Mango pickle | Andhra special Avakaya pachadi 19/05/2020

Following these steps before making mango pickle / avakaya extremely crucial to achieve good results and a pickle that will last a whole year.Before making mango pickle, clean all the utensils you are going to use for the process and sun dry them so that they are moisture free.
A little bit of moisture can result in fungus and the pickle will be spoiled.
Mix the pickle with clean and dry hands.
To make mango pickle mature, fiber , sour mangoes are required.
China rasalu type mangoes are ideal.
Once the mangoes are cut , they are to be used the same day to prepare the mango pickle. The fresh raw mangoes are soaked in water for an hour, wiped dry and carefully cut with a special knife. Cut the mangoes with the kernel /outer core (tenka in telugu) intact and into uniform size pieces.
The pith is discarded while the hard kernel is left intact and the wafer thin transparent layer lining the kernel is removed with a help of a spoon or knife. Each mango piece is then carefully cleaned with a soft cloth and laid out to be dried on a cloth for an hour or two before beginning the pickling process.
The other important components of mango pickle recipe is the use of freshly ground mustard powder, red chilli powder used for making pickles, crystal salt and cold pressed gingelly oil {unrefined sesame oil also called pappu nune/nuvvulu nune in telugu}. Usually home made fresh redchilli powder is used to make the pickle. The red chilis are sun dried and ground to a fine powder.
If you don’t have homemade redchilli powder, use ‘Three Mangoes’ brand of red chili powder if using store bought chili powder.
Black mustard seeds are sun dried and freshly ground on the day of pickling so that the pickle retains the fresh flavor of mustard.
Once the pickle is prepared and stored in a jar, you need to place the lid, tie a cloth over the lid and do not open the jar for at least 3 days.
On the 4th day, open the lid add 1 tbsp turmeric and mix well.
If required,Pour 1/4 cup oil on top as the pickle needs to be covered in thin layer of oil. Cover the jar with lid and tie a cloth over it. Let the pickle marinate for another 4 days.serve with hot rice and ghee.

Egg Manchurian is indo Chinese dish which is easy to prepare.
First boil 5-6 eggs and cut into small pieces.
In a mixing bowl add all purpose flour,corn flour, chili powder ,add water and mix well to for a semi thick batter. Coat the cooked eggs and fry it in hot oil. Once they become crispy take it off from the oil and set aside.
Now in a pan heat oil and add finely chopped ginger, chopped garlic and saute it for a minute until the raw smell is gone.Then add chopped onions, green chillies and cook until it turns translucent.

Grilled chicken | oven grilled chicken 09/05/2020

Grilled chicken is a chicken dish prepared by roasting chicken marinated in yogurt and spices in an oven .
It can be eaten as a starter/appetizer or main coarse , which is often serve with naan/flat bread .

First cut deep slashes into the whole chicken as shown in the video .
Massage the chicken nicely with red chilli powder , salt And lime juice .
In a bowel add yogurt ,turmeric,kashmiri chilli powder,salt,coriander powder ,ginger garlic paste ,garam masala ,kasuri methi and mix .
Then add some lemon juice and oil .
Apply this masala to chicken and add little oil as well . Keep it in refrigerator for 4-5hours (overnight would be better)
Put the entire chicken in oven at 400F/200C temperature for 45-50 min.
Tasty and juicy home made grilled chicken is ready .

Katte Pongali is a traditional Andhra style rice and moong dal recipe that is often served in temples as Prasadam (Prashad). Its pure comfort food.
It is simple to make and delicious recipe.
I’m also attaching ulli karam / onion chutney recipe that goes well with pongali .

For pongali preparation,
In a pressure cooker add 1tbsp oil, 2tbsp ghee , cumin, mustard seeds, green chillies, cashew nuts, chopped ginger, crushed pepper and sauté.
Add 1 cup rice, 1 cup moong dal, 6 cups water,1 cup milk , salt and cook for 3-4 whistles on medium flame.
Release pressure , mix well and serve hot.

For ulli karam / onion chutney,
Add 2 tbsp oil , 3 sliced onions , green chillies , dry coconut and cook till soften.
Let cool down , add in blender with salt and blend coarse.
Serve with pongali

Andhra Gongura Pachadi or this Andhra style chutney made of sorrel leaves an authentic delicacy typical to Telugu cuisine.
Sorrel leaves are rich in iron, vitamins, folic acid and antioxidants.
This delicious,spicy chutney is very easy to prepare within 30 minutes.
There are two variations of making gongura chutney one is with dry red chillies another is with green chillies.
In this recipe , i'm using green chillies and mortar pestle to grind. If using mixer/grinder skip onions while grinding, add chopped onion before serving.

1. First add green chillies,sorrel/gongura leaves , half cup water to a pan and cook till soften.
2.In a mortar add cumin,garlic,salt,green chillies and gongura leaves and grind into coarse paste.
3.In another pan add oil and tempering seeds,curry leaves, and gongura paste and cook for 5-7 minutes.
4.Add chopped onion and serve with steamed rice and ghee.

Mutton pulao | andhra mutton pulao with gongura chutney 02/05/2020

Mutton pulao is very mild flavored and delicious recipe which can be cooked in 40 minutes.I have attached unique gongura /sorreal leaves chutney recipe which goes well with any type of pulao.

1.First cook mutton with salt and water for 5 whistles in a pressure cooker and keep aside.
2.Soak cashew nuts for 15 minutes and grind into coarse paste.
3.Heat oil+ ghee in a cooking vessel, add spices and sauté. Add sliced onion, green chilies, ginger garlic paste and mint and sauté for 2 minutes add chopped tomatoes and sauté till soften.
4.Now add cooked mutton , cashew nut paste and 3 cups of water.
5.Add salt,coriander powder,red chilli powder,turmeric,lime juice and let the water boil.
6.Now add soaked 2 cups of sona masoori rice and let cook for 15 minutes on medium flame.
7.Add ghee and coriander leaves and cook for 15 minutes on high flame by placing vessel on dosa tawa.
8.Pulao is ready to serve.

For gongura/sorreal leaves chutney,
In a pan add sorreal/gongura leaves,onion,green chillies,tomatoes,turmeric,red chilli powder,oil,water and let cook until soften.
Let cool down,add salt and blend into a coarse paste.
Serve with pulao.

Khaja or madatha khaja is a traditional Andhra cuisine sweet recipe prepared from maida or plain flour . It is prepared during festival season and is shared with family & friends .

Into a large bowl Seive maida/ all purpose flour ,add 75gm ghee ,add water and knead into soft dough for 5 min

Grease the dough with oil cover and rest the dough for 15 min .

For sugar syrup -In a pan add 500 gms sugar,half cup of water , mix well and keep stirring for 7 min until string consistency, and cut off heat

In a small cup add butter and 1 spoon rice floor ,mix well to make a paste.

Dust the dough with maida and roll with rolling pin ,roll as thin as possible,
spread the butter paste on this rolled sheet sprinkle little maida and place another thin sheet over it . Repeat for 3 layers .

Then roll the sheets gently and cut into one inch pieces as shown in the video .Then take each piece and gently press .
Heat oil in a pan and fry them in hot oil .once friend flip over and cook another side .
Once they turn golden brown remove and put them in warm sugar syrup for 1-2 minutes . Take them out and cool at room temperature .
Juicey madatha kajas are ready to be served . They can be stored in air tight containers for 10-15 days

Mushrooms have a lot of nutritional value with few calories and little fat .

They contain vitamin B, antioxidant selenium which helps to support immune system . White button mushrooms are one of the few non animal sources of Vitamin D .
Mushroom masala is very easy and delicious recipe that can be made in home with basic ingredients. Try this recipe with chapathi/roti/rice.

1. Clean the white mushrooms without any dirt.
2. Add one chopped onion,4-5 slit green chillies to 2 tbsp of oil and saute well.
3.Now add ginger garlic paste, cook 2 minutes, add 2 chopped tomatoes and 500 gms mushrooms, salt, turmeric, red chilli powder, close lid and cook for 15 minutes.
4. Add 1 tbsp of coriander powder and slow cook until the curry thickens. Serve hot.

Masala vada, a crispy and savory deep fried fritter, made with chana dal and spices.
Masala vada is made by coarsely grinding soaked chana dal,then adding spices and herbs to the batter.
This is a perfect tea time snack which is very flavourful and delicious.
In south India, we also make a curry with prepared masala vadas, which is known as vada curry.

To begin with the procedure,

1. wash and soak chana dal for 2 hours.

2. Drain the soaked chana dal and add to the blender with salt,clove and cinammon , grind into a coarse paste.

3. Add 1tbsp of soaked whole chana dal to the batter,as this gives nice chunky texture to the vadas.

4. Add finely chopped onions,green chillies,ginger,coriander leaves,mint leaves,curry leaves to the batter and mix well.

5. Now shape the vadas flat with the fingers and drop in hot oil.

6.Cook the vadas evenly till golden brown.

Mutton pickle is an Andhra special non vegetarian pickle .
Once made it can be stored for one month in an airtight container .
This mutton pickle can be served instantly.
It’s the best accompaniment for non-veg eaters staying in hostels or for working people to serve in boxes .
Even beginners can prepare this pickle as the procedure is very easy.
1. First clean the boneless mutton add turmeric and tbsp oil and let cook.
Mutton releases water and cooks within, let cook until all the water is absorbed .
2. Take a wide bottomed pan , as the oil might bubble up and spill, add half kg peanut oil and deep fry the mutton,keep aside.
3. In the same pan,add ginger garlic paste 100gms,red chilli powder 100gms, turmeric 1tbsp,salt 3tbsp,coriander powder 3tbsp,garam masala 1tbsp and deep fried mutton .
4. Mix everything well in slow flame. Take the pickle in another bowl and add 8 lemons juice and store in air tight container.

Chicken dry roast recipe | easy and spicy South Indian chicken dry roast recipe 25/04/2020

Chicken dry roast is healthy, as it needs less oil and homemade masala powder.
In this recipe, chicken is slow cooked and dry roasted. It takes 45-60 minutes to prepare chicken dry roast. When cooked in low flame, chicken will be juicy.
To make this chicken dry roast, initially, cook the chicken in the 2tbsp oil so that the water from the chicken oozes out and cooks within, after adding the homemade masala turn the flame to low and keep stirring until brown.

To begin with the procedure,

1. Dry roast coriander seeds,cashew nuts, pepper , cinnamon, cloves,dry coconut and blend into a coarse powder.

2. In another pan, add oil , whole chicken,ginger garlic paste , salt, turmeric ,tomato and let the chicken cook.

3. Now add blended masala powder , turn the flame to low and dry roast the chicken.

4. Serve hot with rasam rice/sambar rice

Veg cheese grilled sandwich is another easy and healthy recipe that can be made for breakfast or a quick snack.You can add vegetables of your choice. This is very nutritious and is loaded with many veggies. You can use any type of bread to make this sandwich either white or brown.

Procedure,
1.Take two breadslices and apply pizza sauce on both breads .

2.On one bread first add grated mozzarella cheese ,finely chopped onions ,capsicum ,tomatoes,grated paneer,carrot.. add little more mozzarella cheese on top or you can use a cheese slice . Cover it with another slice of bread .

3.Apply butter on the sandwich maker and place this sandwich . Grill for 3min. Serve it with tomato sauce/mayonnaise
