4 cups water
3 bags black tea or tea of choice
2 tbsp of sugar

Add tea bags to boiled water.
Allow the tea bags to steep for 10 minutes.
Remove the tea bags from the water.
Add the remaining water to the tea.
Leave it refrigerated until fully chilled (about an hour).
Serve with ice, lemon slices, and fresh mint if desired.

It's time to make something refreshing! Let's make a Margarita!

You'll need:
2 ounces tequila or orange juice (mocktail)
1 ounce orange liqueur (triple sec)
1 ounce lime juice
1 lime, for garnish
1 tablespoon margarita salt (optional)
Ice (as much as you prefer)

Salt the glass. Add the tequila, orange liqueur, and lime juice to a cocktail shaker with ice. Give it a few shakes. Alternatively, you can stir all of the ingredients together in a glass.

Add ice to your glass, then pour the margarita into the glass. Garnish with lime wedges.

INGREDIENTS
1 cup coffee, at room temperature
2 tablespoons half and half
½ cup sugar
1 cup water
½ teaspoon vanilla extract

Combine sugar and 1 cup water in a medium saucepan over medium heat, stirring until the sugar has dissolved. Let cool completely and stir in vanilla extract; set aside in the refrigerator until ready to serve. Serve coffee over ice with half and half and syrup, adding 1 teaspoon at a time, to taste.

A quick side dish to compliment any dinner!

4 potatoes, peeled and sliced
½ cup chopped onion
2 tablespoons butter
2 tablespoons all-purpose flour
2 teaspoons salt
1 ½ cups milk
½ teaspoon dried parsley, or to taste (Optional)
1 pinch ground paprika, or to taste (Optional)

Place potatoes, onion, and butter in a large microwave-safe dish.

Mix flour and salt in a bowl; sprinkle over potatoes and gently toss until vegetables are coated.

Pour milk over the potatoes.

Cook in the microwave on high setting until potatoes are tender, about 15 minutes, stirring every 5 minutes.

Allow potatoes to rest for 5 minutes before sprinkling with parsley and paprika for serving.

Thank you for this eye-catching dessert submission !

Ingredients:
Granola - 1 cup
Flour - 1/2 cup
Quick cooking oats - 1/2 cup
Chopped pecans - 1/4 cup
Packed brown sugar - 1/2 cup
Butter, melted

Directions to make the granola:
Combine all the granola ingredients together in a medium size bowl, then spread it onto a rimmed parchment lined baking sheet. Bake in toaster oven until crisp and cool completely.

Strawberry Filling Ingredients:
1 package of cream cheese, softened
Granulated sugar - 3/4 cup
Strawberry Greek-style yogurt - 2 cups
4 strawberries, blended up/puréed

optional: a few drops of red food coloring if you would like more of a pink tinted color.

Directions to make the filling:
Mix cream cheese and granulated sugar together in a medium size bowl until blended; stir in yogurt, then strawberries and the red food coloring if using.

How to assemble: Line a 9x5 inch loaf pan with parchment paper, with ends of parchment extending over the sides.

Crumble up the granola mixture. Reserve 1/2 cup; sprinkle the remaining onto the bottom of the prepared pan. Top with the strawberry mixture. Freeze for 1 hour. Then cover with 1 cup cool whip [whipped topping] Freeze for 3 hours of until firm. Use the parchment handles to remove from the pan. If planning to serve right away: top with the reserved granola, berries: [sliced strawberries and blueberries] Keep frozen - when your ready to serve it you can add the granola mixture and berries to decorate it.

*Make sure to take it out of the freezer to soften it before serving*

Want the perfect Mother's day breakfast?

Here is another throwback to our Summerlicious runner up submission for Recipe Thursday! Thank you again for this delicious submission !

Waffle Mix
2 cups flour
2 tbsp. sugar
4 tsp. baking powder
1/2 tsp. salt
1 1/2 cups milk - just warmed slightly
2 eggs
6 tbsp. melted butter
1 tsp. vanilla

Preheat waffle iron. Spray with Pam or spread on some oil.

Mix flour, sugar, baking powder, salt & whisk together in a big bowl. In another smaller bowl whisk eggs well, stir in warm milk, melted butter, vanilla & mix together.

Pour wet ingredients into dry ingredients & mix till blended. Scoop some waffle mix into the waffle iron & cook till done.

Chocolate Cream

Mix Nutella spread with thawed Cool Whip to make Chocolate Cream to spread on waffles & add sliced strawberries in between the waffles.

Makes 5 large waffles.
