The most common honey from Yemen is jujube honey, and one of the best honeys in the world. And if it is an exceptional product, it is partly because beekeepers have their own methods for maintaining the hives and extracting their honey.
Indeed, the bees only feed on the nectar of the sidr, the Arabic name for the jujube tree. There is no question for beekeepers to resort to sugar syrup, even if the many trips weaken the bees. Another prohibition: drugs and other chemicals are banned.
The result: a product that is certainly rare, but pure and natural, and which over time has become “the gold of Yemen”.

Crystallization
Honey from Yemen holds its particularity, among other things, from the fact that it does not crystallize. It remains liquid, even when it is cold.
Conservation
To preserve liquid honey, like that of Yemen, it must be stored in a ventilated, dry place and at a temperature of around 20°C.
Place of production
Honey from Yemen originates from Wadi Daw'an in the Hadramawt region. The sidr tree, foraged by bees to produce this honey, grows on wild, uncultivated, but rich land, typical of the desert regions of Yemen.
Harvest
Honey from Yemen is a monofloral product, obtained from the nectar of the flowers of the jujube tree. This tree flowers from November. Its flowering lasts more than a month, almost 40 days.
In addition to the drought, the bees' nests are often difficult to access, which limits the harvest (on average a hive produces between 2 and 5 kg of honey), further increases the cost of honey from Yemen, and makes it the most expensive product in the world.
To harvest honey from the jujube tree, Yemeni beekeepers use only their hands: neither machines nor special tools.
Virtues and benefits
Honey is a natural product with multiple virtues and benefits. But each type of honey retains its particularity.
Honey from Yemen, this product with which many therapeutic virtues are associated, is at the same time energizing, antioxidant and antibacterial. It helps to strengthen the immune system, and it is recommended to treat ulcers, liver problems, stomach problems, malnutrition, constipation and epilepsy (associated with other plants). It also helps treat respiratory tract infections, certain eye diseases, and helps heal burns and infected or surgical wounds...

Different production regions of Sidr in Yemen:
For the Housseimi and Houssabi honey
He comes from a mountainous region, there are other trees than the Sidr and more abundant vegetation than in the wadi of Hadramouth.
So honey is currently more popular because the mountainous coolness benefits the bees in summer and therefore the bees are in full health when they are placed under the trees of Sidr in flower.
The taste of this honey is quite fruity and high in sidr and has a low sucrose content and has a stiffer texture than hadramy
For jawf honey it is like that of Housseimi but at low mountainous altitudes. This honey has a very pronounced and fruity taste of jujube nectar and an orange-yellow color.
For that of hadramouth:
It is famous and originated in wadi shibam and the best known wadi is that of do3an. There are many wadi in hadramouth and the climate there is dry. Which gives a honey with little humidity and therefore a very constant maturity of the quality with beekeeping techniques developed on the Egyptian model with hives with low volume frames to respect trials of average quantity of bees.
The taste of this honey is very pure and rich in taste of Sidr
For that of chabwa it is considered as that of hadramouth because it is a region which is the extension of hadramouth with the particularity of being near the coast so there is more humidity which benefits the trees of Sidr in very good health.
It is a region of peasants and nomads with ancestral beekeeping techniques.
The taste of this honey is like that of hadramouth with a very sweet note thanks to two components:
The higher humidity makes it possible to transform sucrose into glucose fructose more quickly.
The main technique being traditional, we obtain a honey with very fine particles of wax and therefore propolis in addition.
All these regions produce excellent quality honey and prices can vary from year to year depending on the blessing they receive.
The honey market in Yemen is subject to the law of supply and demand, which is a component of price differences from one region to another.
In all these regions, there are two types of hives:
1- the modern hive with frames on which is fixed a sheet of wax from the old harvest.
Allowing :
- the bees to directly constitute the reserves of honey.
- to extract the honey with the frames placed in a machine which will rotate 6 frames and thus by centrifugal effect the honey flows outside the wax cells.
Thus we obtain a pure honey without wax.
2- traditional hives in terracotta and in an elongated wooden box.
In these hives, the bees will quickly build up the cells of the hive by fetching wax from nature and propolis to coat the cells in order to disinfect all the cells to keep the honey deposited by the worker bees.
These traditional hives have a smaller volume than modern frame hives.
The extraction method is that of the beekeeping origin of Yemen.
Cut the pieces of cell by hand.
The pieces are pressed lightly.
Then deposited on a filter in an environment of ambient heat.
The honey gently flows down and is deposited in a container.
In this method, we obtain a honey with fine particles of wax and more propolis than in the modern method, which is a transparent orange-yellow honey.
Honey from traditional hives is more opaque and yellow which is undoubtedly the true presentation of the famous honey of Yemen for hundreds of years.

Indicator of the presence of abnormal SUGAR (adulteration) in fresh honey:
This is the real challenge because honey is sugar and to know if after appreciation of the nectar we have a high content of natural or added sugar:
Only taste experts and professionals know how to detect it during negotiations because everything goes quickly.
That said, in Yemen human values of trust and fear persist in a harmonious atmosphere with ancestral rules.
ANALYSIS 🌡
- We have a laboratory in Yemen to measure the values of sucrose and Glucose-fructose-maltose....
We do this at the request of customers to check an abnormal level of sucrose which can reduce the value of honey.
Sucrose in jujube nectar is naturally present and therefore more important than in acacia honey.
It is often raised in the highest grades of jujube nectar honey.
And to avoid misunderstandings or misinterpretations,
professionals insist that with the presence of natural amylases (enzymes)
sucrose is transformed into glucose fructose as in the human body.
So after 3-6 months the sucrose eventually disappears.
In Europe there is a laboratory for the detection of major or minor adulterations. (* CETAM ‘Legal Criteria’ analysis) which is more expensive than the standard test because the SUGARS are analysed:

the majority of Sellers offer 1⃣ standard Contract Laboratory test for Customers to reassure customers about the origin of the honey.

Don't be fooled by Lab Numbers
If the beekeeper was unable to carry out pre-production transumancy of the jujube tree and he fed his bees heavily with sugar water to avoid the death of the colonies:
Honey will still get the same PROPORTION of Jujube POLLEN but not the same CONCENTRATION of NECTAR
of Jujube.
For this we have been evaluating honey in Yemen for more than 100 years without pollen testing and we have already observed clear honey with an average taste with high pollen counts and fruity honeys with 20% less pollen.
So the lab tests must be used to authenticate a floral origin and a standard of physico-chemical quality.
And the color and odor taste tests (present in the CETAM test) should be considered as a good indication of the absolute quality of the honey.

To preserve the honey, you need to put it in a glass jar quickly and in a cool place away from light.
How to use the weight of your honey?
I advise you to use a precision scale to make your pots and also a commercial precision scale is more reliable than a personal scale to check your packages.
Actual weight loss:
With a precision scale you will lose 1 gr during your filling so on 27 pots you will have a lack to carry out the 28th.
Loss in the container:
A thin layer of honey that remains on the walls of the container can represent a minimum of 40 grs
lack in your last pot.
Person scale:
The precision being 100 gr you can observe a loss of 100 gr while there may be only 1 gr missing in your package.
Commercial weight scale:
The precision is 5 gr so for your pots it will be in favor of your customers and on the last pot a minimum of 80 gr is missing
Advice :
Please calculate your product cost by underestimating the effective net weight.
In other words :
For 7 kilo please calculate a product cost of 6.75 kg.
