I made it π
Popcorn ice-cream πΏ π§π¨
I replaced the milk powder by mixing 1/2 cup of milk with 1 tablespoon of potatoflour (swedish ingredient, but can be bought in the Olive branch in Clonakilty aswell) then let the mix almost boil before putting in the potato flour mix, stirring it in until first few bubbles are seen.
Instead of ready whipp, I whipped up 400ml of cream with 1/2 cup of icing sugar.
I used 50 g of butter.
Then I'm served it with homemade toffee sauce aswell π
It's delicious π

Busy weekend for strawberry lovers!! Our wedding anniversary cake is a swedish "modern classic" Himmelsk jordgubbstΓ₯rta (heavenly strawberry cake) with sponge and cream cheese and cream icing with ooodles of strawberries π€€π€€π€€
Then to come today is a celebration in our local church and I've made glutenfree strawberry buns with cream cheese icing and a strawberry for decoration. Also a few bigger once for an afterparty for my friend's girl's communion (shhhh, don't tell her π€«)

Husband's birthday, and our 4 year old decided that he wanted a cookie Monster cake like the one in the local supermarket. Not exactly the same... but homemade (Not GF) cookies and a glutenfree chocolate cake with a oaty top to make it rounded and same for eyes... made it super yummy!!! Not much left after we shared it with our own 4 children, plus another 5 children yesterday, and a different set of 3 children today, with 2 of the mums who the kids belong to. Empty plates almost all around, so that's always a good sign with children involved π

My boy Isac with his cake...which had to have homemade icing cows and a loader!!! That was the order he put in... the pressure π at least I made it more realistic by adding some chocolate blobs... I'm sure you can guess what they are supposed to represent π©

So, our last big gathering happened new years eve 2019... we had 7 swedes here (last time I met them was that week) so we reused the elephant I had used for our son's christening cake, and stuck a party hat on him. then made a few balloons out of icing, I got help from my oldest, plus their oldest cousin Lova
A gluten free cake made with same ingrediencies as a patisserie original called Biskvi in Swedish. I was aiming for it to look like a doll's head... but because it was made with meringue, I wasn't able to shape the face, so it looks very round, so not my proudest creation, but I think the doody didn't turn out too bad :P
gluten free christenin g cake to be able to be enjoyed by most of our guests :) Biskvi it's original patisserie sized original version is called in Swedish, but instead of being dipped in milkchocolate, I made white chocolate ganache instead.

Hope everyone had a feast of pancakes yesterday for pancake Tuesday? We had some for breakfast, but didn't get a chance to picture them as we gobbled them up too fast π

Happy Valentine's day everyone π here we started off with loving our body by giving it a spinach and fruit smoothie. Then abit of colouring for the kids to do some self care love. Then after a chicken curry to treat our tummies with, we had a trio of desserts to treat of tongues to π so all that's left now is an early night to bed (for the kids) to give the whole body some lovely rest π

So... The passed 11 month I've been trying to find the ultimate chocolate chip cookie recipe. So many yummy once out there. But I was tired of making it more or less the same every time... So I tried out making up my own recipe. These are chocolate chip (chunks), peanutbutter, and cornflakes cookies. OK... So I added abit too much flour, but if I adjust that for the next time, they aren't too far off being on the same top list with the other recipes... Just w added umph of cornflakes crunch ππ

Almost weekend again, we have now passed the blue Monday and the days are getting longer... Soooo... Why not try your hand on homemade jaffa cakes? As seen on Junior bake off last week (first episode). You can use any jelly, original is obviously orange, they used raspberry i think. I used orange, but think next time I make the jelly with less water to make it a little less wobbly and more orangey.
I used a glutenfree Swiss roll sponge recipe as base. My boy who don't like jelly ate it, so mustn't have been too shabby π

Locally bought tea and homemade soda bread is tonight's supper. The tea was found in the tea shop Clonakilty Tea Shop & Patisserie they have loads of different kinds of tea to choose from. I choosed to try Strawberry/peach and lime, mmm a hit with everyone in this house. With the colder evenings a cup of fruit tea is nice after being out playing π
So, next child's birthday this month, our second boy turned 4 π₯° he wanted a bull with a fence on his cake, plus a, sweets cake. So he had the bull for his little outdoor party with chocolate cake inside it. Then a sweets cake with sponge and filled w mashed bananas and strawberries and Daim.
Then the cousins came this weekend and so I made a Gluten and dairy free oat chocolate cake (non bake cake π) and stuck the bull on it to make it look birthday like π
Made few cupcakes for the party aswell, raspberry and lemon. So all in all, a busy week of baking π
Hi all followers, hope you are all well!!! Have had a busy few weeks between lovely overnight visitors and 2 birthdays. So posting was put on hold. Here are my youngest and oldest children's birthday cakes π yes, they got 2 each!!! One for their actual birthday and 1 for their party.. Any excuse for a cake... Right π
It was getting dark, kids asleep, wind blowing outside.... So what other better way to spend the night, than having after 10pm tea with some mommy friends after almost 4 months of noone but the kids and husband in the house β€οΈ a selection of all sorts, everything homemade by either me or a friend except from the dips..which was portioned out for coronasafety π·

Filled w sponge cake, butter icing and strawberry jam. The hands didn't turn out perfect, but wanted to use cake, so I'm sure the person who got to eat them was happy even if they looked abit miss shaped π

My attempt to a midsommarstΓ₯ng, not my best creation, but with a 10,5 months old wondering around me it was the best I could achieve π

So been spending about a month making the "perfect" sourdough loaf, good enough to be put up on this page... I think it might not get better than this loaf so here it is π it's worth all the attempts though, as even if they don't rise right or get abit burnt on the outside they still taste nice, so give it a go, but it will take a while to get it right, enjoy the project β€οΈ
