Keto casserole.
Ingredients:⁠
3lb cubed chicken⁠
1lb diced bacon⁠
2cups shredded Colby jack⁠
2 cups broccoli florets⁠
2cups riced cauliflower⁠
1 large yellow onion diced⁠
1 poblano pepper diced⁠
2 tbsp minced garlic (divided)⁠
Ranch dressing⁠
Salt and pepper⁠
Celery seed⁠
Chili powder⁠
Cumin⁠
Oil

➡️ Base Instructions:⁠
Medium-high heat,in a large sautee pan Heat oil, add onions and peppers and 1 tbsp garlic, salt, pepper, cook til the onions are translucent. And broccoli and cook til slightly softened. Add riced cauliflower and cook until it all comes together. Set aside in XL bowl.⁠
➡️ Bacon:⁠
Cook your bacon crispy. That means cook it and drain the fat. Cook it some more, drain more fat. Again and again til there's basically no fat coming off. You want the bacon extra dark without burning because it will get soggier in the casserole. Add crispy bacon to base and stir it in. (Eat some bacon)⁠
➡️ Chicken: leave a little bacon grease in the pan, add garlic and simmer for a minute. Throw in your chicken and let it cook stirring intil cooked thoroughly and edges are browned. Add your celery seed, salt, pepper, cumin, and chili powder, add to base. ⁠
Mix in cheese, pour into casserole pan, drizzle with ranch dressing, top with some more cheese. Bake at 350x 25 min.

Keto Mushroom Zucchini Lasagna Rolls
Ingredients:
4 large zucchini thinly sliced lengthwise (I used a mandoline)
1 Tbsp olive oil for brushing + 1 additional Tablespoon for sauteing
1 small sweet yellow onion, finely diced
2 fresh garlic cloves, minced
8 oz fresh mushrooms, chopped well
1 tsp dry Italian seasoning
16 ounces high quality marinara sauce
sea salt and fresh ground pepper, to taste
1/3 cup organic ricotta
1 free range egg
1/4 cup freshly grated Parmesan cheese
a handful or fresh parsley, finely chopped
1/2 cup shredded mozzarella cheese

Instructions:
Preheat your oven to 375 degrees f. and line a baking tray with parchment paper.
Lay out the zucchini strips on a large cutting board, lightly sprinkle with sea salt and pepper and very lightly brush with 1 Tablespoon of oil.
Bake strips in your preheated oven for 10-12 minutes, or until slightly tender and easy to roll. Allow them to cool until ready to handle.
Meanwhile, add remaining olive oil in a skillet over medium-high heat. Add minced garlic and cook for 1 minute, until fragrant.
Add in the onions, mushrooms, Italian seasonings and cook for 4-5 minutes.
Stir in 3/4 of the marinara sauce and simmer your mushroom sauce for about 4 minutes, or until slightly reduced.
In a medium bowl add ricotta, parmesan cheese, the egg and a tiny pinch of sea salt + pepper, and fresh chopped parsley. Stir well to combine everything.
Use a 9×13″ casserole dish or an ovenproof cast iron skillet and spread remaining marinara sauce on the bottom.
To assemble the zucchini rolls, lay out one zucchini slice on a cutting board. Spread about 2 spoonfuls of the ricotta mixture over the top, then a spoonful of mushroom sauce mix.

Chickpea Crust Pizza 🍕 ⁣

This gluten-free crust is ideal for a party, since it can be prepared ahead, then baked and topped at the last minute. Cut into smaller pieces, it makes a great hors d'eouvre. Vary the toppings as you like -- salty, briny olives, capers or anchovies are especially good on this pizza.

⁣🔥 Ingredients
Crust:
2 cups chickpea flour

Kosher salt

6 tablespoons extra-virgin olive oil

1 teaspoon baking powder

Toppings:
Extra-virgin olive oil, for brushing and drizzling

8 ounces fresh mozzarella, thinly sliced

1/2 cup grated Parmesan

3 large ripe plum tomatoes, very thinly sliced

Kosher salt and freshly ground black pepper

🍳 Optional Scrambled eggs inside pepper!

INSTRUCTIONS:
1⃣ All you have to do is is chop open the pepper with a hole in the middle!
2⃣ Then fill with any and all ingredients you’d like to put in there!
3⃣ Cook in the oven at 375 degrees for about 30 min. But eye ball it with what you think is best!
4⃣ Then top it with guacamole and optional Jalepeno!
5⃣ READY TO GO!

Keto Lemon Butter Chicken Recipe

📝INGREDIENTS:
4 chicken thighs or breasts (bone-in or boneless)
2 teaspoons smoked paprika
Kosher salt, to taste
Ground black pepper, to taste
1 Tablespoon unsalted butter
2 – 3 cloves garlic, minced
½ cup chicken broth
½ cup heavy cream
¼ cup grated Parmesan cheese
2 cups baby spinach, chopped
Juice of 1 lemon (add the zest if you want extra lemon flavor)
1 Tablespoon chopped fresh thyme or 1 teaspoon dried thyme

👨‍🍳INSTRUCTIONS:
Preheat the oven to 400°F/200°C.
Season the chicken thighs or breasts with paprika, salt, and pepper and toss to coat.
Melt 1 tablespoon of butter in a large oven-safe skillet over medium-high heat. Add the chicken, skin-side down, and sear it for 2 to 3 minutes per side, or until it’s golden brown. Remove the chicken and set it aside. Reserve 1 tablespoon of fat in the pan and drain the excess.
Add the minced garlic and cook, stirring constantly, until fragrant, about 1 minute. Stir in the chicken broth, heavy cream, and Parmesan cheese.
Bring the mixture to a simmer and add the baby spinach. Cook until the spinach is wilted and the sauce has thickened slightly, about 3 to 5 minutes.
Stir in the lemon juice, thyme, and lemon zest (if using). Return the chicken to the skillet, and transfer it to the oven. Bake for 15 to 25 minutes, or until the internal temperature of the chicken reaches 165°F/73°C. Serve warm.

SALT N PEPPER SHRIMP 🍤.
1 lb defrosted skin-on shrimp
1/2 onion, sliced
2 jalapeños, sliced
2 tbsp cooking oil
3 tbsp butter
2 tbsp old bay seasoning
1 tbsp black pepper
1 tbsp lemon pepper
1 tsp chili flakes (optional)
Sauté the vegetables in cooking oil until they soften, then add the remaining ingredients. Cook for about 5 minutes and serve w/your favorite side dish.

NO-BAKE KETO CHOCOLATE PB CRACK BARS only 4 ingredients and SO EASY. Recipe below!

📋 INGREDIENTS:
1/2 cup salted peanut butter (or any nut butter)
1/2 cup blanched almond flour
3 Tbsp Choc Zero sugar-free syrup
1/2 cup Choc Zero sugar-free chocolate chips, melted
👨🏽‍🍳 INSTRUCTIONS:
1. Combine first three ingredients in a bowl until a crumbly dough forms. Press into parchment lined 8x4-inch pan (double recipe for 8x8)
2. Spread melted chocolate chips over top and chill in the fridge until firm.
3. Slice, and enjoy!
