FELLOW BAKERS!!!!! Don't let this happen to your cake this summer.... TIPS to beat the heat for outgoing cakes..... Remember to keep your cakes as cold as you can before pick ups or deliveries during these HOT months. This heat will prove to be disastrous to your works of art. Also keep in mind not everyone has air conditioning so to help them get it there in tact be sure to ask questions... How far are you traveling with cake? Do you have air conditioning? Do you intend on having the cake outside at any point? Will you have a passenger to hold the cake? I always recommend the front floor board with air conditioning on because seats tilt and that's a NO NO for cakes. I also ask that they let me know when otw so that I can keep it in the fridge as long as I can before they get here. Always use the same size box as your boards so the cake cannot move around inside the box. Add a little buttercream to your cake board before applying the cake, that way when it gets cold it adhesives to the board and helps prevent the cake from sliding. If able use clean/empty fridge with no other food for best results because cakes are sponge and they will absorb smells and ruin the flavors of the cake. Customers PLEASE NOTE the cakes are cold but still fragile and will need to be handled with care at all times. Butter is a main ingredient and butter melts so keep refrigerated at home or venue and take it out at least 1-2 hours to allow the buttercream and cake to soften back up again before serving. The warmer months are approaching and this is the best way to care for your cake on those hot days. As always I never recommend a cake to be outside but if you do have to have it outside for a bit, Be sure the cake is super cold before taking it out there and don't keep it out long or you just might have a mess on your hands as butter is a main ingredient in icing and WILL melt.
