Lemony Limoncello Cupcakes
2 sticks of butter
4 eggs
2 cups of sugar
3 cups of sifted flour
3 tsp baking powder
1 tsp salt
1 cup of milk
2 oz. Limoncello
1 tsp lemon extract
1/4 tsp lemon rind
Cream the butter and sugar in the standup mixer or with a hand mixer in a bowl, add the eggs, one by one, then add the sifted flour, alternating with the milk and the rest of the ingredients. Bake in cupcake liners. Frost with practical recipes buttercream frosting. Optional, for boozy cupcakes, bathe the cupcakes in the limoncello while still hot with about 1/4 tsp of the liqueur each. Homemade Beans with Leftover Ham
2 lbs. pinto beans washed and soaked
1 large piece of whole ham about 2 lbs.
(Substitute for smoked turkey if desired)
8 cups of water
1 whole onion
1/2 onion for the beans to boil (whole piece)
1/2 onion for the salsa/sofrito (finely chopped)
2 whole garlic cloves
2 bay leaves
2 Tbs. Olive oil
1/2 bell pepper any color
2 diced plum tomatoes
1/2 bunch of fresh cilantro chopped
1 tsp dry thyme
1 tsp cumin ground or seeds
1 tsp black pepper
1 tbs. salt (more or less according to taste)
1tbs. brown sugar
Place beans, ham, 1/2 onion, garlic and bay leaves in the crockpot for 3 hours. Let simmer. Once beans are cooked, prepare the “sofrito” or salsa with the rest of the ingredients in a small shallow pan. Pour the sofrito into crockpot and simmer for another hour or so. Beans will be soupy and soft and ready to eat out of a bowl with spoon serve with bread, or rice. Enjoy!
