Please ensure your equipment is dry before you start . Moisture stops egg white aerating, so it may not increase in volume at all or your meringue may be smaller. Don’t use a plastic bowl as it retains moisture.

There is always have a secret to get a perfect meringue and one of it is the egg. Let’s have some reading on this Friday morning on how to prepare the eggs 🔆

First, don’t allow any egg yolk to spill into the egg whites because the tiniest bit of egg yolk in the white can stop the white from aerating.
Second, keep out any traces of water or fat such as oil and butter to prevent the egg white from incorporating air and producing a good volume.
Lastly, brings eggs to room temperature before separating. Put aside for at least 20 minutes after removing from the fridge because cold egg white takes longer to beat.

Hi dear! Wonder how long to get until soft peaks stage? Here are some tips to share..

To get a soft peaks, start beating the egg whites in a deep bowl on low speed until they are just foamy. Once you have a nice foam, move to medium-high speed. Then, add a pinch of salt to help stabilise the whites.
After a few minutes of beating, you will reach what is called soft peaks, which is when you pull the whisk out of the whites and a light peak forms, but then flops over.
