Sometimes I forget how delicious and comforting home-fried potatoes are for breakfast. I can’t recall the last time I made them.

This morning I quartered small red potatoes. Sautéed them low and slow (about 35 minutes, turning as needed)with olive oil in a well-seasoned, cast iron pan. Seasonings: kosher salt, paprika, peppercorns, garlic powder, dried minced onion, thyme, rosemary, and then at the end added a handful of fresh, chopped parsley, lemon oregano, basil.

After I removed them from the pan, I added a little butter and scrambled eggs. They were extra tasty with the fat and flavors remaining in the pan.

I made these wonderful blueberry muffins this morning and wanted to share. They got rave reviews in the office. 🎉💛

2 cups all purpose flour
1/2 tsp salt
2 tsp baking powder
1/2 tsp baking soda
——
3 eggs
3/4 c sugar (1 cup if you love sweetness)
1 tsp vanilla extract
3/4 cup buttermilk
5 tablespoons melted/cooled butter
1 3/4 c frozen (or fresh blueberries)
2 tablespoons turbinado sugar (garnish right before baking)

Heat oven to 375 F.

Line large muffin pan with parchment paper or liners.

Whisk together flour, baking powder, baking soda, salt; set aside.

Beat eggs for 3 minutes
Slowly add sugar and continue to beat another couple minutes until fluffy and pale. Add extract.

Toss blueberries with one tablespoon of the flour mixture; set aside.

With mixer running, slowly add flour mixture and buttermilk (alternating)to egg mixture and beat until fully incorporated. Beat in butter and then fold in blueberries.

Fill muffin cups 3/4 full or a bit more (I like them tall, which is why I create tall cups with parchment paper). Sprinkle tops with turbinado sugar.

Bake for 15 mins and then rotate pan and turn heat up to 400 F for last 10 minutes or until browned on top and springs back when you press tops with finger.

Isn’t nice when the little things give us moments of joy? This morning it’s a simple homemade vanilla latte with extra cinnamon (made with a mini Chemex) frothy Chobani Vanilla Oat milk beeeecause it’s the only non-dairy milk I’ve found that froths as well as regular milk. And sitting all pretty on my latest handmade coffee coasters. 🧡🧡🧡

Hi! I can’t stop eating this salad! Just arugula, strawberries, walnuts, chickpeas, feta and drizzled with good balsamic vinegar & olive oil.

Crunchy, slightly sweet with savory tartness. Light but really satisfying. 💚❤️💛

Last night I made this simple Italian soup. It’s prepared in less than an hour and has all the good stuff: veggies, Italian sausage, beans and pasta. A flavorful tomato broth makes it slurp-worthy. Perfect for these cold nights! ❤️

Sunday is for warm scones with butter & raspberry jam. ❤️

- 3 cups bread flour
- 6 Tbsp butter, cubed
- 4 Tbsp margarine
- 1 1/2 Tbsp baking powder
- 1/2 cup sugar
- 2 eggs
- 1 cup milk
(1 more egg for egg wash at the final step)

Heat oven to 400 degrees F.

Whisk together flour, baking soda and sugar.

With fingers, work the butter and margarine into flour mixture until fully incorporated and the mixture looks a bit like bread crumbs (no big lumps of butter remaining).

Add the eggs and milk and slowly mix with hands until dough comes together. It’s messy, but the best way to do it!

Turn out onto floured surface and shape into smooth disk. Don’t knead or overwork the dough. Roll out to circle that is 1-inch thick.

With knife dusted in flour, slice like pie into 8 pieces. Place on lined baking sheet.

Brush tops of scones with egg wash and bake for 15 minutes or until light golden brown.
