Hello everyone! It has been a very long time! As some of you may have read, I left the page for a while to attend to my husband and his cancer treatment. Well, just a few months after that, Covid changed the world. We have had some losses of dear friends and we have had some miracles as well. At any rate, I know this has been a crazy couple of years for me and I am sure for you all as well. So I am getting some things together and will be finally returning to this page on a regular basis. Thanks so much to those of you who hung in there with me. Even though I wasn't really that active on here, I did see your posts and comments and I appreciate those of you who stuck around and kept things going a bit. On that note, I will be getting some recipes together along with some product reviews here in the next few days. I'll get those posted as soon as I can. I'm so happy to finally be able to put some attention here again. It's so good to see all of you!
Hey everyone! It's only 3 more days til Christmas! Are you all ready? I'm nowhere near it but it's ok. We are doing super simple this year since we had some pretty heavy stuff going on in the last couple of months. So, I have a few updates for you. First, for those who may have been wondering, my husband's surgery to remove the cancer was on 12/02. It took longer than we thought and was more complicated than we had hoped for as the cancer had grown to outside of his colon and started attaching to his abdominal wall. After 2 excruciating weeks of waiting for the pathology report though, it's all good news. They were able to remove all of the cancer in that operation and they also took 29 lymph nodes from the cancer area and tested every one of them for cancer cells. There were none found in any of the lymph nodes. We aren't totally clear yet because with any cancer diagnosis, you are not declared cancer free until you have gone 5 years without a recurrence of cancer so we have a really long time to go on that. But we do have some long term care in place, we'll be meeting with oncology just after the first of the year to see what they recommend as far as prevention is concerned, and there will be very close monitoring, especially in the first couple of years. But it all is the best Christmas present that I could hope for because we are back on our way to wellness! Second, I will be back online with some great new recipes, photos, and tips starting the first week in January. My goal is to post at least 3 times per week starting in the new year and to get some content out there right away. I thank you all for standing by and waiting while we dealt with the craziness and I hope to make the new year awesome!
Hey everyone! I am writing this post today with a heavy heart. I will be stepping away from this page for a while. I will keep it open and monitor it from time to time but I won't be active on it. My husband had a colonoscopy today because of some symptoms he'd been having and they found a large tumor. So I will be stepping away from this to focus my time and energy on him at this point. If you are a person who believes in the power of prayer, please pray for my family. Thank you!
Hey everyone! It's been a crazy busy week here so far. Hope you are doing great! I'm hard at work getting some new recipes written and some photos to share so keep checking back. For today, a nice, warm, filling meal idea to keep you going. My easy to make beef stroganoff!
Ingredients
1-2 pounds beef stew meat or steak
5 packets brown gravy mix
1 cup flour
1 onion, thinly sliced
8 oz sliced fresh mushrooms
1 package egg noodles
1 container sour cream
Vegetable or olive oil
Salt and pepper
Directions
1. In a large bowl, mix together flour and 1 packet of gravy mix. Toss stew meat in flour mixture.
2. Brown meat in oil in dutch oven.
3. Add mushrooms and onions to pan with meat and cook through.
4. Mix remaining 4 packets of gravy mix according to package directions and add to pan. Cook for about 30 minutes to tenderize the meat.
5. Remove from heat and add sour cream. Stir to mix in thoroughly.
6. Cook noodles according to directions.
7. Serve stroganoff over egg noodles or add sauce to the drained noodles and stir to mix completely. Top with parsley or French fried onions, if desired.
