Also known as semi-vegetarianism, the flexitarian diet consists of mostly fruits, vegetables, whole grains and legumes with occasional meat included. I would say this falls somewhere between the Mediterranean diet and Vegetarianism. With all these "diets" the focus still remains natural, unprocessed, real foods.

I'm 50/50 on the ๐Ÿž. If you're lucky enough to live near a bakery or grocery store that makes real whole wheat ๐Ÿž then you're in luck. ๐ŸŽ‰Happy New Year๐ŸŽ‰ Starting off the year with some Cuban shrimp creole. Great dish to go with some of that coconut infused rice or quinoa from earlier in the week.

1 lb extra large shrimp peeled and deveined, tails removed
ยฝ tsp Himalayan salt
ยฝ tsp ground black pepper
ยฝ tsp Smoked Paprika
ยฝ tsp cayenne pepper
2 tbsp extra light olive oil
1 tbsp salted butter
ยฝ cup onion diced
ยฝ large green bell pepper diced
2 cloves garlic minced
1 cup tomato sauce
ยฝ cup chicken bone broth or vegetable
1 tsp honey
ยฝ tbsp fresh cilantro chopped

Season your peeled and deveined shrimp with salt, pepper, cayenne pepper and smoked paprika.
In a large pan or skillet, heat oil and butter over medium heat. Add diced onions and green bell peppers. Cook until the onions are slightly translucent.
Add the garlic and cook until fragrant.
Add seasoned shrimps and cook until the shrimps are opaque and pink.
Pour in the chicken stock, tomato paste, and honey, and stir to combine everything.
Allow to simmer (covered) for 10 minutes.
Turn off the heat and top with chopped cilantro. You can serve immediately or you can cover the pan once more and allow the flavors to meld together even further for another 10-20 minutes.
Serve with brown rice, couscous, whole wheat noodles, or even zoodles or riced cauliflower. Store any leftovers in an airtight container in the refrigerator for up to four days.

This recipe is one that tastes even better the next day so don't be afraid to make it in advance!
If you'd prefer the sauce to be slightly thicker you can combine 1/2 tsp of potato starch or arrowroot powder in water (or stock) and add it to the pot after the stock and tomato paste has been simmering for a few minutes. Be sure to stir well to distribute the slurry and evenly thicken up the sauce.
To make this recipe dairy-free, omit the butter.

This is a simple coconut infused brown rice recipe you can use as a side for ๐Ÿ™๐Ÿฆ€๐Ÿฆ๐Ÿฆ‘, ๐Ÿ๏ธtropical๐Ÿ๏ธ or Thai cuisine.

๐ˆ๐ง๐ ๐ซ๐ž๐๐ข๐ž๐ง๐ญ๐ฌ
2 cups brown parboiled rice (or brown rice)
1ยฝ cups coconut milk (full fat) (Canned or Make your own)
3 cups water
1 tsp Himalayan salt

๐ˆ๐ง๐ฌ๐ญ๐ซ๐ฎ๐œ๐ญ๐ข๐จ๐ง๐ฌ
To make in a saucepan:
Combine the rice, coconut milk, and salt in a medium saucepan and stir to dissolve the salt. Bring the rice to a boil. Cover and reduce heat to low and simmer until rice is tender and all the liquid is absorbed, 20-25 minutes. Fluff rice with a fork; cover and let sit for 15 minutes to fully steam through.
To make in a rice cooker:
Combine the rice, coconut milk, and salt in a medium saucepan and stir to dissolve the salt. Let soak for 5-10 minutes before covering and turning the cooker on. Once all liquid is absorbed, fluff the rice and turn off the cooker. Cover and let sit for 20 minutes to fully steam through.
Serve with any side of your choice such as a Spicy Red Thai Curry or a milder Green Thai curry and store any leftovers in the refrigerator for up to 5 days.

The coconut flavor of this dish is subtle but if you want to really amp up the coconut flavor add 1 tbsp of coconut oil and/or 1/4 cup of unsweetened shredded coconut.

So...I have been a bit naughty over this holiday season. Shhh...don't tell ๐ŸŽ…. With New Year's rolling around it's about time to get back on track. Let's start off with some quinoa. Cooking it correctly is important if you want it to be nice and fluffy.

๐ˆ๐ง๐ ๐ซ๐ž๐๐ข๐ž๐ง๐ญ๐ฌ
1 cup quinoa
2 cups vegetable broth (or chicken broth or water with ยฝ tsp salt)

๐ˆ๐ง๐ฌ๐ญ๐ซ๐ฎ๐œ๐ญ๐ข๐จ๐ง๐ฌ
In a saucepan, bring the broth to a rolling boil.
Thoroughly rinse and drain the quinoa and add it to the boiling broth.
Reduce the heat to a gentle simmer and cover the pot tightly. Allow the quinoa to cook undisturbed for 15 minutes.
After 15 minutes, remove from the heat, and, without uncovering or disturbing it, allow it to sit and steam for an additional 5 minutes.
Uncover the pot and gently fluff the quinoa. Taste test it to ensure that it is fully cooked.
Serve immediately and store any leftovers in an airtight container for up to 5 days in the refrigerator or up to 8 months in the freezer.

While using unwashed quinoa isn't dangerous, quinoa naturally contains a coating called saponin which while great for deterring animals from grazing on the plants while the quinoa grows, gives quinoa a bitter or soapy taste that is not to everyone's preference.
When cooked, the grains should have "split" and released a tiny white curl (the inner germ) that is a good indicator of whether the quinoa is cooked or not.
If the quinoa is not cooked after 20 minutes, add a splash more stock/water and place it back on a low simmer for a few more minutes until done.
This recipe results in 3 cups of cooked quinoa with a 1/2 cup serving size.
