Keto Brocolli & Cheddar Soup

- 2 tbsp butter
- 1/2 tsp garlic powder
- 1/3 cup white onion
- 1 cup broccoli cut into bite size pieces
- 2 cups chicken broth
- 1 cup shredded Cheddar cheese
- salt and pepper to taste
- small handful bacon crumble
- 1 tbsp cream cheese
- 1/4 cup heavy whipping cream

Directions:
- in a pot melt butter with garlic and onions
- add in brocolli and chicken broth
- melt cream cheese in microwave 90 seconds and then add to pot with heavy whipping cream, bring to a boil
- add in salt & pepper
- turn heat off and quickly add in shredded Cheddar cheese
- top with bacon crumble

Keto Meatball Casserole

INGREDIENTS
For the meatballs:
2 lb ground beef
1/2 cup grated parmesan cheese
3/4 cup shredded mozzarella cheese
1 egg
1/4 cup grated onion
3 garlic cloves, minced
3 Tbsp chopped fresh parsley
1/2 tsp onion powder
1/2 tsp garlic powder
1/2 tsp Italian seasoning
Salt and pepper, to taste
For the casserole:
1 (24 oz) jar favorite marinara sauce (I prefer Rao’s)
1/2 cup ricotta cheese
1/2 cup shredded mozzarella cheese
2 to 3 Tbsp fresh basil, chopped

INSTRUCTIONS
*Preheat oven to 400 degrees F.

*To make the meatballs: In a large bowl combine ground beef, cheeses, egg, onion, garlic, parsley and seasonings, mixing well.

*Use a cookie scoop to form the meatballs so they are all the same size, rolling them around in your hands, and arrange on a baking dish or cookie sheet. You should get about 15 to 16 large meatballs.

*Bake meatballs for 20 to 25 minutes, or until fully cooked. Remove meatballs, draining any excess grease, and arrange cooked meatballs in a baking dish.

*Pour marinara sauce evenly over the meatballs and spoon ricotta cheese on top. Sprinkle with mozzarella cheese and bake in the oven for about 15 minutes until cheese is melted and bubbly.

*Remove from oven and top with fresh basil. Serve and enjoy!

I took ground beef out today and had no idea what I was going to do with it. Ended up making a stirfry. Ground beef, garlic, red pepper flakes, green onions, brocolli, mushrooms, red and orange peppers, and a bit of shredded carrot. I added a few hot peppers/jalapenos and some sour cream on the side.

My kiddos loved this also, cleaned their entire plate! πŸ₯¦πŸ₯•πŸŒΆπŸ„

Keto Banana Bread

Ingredients:
1-3 medium overripe bananas, mashed
3 large eggs
2 cups almond flour
1/4 cup olive oil or coconut oil
1 tsp baking soda
1 tsp sweetener (I used monkfruit)
Cinnamon
Unsweetened chocolate chips
Butter to coat the pan

Directions:
*Preheat oven to 350 F
*Beat eggs in bowl, add mashed banana and olive oil. Mix.
*Add almond flour, baking soda, sweetener
*Combine until well blended, add in chocolate chips
*Coat loaf pan with butter and add mixture
*Bake for 60 min, test with toothpick (if it comes out clean, it's done!)

Eggs over Ham 🍽

Last night I was contemplating what side dish I wanted to make with the ham I had in the crockpot. This is what I came up with and my family devoured it! Even my kids ate every last bite.

*Place thawed ham in the crockpot on low for 4-5 hours, I rubbed mine with a brown sugar replacement by

*When ham is almost done, cook your eggs (I did mine sunny side up so the gooey-ness would go into every bite of ham when I cut into it with my fork)

*Shred your favourite cheese (I used marble) and place on top of a sliced piece of your ham, add your eggs on top of the cheese.

*I added a little bit of pepper and chives to mine 😁

Keto Nachos


I used a bag of Loaded Taco and a bag of Nacho Cheese for these. Ground beef, red & orange peppers, green onions, jalapenos, sour cream and salsa on the side.

Keto Ground Beef Casserole

Ingredients Used:
*Medium Ground Beef
*Taco Seasoning (I used chili pepper, garlic powder, onion powder, cumin, paprika, oregano, salt & pepper)
*Red, orange & yellow peppers
*Mushrooms
*Green Onions
*Diced Tomatoes
*Cheddar Cheese
*Chives

Directions:
*Preheat oven to 350 fahrenheit
*Cook ground beef in skillet with taco seasoning until browned
*Add in peppers, mushrooms, green onion & diced tomatoes
*Place into casserole dish and top with shredded cheddar cheese & chives
*Cook in oven for approx 10 min until cheese is melted
*Serve with full fat sour cream if desired.

Loaded Cauliflower Bake

Ingredients:
1 large head cauliflower, cut into florets
2 tbsp. butter
1 cup heavy cream
2 oz. cream cheese
1 1/4 cup shredded sharp cheddar cheese, separated
Salt and pepper to taste
6 slices bacon, cooked and crumbled
1/4 cup chopped green onions
Chives

Directions:
*Preheat oven to 350Β°F.

*In a large pot of boiling water, blanch the cauliflower florets for 2 minutes.

*Drain the cauliflower and dry it using paper towels.
In a medium pot, melt together butter, heavy cream, cream cheese, 1 cup of shredded cheddar cheese, salt, and pepper until well-combined.

*In a baking dish, add cauliflower florets, cheese sauce, all but 1 tablespoon of crumbled bacon, and all but 1 tablespoon of green onions. Stir together.

*Top with the remaining shredded cheddar cheese, crumbled bacon, chives and green onions.

*Bake until the cheese is bubbly and golden and the cauliflower is soft, which should take about 30 minutes.

*Serve immediately and enjoy.

Chicken Pot Pie

I used a recipe from Rachel Ray to make this delicious "soup". I know the carrots don't make this "keto" but I just limited myself to how much carrots I actually ate, but my family enjoyed this!

Ingredients:
1 onion
2 small ribs celery with leafy tops
1 carrot
1 leek
3 tablespoons butter
1 large fresh bay leaf
A small bundle of parsley and thyme, tied
Salt and white pepper or fine black pepper
A little freshly grated nutmeg, 1/8 teaspoon
About 3 cups chicken stock
1 rotisserie chicken, about 3 pounds
About a tablespoon of heavy cream or creme fraiche
Juice of 1/2 a lemon

Directions:
*Preheat oven to 375 degrees F. Have rack 1 rung up from center in oven.

*Gather your ingredients.

*Halve the celery and carrot lengthwise and chop. Halve the leek, trim top tough greens and roots and run under cold water while fanning the leek to release grit. Shake the leek of excess water and thinly slice. Peel and slice planks off the apple around the core, then stack and dice 1/4 inch.

*Heat a Dutch oven or large deep skillet over medium to medium-high heat. Melt butter and when it foams add the onion, celery, leek, bay and herb bundle and season with salt, pepper and nutmeg. Cook to soften, 8 to 10 minutes, partially covered and stirring occasionally. Add stock and whisk in to thicken a bit.

*Separate the chicken from the bones and skin and pull meat. Add to sauce to reheat. Remove bay and herbs. Remove chicken from heat and stir in cream and lemon juice.

*Serve the chicken and vegetables in bowls.

Keto Cheese Taco's

-shredded cheese of your choice, line a baking sheet with parchment paper, place 1/4 cup of cheese in little piles on parchment paper or silicone mat
-put baking sheet in oven at 350 for 5 to 7 min, until cheese is melted and edges start to brown
-add toppings & meat of your choice, add sour cream and keto salsa if desired

Bacon & Mushroom smothered Pork Chops

-6pcs bacon cut into small pieces, cook in skillet on stove until done, remove and set aside on plate
-4 to 6 boneless pork chops seared in same pan with bacon grease, approx 4min per side, remove and set aside on plate
-sliced mushrooms with 2 cloves minced garlic, cook in same skillet until soft.. approx 5 min
-add 2/3 cup chicken broth and 1/2 cup heavy cream, bring to a boil until all mixed well, then reduce to low heat
-add pork chops and bacon back into skillet and cook until pork chops are done

Serve with mushroom and bacon over top of the pork. So delicious.

Happy New Year! I'm a few days late, but late is better than never right?!?! Hope you all had a wonderful holiday celebrating with your family and friends. I'm sure some of you have set some new year's resolutions - whether it be to get healthier, make more money, get a new job, spend more time with friends and family, better yourself... whatever it may be, 2020 is a clean slate.

It is important to keep your electrolytes balanced while doing keto. You need sodium, potassium and magnesium especially to avoid getting the keto flu. If you haven't heard of keto flu please do some research on it before starting. πŸ’•
