Apple pie is classic that I love. There is nothing like a piece of warm apple pie with a scoop of vanilla ice cream on top. So I thought making these mini apple pies was a great idea. Then you don’t have to worry about cutting anything. You can just grab your pie and go. This recipe makes 13 mini apple pies. If you would like to make the apple filling in advance it can be stored in an air tight container in the fridge for several days or in the freezer for longer storage. The first thing I look for in a cinnamon roll is a soft moist roll. I don't care how much icing you put on it. No one wants a dry cinnamon roll. The second this a cinnamon filling. I like a little ooey gooey cinnamon filling but not too much. Lastly I need a good cream cheese frosting. I like a frosting that melts a little on the hot rolls but doesn't disappear into the roll. The frosting recipe I came up with not only melts into the rolls but is thick and soft enough to stay on top of the cinnamon roll once its cooled.
