It’s been one heck of journey but it’s been so worth it!

Egg Benedict Keto Breakfast
If you looking for breakfast for one or two that feels fancy but doesn't take a lot of time to prepare check out our first recipe post called Egg Benedict! You can use no sugar added bacon or no sugar added sausage to this recipe! Keto Recipe.
Ingredients
• 4 large eggs yolks
• 1/2 teaspoon salt
• 1 tablespoon fresh lemon juice
• 1/2 cup plus 1 tablespoon grass-fed butter, divided
• 4 whole eggs
• 4 slices no sugar added Canadian bacon, cooked
• 1/2 large avocado, peeled, pitted, and cut into 4 slices.
Instructions
1) Start by making the hollandaise sauce. Put eggs yolks, salt, and lemon juice in a blender and blend until smooth.
2) Put 1/2 cup butter in a microwave and microwave wave high until melted, and hot for about 45-60 seconds
3) With the egg yolk mixture in a blender, turn the blender on low speed slowly pour in the melted butter. The sauce will thicken.
4) Heat a medium skillet over medium-high heat and add the remaining 1 tablespoon of butter. Crack a whole egg into the pan. Cook 2 minutes and then flip the eggs, using care not to break the yolk egg. Cook another 2 minutes or until white is completely cooked, but the yolk is still runny.
5) Place Canadian bacon on a plate and top each slice with one egg and once sliced avocado. Pour the sauce mixture into each egg, evenly dividing it amongst all the eggs.
6) If you bread lover you can add gluten-free bread to your Keto Egg Benedict breakfast and make it a breakfast sandwich!
