This recipe is amazing!!! I used the recipe from the Pinterest link in my previous post. You let the sponge sit for 18 hours and then shape and rest while your Dutch oven is preheating.
This is the easiest loaf of bread I have ever made ❤️

Quiche- quick easy and so delicious!! It’s a great way to use up leftovers or clean out the fridge.... you can use just about anything for the filling.
This is a spinach mushroom and Swiss cheese quiche... that happens to be my favorite!!

Today’s project- Homemade Cavatelli!
I have made these several times - however this time I learned a new trick from my friend Mason!
Try using a pasta board to roll the cavatelli.

Warm Double Chocolate Donuts😍❤️😍

Gabby found this recipe and we decided to give it a try- I followed the Pinterest recipe posted in the comments exactly. The “glaze” is more like a frosting- next time I will make my usual ganache !!

Chicken parm! ❤️

Add to the list things Steve doesn’t care for.... spaghetti. We served our chicken parm with ravioli.

Dip chicken breast in egg and then coat in Italian Style Panko bread crumbs. Shallow fry until golden brown. We finish these in the oven so don’t worry about ensuring that they are cooked thru at this point. I cooked these in my counter top convection oven at 375- fan on until about internal temp reached 145 degrees. At that point I added tomato sauce and fresh mozzarella and finished cooking till internal temp reached 165!

Pork roast with apples- When you go apple picking over the weekend and end up with TONS of apples. I figured I should try to use up as many as I can.

This was a 2.5 lb pork loin roast. I sprayed the crock pot with some olive oil mist. Sprinkled the meat with S&P, onion and garlic powder. I added 3 chopped up apples and sprinkled about 4 TBSP of light brown sugar on the top and a generous sprinkle of a apple pie spice blend.
Cover and cook 8 hours on low. I then used a stick blender to purée the apples.
I served this with mashed sweet potatoes and roasted patty pan squash ❤️

Cold weather is here! Which means it’s great soup weather ❤️. There is no real recipe here... just more of a technique.
I love the store made rotisserie chickens. I usually pick one up at Costco for 4.99. We can get several meals from one chicken.
For an easy soup- I remove all of the chicken from the bones and add the bones and skin to a pot. I add an onion just cut in half a few stalks of celery and some carrots. While I still have fresh herbs from the garden- I added fresh parsley, thyme, rosemary and sage. And Salt and Pepper.
Cover with water and simmer for several hours. I then strain everything out and add the meat from the bones back to the pot and some of the additional meat if desired. I cut up some carrots and celery and simmer those until tender. Serve with any type of noodles or rice!
Because your making this stock with the bones and skin- you develop a very nice rich stock. !!

Meatballs!!!!

My meatballs are quite popular with my family. They are my daughters favorite!!! For the longest time... it was the only way should would eat beef.

When I cook I tend to just add things into a bowl and if it needs more of something... I tend to adjust as I go. We had no recipe written for these. So we tried to measure things today as we were cooking.
Thank you to my daughter Gabby who helped write the recipe as we were working in the kitchen. She also came up with our new fancy recipe cards!!

The key to these meatballs- do NOT over mix or over roll.
I always cook them a day or 2 later for about 8 hours in a crock pot with sauce. They will give you a very moist meatball- which my family prefers.

Have you heard the buzz around CSA?

CSA stands for Community Supported Agriculture. At the beginning of the growing season customers purchase a “share” which provides the farm with the money needed to purchase seeds, equipment and other supplies and then in return you receive a weekly harvest right from the farm!
My family purchased a weekly flower share and a 1/2 vegetable share which is perfect for my family of 3. Every week I am amazed by the beautiful flowers and veggies I receive. This organic farm plants flowers to encourage pollinators to visit!!

Relatively soon the farms will start opening sign ups for the spring growing season! If you haven’t checked your local area for farms that use this business model.... give it a try!! You won’t be disappointed!

Even my dog Sparky is amazed by this weeks flowers!! ❤️

Dinner in a flash....

Today I had a case of the Monday Blues. I wanted to make something quick and easy... and I had not taken anything out to thaw for dinner. Que the Ninja Foodie!
I usually hunt around on various pages or on Pinterest until I find something that looks interesting knowing I will add tweaks to make it my own. My picky bunch signs off on new things to try. I sent a picture of this dish to my husband Steve and he said “looks good”.

Disclaimer- Steve isn’t a big pasta fan and my daughter Gabby doesn’t like hamburger unless it’s in a taco shell. So I knew this was risky....

This however was A KEEPER!!! They all liked it! ❤️❤️❤️

My changes- no onions. I love them however Steve is anti- onion and unless I can get away with hiding them in a dish- I usually don’t even try. In my version I added 1 tsp of dried minced onion and a few dashes of onion powder. Also I used 3 cups of water and a heaping TBSP of better than Bouillon Roast beef base in lieu of the beef stock.
Steve please stop reading here.....

After cooking I added a generous sprinkle of Trader Joe’s mushroom sprinkle and mixed it in well. If you haven’t tried this flavoring it’s a MUST! ( Steve also “hates” mushrooms... 😉 )

Here is what I call a 1,2 meal.... 2 meals from all the same ingredients!! Wednesday night we made Gabby’s favorite- rotisserie chicken!! I have a counter top oven that has that feature so it’s quite easy!! You can certainly purchase a pre- made from your local grocery store. I served this with simple mashed potatoes, corn and sautéd carrots and green beans.
After dinner- and when the chicken was cool- I picked all the chicken meat and added it to a container with any leftover veggies. We had some corn and just a few carrots left. So tonight.... I made a leftover chicken pot pie! It’s super fast and easy. Click on the pictures for the recipe and steps!

Butternut squash soup made in a cooking blender and turkey sandwich on grilled Daves killer Bread with Gouda and apple butter whiskey BBQ sauce.

The soup is so fast and easy to make - after roasting the squash - scoop into the blender, add a peeled chopped apple, chicken stock, a few baby carrots, salt, pepper and brown sugar to taste. If you don’t have a cooking blender you can certainly make this in a pot and then purée with a stick blender or food processor.
