I was challenged by Nefeli Boat - Chrissi Island to make a PONTIKAKI (a famous Greek dessert representing a mouse on a cake) Well I felt the need to spice it up a notch by making a gluten free raw vegan version of it with an extra pinch of fancy!

Generally made of puff pastry, frangipane and traditionally celebrated in January. 👑

🤷🏽‍♂️ But you know! When nature gift you with beautiful seasonal pears why not make the king’s cake come early and revisit it with those beauties?! 👨🏽‍🍳🍐

No need for pesticides as they will happily feed themselves of all the nuisibles around your fruits and veggies!

Same for composting! No need to worry about it as they will eat all your food waste and will transform it into manure that will benefit the richness of the soil and your future growth!

Have you heard about MARTINIQUE yet?

This beautiful French Caribbean island of 1128km2 also called MADININA (Flower Island), is where I grew up 🥰

One of our favourite dishes on the island is rice and beans accompanied with lamb and plantains (caribbean native banana)

With this dish I wanted to recreate the flavours and textures dear to my heart without involving the life of any beautiful animal being.

👨🏽‍🍳 Caribbean spiced rice and beans, mashed plantain with a Cavendish banana syrup & pulled Jackfruit (meaty texture)
