugar mixture and beat with the whisk attachment until combined.

Add egg, sour cream and lemon extract to the butter mixture and beat again until combined.

Reduce mixer speed to low, and slowly add the flour mixture, mix only until the flour is incorporated to avoid over mixing.

Spray the mini bundt pans with a thin layer of nonstick cooking spray and divide the batter evenly among four pans.

Tap the pans to level the batter.

Place the pans on a large baking sheet and bake for 28 to 29 minutes in the middle oven rack.

Check doneness by inserting a toothpick in the middle of the cake, if the toothpick comes out clean, it is done.

Remove from the oven, and place the bundt pans on a wire rack to cool.

When the bundt pans are cool enough to touch, flip them over and tap to loosen the bundt cake onto the wire rack, let cool completely before adding icing.

To make icing, whisk together the lemon juice with powder sugar, adjust the amount of powder sugar to achieve the desire texture of the icing, thinner icing at 1 1/2 cup and thicker icing at 1 3/4 cup.

To ice the bundt cake, flip them over and dip them into the bowl of icing, then place them back on the wire rack to let the icing harden. Garnish with blueberries if desired.

One of my favorite recipes. I just love anything with lemon and this is so easy to make! 💕🍋

Today's recipe called "Covrigi". A Romanian baked goods similar to pretzels 🥨 🇷🇴
Really easy to make & delicious 😋

Ingredients:

425 gr flour/ 20 gr yeast/ 75 ml water/ 120 ml warm milk/ 40 ml oil/ 25 gr butter/ 1 egg/ half teaspoon salt/ 50 gr sugar

🔽Steps:

1. In hot milk we put the yeast, with a teaspoon of sugar. We leave it for 5 minutes to activate the yeast. In another big bowl, we put the flour with only egg whites, and the rest of the ingredients. Add the yeast and milk, then knead until a smooth dough is formed.

2. Leave the dough until it doubles in volume. Then take from the dough a ball the size of a small egg and spread it, like a 1 cm thick cord. To form a covrigi we need 2 pieces. We knit them, and then join them to the ends. Link the two ends together until a circle is formed. You will have around 10 pieces of covrigi.

3. Put the covrigi on a tray with baking paper. Grease it with the yolk mixed with 1 tablespoon milk. Sprinkle with black sesame or sea salt. Preheat the oven to 180 degrees. Bake 20 to 25 minutes until ready.

Enjoy! 💕

First recipe is dedicated to my mom 👩‍👧This is her favorite dessert "Walnut Brownies". Something you'll enjoy with your loved ones, or maybe all for yourelf! 😉

⬇️ Recipe:

500 g sugar/ 100 g walnuts/ 200 g butter/ 50 g cocoa/ 2 tablespoons cocoa/ 200 g flour/ half cup milk/ 1 teaspoon baking powder/ 4 eggs/ 1 tablespoon vanilla

1. Place the sugar, butter, and 2 tablespoons cocoa in a medium-sized saucepan, along with 1/2 cup of the milk and whisk to combine into a thick paste in low heat until it starts to boil. Remove 15 tablespoons(this is the cocoa sauce) from the cocoa batter, leave it aside and let it cool.
2. Separate egg yolks from Egg whites. Add the cocoa batter in a large bowl, add the egg yolks gradually and stir.
3. In another bowl, whisk the egg whites until it looks fluffy, almost pillow-like quality.
4. Place flour, paking powder, 50 g cocoa, vanilla, and chopped walnuts in a large bowl and mix. Now you should have 3 bowls with different mixtures.
5. Gradually add from the egg whites and flour/walnuts mixture into the cocoa batter bowl and stir gently. Add all the mixtures until you have a thick cocoa batter.
6. Pour batter into prepared baking pan. Bake at 180° for 40 to 45 minutes or until a knife inserted into center comes out clean.
7. Pour in the cocoa sauce (15 tablespoons) on top and let it chill.

My Walnut Brownies is a must-try for chocolate lovers. 😍😋
