Going for a veggie scramble for breakfast today!

It's so tasty that even our friends who are visiting and their children loved it.

Why your cheeseburger might be spiking your blood sugar levels more than bread, pasta, and rice!

A diet high in saturated fat has been shown to increase blood sugar spikes more than a diet high in carbs and sugars.

Here's what happens?

Saturated fat from your diet stacks up inside your organs and cells, hindering the sugar in your blood from entering cells and being turned into energy.

This leads to insulin resistance which can become diabetes. ๐Ÿ“ˆ

Until we had more advanced MRI technology we couldn't see this phenomenon.

As the fat, especially saturated fat, increases in the diet, so do blood sugar spikes. Lowering fat intake can help regulate blood sugar levels.

Because fat often accompanies sugar, we blame the sugar and not the stealthy culprit at its side.

What we're seeing is that people have more balanced blood sugar levels from eating healthier fats from avocados, nuts, and olive oil, while avoiding saturated fats found in meat, milk, cheese, fast food, and highly processed foods.

Overall, a whole-food, plant-rich diet of high complex carbs, low fat, and moderate protein is showing the best results in reversing the root causes of pre- and type 2 diabetes, while also increasing insulin sensitivity in type 1 and 1.5/.
