These jumbo pumpkin spice muffins will give you all the fall feels!
Ingredients:
1 box spice cake mix
1 15oz can pumpkin puree
2 eggs
1 cup white chocolate chips
Powdered sugar and French Toast Popcorn Seasoning or Cinnamon Plus Spice Blend for topping (optional)
Preheat oven to 325 F. Use the Kitchen Spritzer or oil and Chef's Silicone Basting Brush to lightly coat the Large Muffin Pan with oil.
Dump spice cake mix into the Classic Batter bowl. Spoon out 2 tablespoons of dry cake mix and stir into the white chocolate chips. Mix pumpkin puree and eggs with the remaining cake mix then stir in the chocolate chips.
Use the Large Scoop to put 3 scoops into each muffin well. Bake for 28-33 minutes or until the Cake Tester and Releaser comes out clean. Cool in pan for 10 minutes then move to a cooling rack.
Mix powdered sugar with your preferred spice blend in the Powdered Sugar Shaker to top your muffins. Enjoy!
So what were you doing while dinner cooked? I made my hubby some oatmeal raisin cookies from scratch... All while chili made with the Pampered Chef Chili Meal Mix cooked in the Quick Cooker. Love my Quick Cooker for busy nights or just the nights I'd rather do something else instead of cooking dinner. And check out how easily the cookies lift from the pan... And I didn't oil the cookie sheet either. Don't need to with these pans 😁
