Brunch today. Guess you could call it a baked fruit french toast. Layered potato hamburger buns, fresh strawberries and blueberries with a custard of eggs, heavy cream, roasted cinnamon, vanilla and brown sugar. Dusted with cocoa powder sugar.πŸ˜‹

I used my Large Bar Pan to make this giant chocolate chip cookie. And I amped up the flavor by swirling some of the cashew butter that I made yesterday throughout the cookie.

Here are the results. In 4 hours I made, from left to right, low sugar strawberry jam, low sugar raspberry jam, lemon curd, cashew butter and honey roasted peanut butter. All made in the Pampered Chef Deluxe Cooking Blender! In the other photo is a lemon raspberry crumble with some of the lemon curd on the bottom. And it's topped with homemade cappuccino whipped cream πŸ˜‹

Todays brunch. Bacon, egg and cheese panini on English Muffin bread. Made on the Pampered Chef Nonstick Double Burner Grill and Press Set. Very tasty and cleanup was a breeze.

Pampered Chef's Raspberry Habanero Sauce is amazing!! It's great on cream cheese and graham crackers. I've used it on brie and smoked gouda cheese bites and homemade pizza instead of pizza sauce. It's kinda of like that Frank's Red Hot Sauce commercial "I'll put that s@ on anything" lol

Homemade roasted red bell pepper hummus πŸ˜‹
From start to finish, including clean up, 2 hours and 13 minutes. Made with dry unsoaked garbanzo and northern white beans. Cooked the beans in the Pampered Chef Quick Cooker. Then threw everything into the Pampered Chef Deluxe Cooking Blender. No artificial flavorings or preservatives!

1 cup uncooked garbanzo beans
1 cup uncooked white beans
4 cloves roasted garlic
2 TBSP olive oil
2 TBSP fresh lemon juice
2 roasted red bell peppers
1 TBSP sesame seeds
1 tsp salt

Made this again last night πŸ˜‹ It's quickly becoming one of my favorite Pampered Chef recipes. Paired it with coconut rice and skewerless chicken satay made on the Pampered Chef Double Burner Grill Press. A quick and easy meal and so delicious. With the grill press there was no need to use oil to cook the chicken and it was so quick and easy to clean.

Quick Cooker Barbecue Root Beer Ribs This recipe comes together in a fraction of the time it takes to make traditional ribs, but they’re every bit as tender and delicious.

Last nights dinner (and todays lunch) made in the Quick Cooker. Jamaican jerk chicken tacos.
Chicken
2 skinless/boneless chicken breasts
1 red onion, sliced
1 red bell pepper, sliced
2 roma tomatoes, diced
3 cloves roasted garlic, mince
2 TBSP Pampered Chef Jamaican Jerk rub
1 cup chicken stock

Rice
1 cup long grain white rice, rinsed
1 cup chicken stock
1 tsp Pampered Chef Pell Pepper and Herb rub
1 TBSP olive oil

Put the veggies, rubbed chicken and stock in the cooker
Put the wire rack over it
Mix the rice, oil, rub and stock in the ceramic pot. Put on the silicone cover and place in the cooker
Lock the lid of the cooker and select the poultry/chicken setting and set the timer for 18 minutes.
When the timer goes off, hit the cancel button and let the steam release naturally for 10 minutes.
Release any remaining steam , pushing the pressure release button.
With a slotted spoon remove the chicken and veggies. Reserve 1/2 cup of the liquids.
Return everything to the pot and shred the chicken.
Very easy and very tasty. And all done in less than an hour and minimal clean-up.

Dessert was a mixed berry compote with a homemade lemon whipped cream, All put together while the chicken was cooking.

Made a peanut butter and chocolate chip cake wit melth peanut butter and chocolate chip frosting. Should have let it cool a little bit longer before frosting it. Some of the chocolate chips started to melt.
