Egg Yolk Pasta RECIPE π
500g 00β Flour
400g egg yolks
Yellowfin tuna, szechuan pickled cucumber, ponzo, lime, peanuts π£
Japanese Milk Bun Recipe π
Tangzhong:
60g Cake Flour
81g Water
180g Milk
Add all the ingredients into a pot and heat. Cook the tangzhong for 1 - 2 minutes until a paste starts to forms. Remove from the heat and place in the fridge to cool.
Dough:
960g Cake Flour
20g Active Yeast
9g Salt
120g Sugar
3 Eggs
360g Milk
126g Unsalted Butter, diced and softened
(Tangzhong)
Combine flour, sugar, salt and yeast into a mixing bowl. Add the tangzhong and mix for 1 minute.
Add the milk and mix, directly after milk add the eggs and mix at medium speed until a dough starts to form.
Slowly start adding your diced butter little by little while the bread is kneading, waiting for the butter to be mixed into the dough before adding the next bit of butter.
Continue needing for another 10 minutes.
Remove from the mixer and knead on a clean surface for another minute, roll into a ball and let proof in a oiled bowl until double in size.
Portion the dough into preferred sizes, let proof for a second time and bake at 180βC for 20 minutes or until golden brown.
Note: Brush with milk before baking.
