Created a meal today that was made from 4 ingredients from our garden: beets, beet greens, tomatoes, okra.
Today’s harvest, some okra, bunch of green beans and two beets.
Canned 50 pounds of potatoes today. I’ll be in the bed for the next couple of days if anyone is looking for me!😀
We are so excited tonight! My niece Becca has started a quail brood and the first one has hatched tonight. By the end of the weekend we should have an incubator full of hatchlings ready to go into the brooder pen!

Tragedy on the homestead today. This morning the gate to one of the quail cages was discovered open with two quail running loose. Unfortunately, we weren’t quick enough to save one of them from a dog attack. Not sure which one got the bird first but it was a loss.
The birds got a new home this week. We now have them in a single and a double decker airy pen. And guess what?! We have eggs!!!!

A small but good potato harvest. Time in the calendar for a third planting!
Got about 15 pounds of produce this morning. Lots of tomatoes and winter squash is coming on.
So it took a long day’s work but we canned 12 quarts of thick tomato sauce.

The year 2020 on the homestead....I labeled the celery as zuchini. Wouldn’t that be a disgusting surprise. I wonder if I have too much going on. 😜

So it’s been 2 weeks today since the quail hatched. They are growing like weeds. It’s fun to watch them try to get their feet and wings under them. They are quite ugly right now, covered in pin feathers. Supposed to be one more week to put on full feathers and be ready for the outside pen. Here is my redneck version of a brooder.
Thanks to Ginger and the girls we froze 12.5 quarts of peaches today!
Preserving bell peppers: When you have a lot of peppers (maybe they were on sale at the store) there is no better or easier way to preserve them for later use than freezing. Simply cut in strips or chop and freeze flat in a ziplock freezer bag. Pull them out later and use in soups, sauces, fajitas and more.
Today’s kitchen chores: zucchini bread out of huge zucchini and cutting peaches for freezing and future jam making.
Today’s harvest. The yellow squash are still producing but the powdery mildew is coming on strong. Trimming them up from the bottom helped the other conditions. And we finally have PEA pods coming in!
