Ingredient to use:
1/2 loaf of white bread (unsliced)
1/2 pint whole milk
butter for spreading
brown sugar
dried fruit or other soft fruit
pinch of ginger
pinch of cinnamon
pinch of nutmeg

Directions:
1. Slice the loaf of bread into 3/4-inch slices and cut off the crusts.
2. Butter each slice on both sides and place them in the bottom of a baking dish.
3. Sprinkle the dried or soft fruits on top of the buttered bread slices, then follow with sprinkled brown sugar.
4. Butter more bread slices and place them over the fruit.
5. Pierce the bread a few times using a knife or fork, then pour the milk on top.
6. When the bread is soaked, sprinkle brown sugar, ginger, cinnamon, and nutmeg on top.
7. Bake at 275 degrees F for about 2 - 2 1/2 hours, or until the bread has risen a bit.
8. Best served with vanilla ice cream or hot custard.

1 lb sausage meat
1/2 cup flour
2 eggs, beaten
3/4 cup fine bread crumbs
Vegetable oil for frying

Directions:
1. Peel the boiled eggs and set them aside for later.
2. Divide the sausage meat into six equal portions.
3. Roll each egg in flour, then press a portion of sausage meat around it until the egg is fully sealed inside the sausage.
4. Dip each sausage/egg ball into the beaten eggs, and then roll them in bread crumbs.
5. Heat the oil in a skillet to roughly 350 degrees F, then cook each egg for about five minutes, or until the sausage has cooked thoroughly and browned.

4. Season the filling with salt and pepper, a dab of margarine, and a pinch of flour.
5. Fold the pastry in half and pinch the edges together.
6. May want to use a bit of water on the fingertips to help seal it.
7. Fold up the foil around the pasty and crunch it together at the top.
8. Cook in the oven at 375 degrees F for about two hours.
9. During the last half hour, open up the foil to allow the edges of the pasties to brown.

3. Cut the margarine into the flour and massage until the texture takes on that of a coarse meal.
4. Add the sugar and caraway seeds and mix well.
5. In a separate bowl, beat together the eggs and milk, then pour them into the flour mixture.
6. Mix well until the dough becomes soft.
7. Grease a bread pan, then add the dough to it.
8. Bake for about an hour at 375 degrees F.

2lbs neck of lamb
1lb potatoes
2 leeks
1/2lb carrots
1 rutabaga
2 tbsp chopped parsley
1 tbsp flour
Salt and pepper to taste

Directions:
1. Put the lamb meat into a large saucepan and cover with water.
2. Season with salt and pepper and allow the water to come to a boil.
3. Peel and cut the carrots in half.
4. Peel and chop the rutabaga into chunks.
5. Chop the "white" of the leeks, but save the green bits (about an inch from where the stalk divides) for later.
6. Add all to the saucepan, then cover and reduce to low heat.
7. Allow this to simmer for about 2 1/2 hours.
8. Peel and cut the potatoes, then add them to the pot.
9. Recover and simmer for another half hour.
10. When the potatoes are nearly done, add the flour (and a bit of water if needed) to thicken the broth.
11. Chop the green bits from the leeks and add them to the pot, along with the parsley, and simmer for 10 more minutes before serving.

1 egg

Directions:
1. Cut the lard into the flour, then massage it together until the lard is evenly distributed throughout the flour.
2. Add in the baking powder, sugar, salt, and all-spice.
3. When the mixture is well blended, add in the egg.
4. Mix well, then add enough milk to turn the mixture into a stiff paste.
5. Roll out the mixture and cut it into around.
6. Fry the rounds on a griddle or lightly greased skillet until golden brown.

(gravy)
1lb sausage meat
3 tbsp flour
2 - 3 cups milk
Salt and pepper to taste
(biscuits)
2 cups self-raising flour
1/4 cup of shortening
1/4 cup of milk

Directions:
1. Crumble the sausage meat in a frying pan and cook until the meat is no longer pink.
2. Add in the flour one tablespoon at a time and stir quickly.
3. Keep stirring until paste forms, and crank up the heat to high.
4. Add in the milk, stir, and then add the salt.
5. This mixture should be quite thick.
6. To make the biscuits, mix together the shortening and flour using a pastry cutter.
7. Add in the milk, stirring as do so.
8. Knead the dough in the bowl, then transfer it onto a floured surface.
9. Roll it out and cut into circular shapes (I find a drinking glass works well for this).
10. Place the biscuits on a baking sheet and bake at 425 degrees F for about 10 - 15 minutes, until the biscuits are golden brown.
11. Serve the biscuits open-faced or cut up, with sausage gravy poured on top.

1 cup low-fat buttermilk
4 (8-ounce) chicken breast halves (with bones)
1/3 cup all-purpose flour
1/3 cup cracker meal
1/2 tsp salt

Directions:
1. In a shallow bowl, combine the buttermilk and chicken.
2. Be sure to turn the chicken to fully coat it with the buttermilk.
3. In another shallow dish, mix together the cracker meal and flour.
4. Take the chicken from the buttermilk and place it onto a sterile surface.
5. Sprinkle the chicken with half a teaspoon of salt and pepper.
6. Dredge the chicken through the four mixture and shake off the excess bits of flour, then set the chicken aside.
7. Repeat this process with each chicken breast.
8. Melt the butter in an oven-proof skillet and cook the chicken on both sides until golden brown.
9. Remove the pan from the range and place it in an oven preheated at 425 degrees F for about half an hour.
10. Fried chicken is traditionally served with mashed potatoes and coleslaw.

4 tilapia fillets
Butter-flavored spray
4 tsp margarine (melted)
2 tbsp lemon juice
2 tbsp chopped fresh dill w**d

Directions:
1. Grease a baking sheet and place the tilapia on the sheet.
2. Give them a light spray with butter-flavored spray.
3. Drizzle a bit of melted butter and lemon juice over each fillet.
4. Season with lemon pepper as well as 2 tbsp dill.
5. Bake at 375 degrees F for about 15 minutes, or until the fish is done.
6. It should flake easily with a fork.
7. While the fish is in the oven, mix together the cream cheese, 2 tbsp dill, and 5 tbsp lemon juice.
8. When it is well mixed, microwave for just over a minute, then stir.
9. Place the cooked fillets onto plates and spoon the sauce on top of the fillets.

1 medium onion (chopped)
1 tsp prepared yellow mustard
1 tbsp creamy mayonnaise (recommend: Miracle Whip)
1/2 tsp Old Bay Seasoning
2 1/2 cups coarsely crushed Ritz crackers
1 egg
1 cup vegetable oil (to fry)

Directions:
1. Put the catfish into a saucepan and add just enough water to cover the fish.
2. Allow the water to come to a boil and cook the fish until it is well done.
3. It should flake well with a fork.
4. Drain out the water and mash the fish with a fork or potato masher.
5. Add in the mustard, Old Bay seasoning, egg, cracker crumbs, onion, and salad dressing.
6. Mix the ingredients well.
7. Need to prepare the skillet for frying.
8. Pour the oil in and bring it to medium-high heat.
9. Press the fish mixture into the shape of a patty and fry both sides in the oil until well done.
10. Drain the excess grease using a paper towel.

Directions:
1. Cut the salmon into equal portions.
2. In a large saucepan, pour in the chicken stock, white wine, orange juice, onion, lemongrass, and garlic.
3. Mix the ingredients together, then add in the salt and white pepper.
4. Allow this mixture to boil for about five minutes, then reduce it to a low boil.
5. Drop the salmon into the mixture and let it cook for about five minutes, or until it becomes tender and flaky.

2 1/2 lbs king salmon fillet (skinned and de-boned)
1 tbsp Dijon mustard
1 cup bread crumbs
1/2 cup red onion (finely chopped)
2 tsp horseradish
2 eggs (lightly beaten)
1 tbsp rosemary
1/2 tsp salt
1/2 tsp freshly ground black pepper
2 tbsp olive oil

Directions:
1. Cut the salmon into strips.
2. Cut those strips crosswise, then continue chopping until the fish is minced.
3. Be sure to remove any bones that may come across.
4. In a bowl, mix together the salmon and bread crumbs.
5. When they are well mixed, add the onion, horseradish, eggs, and Dijon mustard.
6. Season with salt, pepper, and rosemary, then put in the refrigerator for about half an hour.
7. Allow the grill to heat up to medium-high heat while shaping the salmon mixture into burger patties (roughly eight).
8. Coat each patty lightly with olive oil then grill the salmon for about five minutes on each side.

1 tbsp butter or margarine
1 can condensed cream of chicken soup

1. Put a teaspoon of butter in a skillet and saute the onions.
2. Add in the cream of chicken soup, wine/broth, half-and-half, and dill and mix well.
3. Put the salmon steaks on top of the mixture, then cover the skillet to allow the steaks to simmering.
4. After about 15 minutes, test the salmon with a fork.
5. If it flakes easily, it's done!

4. Sprinkle the tops with bread crumbs and bake it at 400 degrees F for about 15 minutes, or until it is thoroughly cooked.

1lb center-cut salmon fillet, skinless (chopped into 4 equal portions)
1 scallion (finely chopped)
2 tbsp soy sauce
1 tbsp rice vinegar

Directions:
1. Mix together the scallion, vinegar, ginger, honey, and soy sauce in a bowl.
2. Place the salmon in a large Ziploc plastic bag and add three tablespoons of the sauce mixture and place it n the refrigerator to marinate.
3. Line a baking pan with aluminum foil and spray with a bit of cooking spray.
4. After 15 minutes in the fridge, move the salmon to the baking pan.
5. Broil the salmon for about six to ten minutes.
6. Drizzle the remaining soy sauce mixture onto the fish.
7. And top with sesame seeds.

Directions:
1. Pour the melted butter into an 8-inch baking dish.

Directions:
1. Bring a large pan of water to boil, then cook the noodles in the boiling water for about 8 - 10 minutes.
2. Drain the noodles.
3. Grease a 9 x 13-inch dish and preheat the oven to 400 degrees F.
4. In a frying pan, melt the butter over medium heat and saute the onion for about 3 minutes, then mix in the flour.
5. Keep stirring while adding the chicken broth and milk.
6. Stir continuously until the sauce thickens.
7. Add salt and pepper.
8. Pour the noodles into the bottom of the dish, then top with chicken.
9. Place the broccoli on top of the chicken, then pour the sauce on top.
10. Mix the cheeses together, then sprinkle half of the mixture over the casserole.
11. Bake for about 20 minutes (or until the cheese has melted).
12. Remove from the oven and sprinkle the rest of the cheese on top.
13. Let it sit for about 5 minutes so the additional cheese has a chance to melt.
